Happy What I Ate Wednesday friendly faces! 😀

I always like to have some sort of theme for my WIAW posts, but I could not for the life of me think one up for this week. It was driving me crazy until I realized that it’s been a while since I did one of my this AND that posts — you know, the ones where I list off some of my favourite foodie combos? The last one I wrote was all the way back in February, which is way too long of a stretch. So, for this week’s WIAW, I give you… this AND that, take 3…

WIAW

Breakfast… [ almond butter AND jam ]

ABJ Oats

Eggy bananafied oats layered with plain Greek yogurt and then topped with roasted almond butter and blueberry jam.

Nothing too fancy here — just the classic combo that everyone knows and loves. Well, maybe not classic classic since that belongs to peanut butter and jam, but this is as close as I can get without ending up in the ER so I’ll take it!

Fun fact: I didn’t know the gloriousness that is the nut butter and jam combo until I was 24 years old. Because of my allergy to peanuts, my parents thought it would be a good idea to tell me that I was allergic to all nuts when I was little so that I wouldn’t get confused and accidentally eat any at school. Either they started believing it themselves or they just overlooked telling me the truth because I didn’t find out until I was discussing allergies with my doctor at the ripe old age of 24. Best.discovery.ever.

Morning snack… [ smoothies AND sprinkles ]

Cake Batter Smoothie

A vanilla cake batter smoothie.

I know the recipe says that sprinkles are optional, but in all honesty… they’re really not. Not only do sprinkles instantly kick up the fun factor, but they also add the nicest little crunch to things, which is sort of a big deal when you’re a texture freak like I am. 

Lunch… [ eggs AND avocado ] 

Eggy Avocado Snack Plate

Two eggs scrambled with baby spinach, half an avocado, two slices of toasted rye bread (one with hummus and the other with orange marmalade), and baby carrots.

Remember how I said I didn’t try almond butter until I was 24? It was around that same time that I had my first taste of avocado as well. It had nothing to do with allergies in this case, though. Avocados just weren’t ever really a thing in my family when I was growing up, so I didn’t pay much attention to them until I started reading blogs and getting more adventurous with my eats. Thanks blog world… I owe you one.

Afternoon snack… [ rice cakes AND ALL the toppings ]

Loaded Rice Cake

A Lundberg salted rice cake topped with Wowbutter and homemade applesauce, with a few squares of Giddy YoYo vanilla chocolate.

I don’t care if they’re technically a diet food — rice cakes are delicious. Light and crispy with a pleasant ricey taste and just the right amount of saltiness — basically the perfect base for whatever you want to throw on top. I really love them with cottage cheese and jam, but I whipped up a fresh batch of applesauce earlier in the day that I really wanted to dig into, so I went the nut butter & apple route instead.

Dinner… [ sweet potatoes AND cheese ]

Sweet potato nachos.

Per your suggestions, I’ve tried sweet potatoes with hummus and with avocado, so cheese was naturally the next step. Verdict? SO good, especially when I added some diced avocado and a scoop of Greek yogurt post-shot. I made this recipe for a freelance project that I’m working on, so I’ll share the link to that in the next little while 😀

Evening snack… [ yogurt AND honey ]

Almonds and Honey

Plain Greek yogurt mixed with almonds and topped with buckwheat honey.

When I was younger, the only yogurt I’d eat was the flavoured kind (cherry, peach, and strawberry were my favourites). These days, I’ll still enjoy flavoured yogurts on occasion, but a lot of the time they end up tasting a little too artificial to me so what I’ll  do instead is get plain yogurt and add my own sweetener or flavour.  A spoonful of jam works wonders (especially for different flavouring!), but honey is probably my absolute favourite.

    I used to only eat gogurt in elementary school (nasty) and then in HS I would only eat non-fat yoplait yogurt (still pretty blech). I’m glad I realized the error of my ways and started eating Greek. I like to mix greek yogurt with almond flour sometimes. It’s purdy tasty! If you add some honey, too, or cinnamon. Hmmm and I guess sweet potatoes and ketchup. I love that ish.

    Oh my gosh every one of these meals looks insanely amazing and delicious – never though of applesauce on rice cake… and those nachos!

    Greek Yogurt and Honey is my absolute favorite… I love when I get little pools of honey on a scoop of yogurt. Heaven!

      Have you ever tried sticking the bowl in the freezer for a little while so that the honey has time to thicken up a big? Omg… SO good.

    b) Smoothies AND hemp hearts AND a giant spoon – because I like them thick and I like a little crunch
    c) Eggs AND avocado YES
    d) Rice cakes AND marinara + cheese (aka pizza…nowadays, no cheese for me though)
    e) Sweet potatoes AND any nut butter or coconut butter…or BOTH

    c) Eggs AND << sorry. No eggs here 🙂
    d) Rice cakes AND wow. I haven't had rice cakes in forrrever but right now I think they'd be great with SALTED CARAMEL
    e) Sweet potatoes AND apple sauce and peanut butter (or AB) and cinnamon

      I haven’t! I had a lemon Chobani once, which I thought tasted a little bit like dish soap, so I’ve been put off from citrusy-type yogurts ever since.

    I LOVE sweet potato “nachos” like that. So good!

    The pb..I mean AB&J combo at 24 years old only!? Say it isn’t so!..but hey, at least you are into the know now right 🙂 . So I’m curious; what were your sandwich fillers at lunch in school?
    Almond butter AND an 8 hour drive or speedy plane flight to get my hands on a jar 😉
    Smoothies AND bundles of clothes if its chilly.
    Eggs AND hot sweet chilli sauce plus avo!
    Rice cakes AND hummus or peanut butter and jam. We were in sync on the rice cakes this week 😀 Sweet potatoes AND hummus.
    Yogurt AND banana.

    I like the rice cake snack you’ve got going on there. I’ve never thought to combine rice cakes with anything! I’ll bite on your questions from above and answer – sweet potatoes and chicken sausage! So good together!

      Sandwich fillers? Oh geez. Hmm. I’m thinking probably turkey and cheese 😆 So very exciting. BUT! I did really love taking a slice of bread and topping it with butter and honey. So simple. So good.

    You always have the most delicious eats! I have to have something to snack on while reading your posts otherwise I would head straight to the kitchen and OD on ALL the food!

    a) Almond butter AND Banana
    b) Smoothies AND a Straw
    c) Eggs AND Salsa
    d) Rice cakes AND Nut Butter
    e) Sweet potatoes AND Anything! (Sweet potatoes are so versatile… roasted with cinnamon, paired with eggs, avocado, or cheese, used in smoothies, toppings for a salad…and on and on!)

    Sweet potatoes + cheese = my go to combo!! I love loading a sweet tater up with veggies or beans and then topping it with melty cheese. So so good.
    Speaking of good. Totally made that smoothie of yours yesterday [and it was BOMB] but I topped mine with some crumbled chocolate annies bunnies. Talk about perfection <3

    That sweet potato/black bean dinner looks AWESOME! Cannot wait for the recipe.
    While I dont have an allergy to peanuts, I actually didn’t try PB till I was almost 18 – unlike you, I didn’t have a legit reason – just the fact that the consistency of it threw me off…but freaky tendencies changed when I was a starving artist in college 🙂
    I love avocados and eggs – and avocados and chocolate! So. good.

    a) Almond butter AND _honey. i’m thanking you for introducing me to that particular combo.
    b) Smoothies AND cereal. I need my crunch!
    c) Eggs AND kabocha. Always one of my favourite combos come lunchtime.
    d) Rice cakes AND Justin’s Chocolate Hazelnut. Or Nutella. Or Ovomaltine Crunchy Cream. Basically, any kind of spreadable chocolate.
    e) Sweet potatoes AND coconut butter. And I just gave myself a craving…
    f) Yogurt AND cereal. Again with that crunch thing.

    Almond butter and itchiness can’t breathe feeling in my throat. I assume that is. I haven’t actually had almond butter just in fear since almonds have that affect on me…How did you not tell me you had eggs for lunch lol…And sweet potatoes I love with just about anything. Amazing with avocado, terrific as a base for machos and totally awesome as pizza bites topped with tomato sauce and mozzarella cheese (which I really haven’t had in a while, thank you for reminding me).

    Has it really been that long since your last this and that post? I like them – feel free to do one of those whenever you can’t think of a topic. You’re the queen of good food combinations.

    a) Almond butter AND more almond butter. It’s best by the spoonful with nothing
    b) Smoothies AND a nice little chill in the freezer before serving. Read: turning them into ice cream because smoothies aren’t my kind of food.
    [leaving out c) for obvious reasons]
    d) Rice cakes AND cottage cheese + jam. I stole that one from you and it’s good.
    e) Sweet potatoes AND … no. Nothing helps ;). Sweet potatoes don’t happen around here. They just don’t. Though I wouldn’t mind a plate of your dinner with the only real potatoes out there: white. (:
    f) [Greek] Yogurt AND coconut flour. And I’m still pining for that buckwheat honey. Where is it hiding???

    Oh I love all the combos. And I love Rice cakes too, seriously, They’re so good! Even if more than 50% of people think they taste like cardboard. I love them.
    And Yogurt with Honey AND cacao. Chocolate pudding heaven.
    Almond Butter and Chocolate Chips…..yeah!!!
    Eggs and cinnamon. Seriously, as strange as it sounds but I love to cook my sweet eggs just with cinnamon and maybe a pice of fruit in them. Baked apple with sweet eggs for example. Yumm.

    As always, I want to move in. Except I can’t imagine that I will EVER like cottage cheese… Bleugh just thinking of it makes me go all funny!

    a) Almond butter AND jam. Classic.
    b) Smoothies AND cherries…technically IN the smoothie but oh myyyy. Man I miss these!
    c) Eggs AND reallyyyy good toast, the kind that’s still soft in the middle. And ketchup.
    d) Rice cakes AND nut butter and jam of course. Although my old housemates and I did go through a phase at uni of putting a marshmallow on our rice cakes and popping it in the microwave for instant goo factor 😀
    e) Sweet potatoes AND meh, struggling on this one…bolognese maybe? I like them but no love here…
    f) Yogurt AND EVERYTHING. Frozen cherries, cake, fruit, nuts, nut butter, honey, jam, pancakes, porridge, cereal, granola, I could go onnnnn. Yeah, I quite like yoghurt…

      Marshmallows on rice cakes?! Omg brilliant. I may have to try that with some chocolate thrown in and end up with some type of s’more creation. And I’m the same way with yogurt… You don’t even want to know how quickly I go through the stuff…

    Oatmeal is always a good option for breakfast. Your lunch though, oh my goodness it looks so amazing. Those are some of my favorite flavors and that combination sounds so filling! I hope you have a fantastic Wednesday!

    All of the above with sprinkle/ice cream/cereal. ALWAYS. Glad you’re getting some use out of those sprinkles, though I still don’t see them on oats yet! 😉

    The sweet potato nachos look so good…I don’t eat dairy but wonder if I could figure something out based on your idea. I am not huge on nut butter (weird around here) but I usually use it in a dessert combined with chocolate in some form if I eat it. And I love eggs with almost anything. Eggs make any meal better!

    I wonder if posting on your blog helps you to eat more healthy?

    Of course, if I just had to make a WIAW for my mother-in-law, I’d be golden!! =) Never eat bad again. Repeat.

    The sweet potatoes and cheese. Oh my. What cheesy goodness. I read once that it’s chocolate and cheese that are the diet killers for most women! Agreed for me.

      I don’t know about more healthy, but I definitely put more thought and effort into my meals when I know that WIAW is coming up. And oh goodness… chocolate. I’m still recovering from Easter 😆

    Offended that those aren’t white potatoes but the SALTED rice cake with sweet toppings make up for it.

    Marmelade? That reminds me of my grandparents. They were the only people who liked marmalade!

      Isn’t that what it’s called? 😆 It’s blood orange jam, but I always thought any citrusy jam type thing was a marmalade. Details.
