A flourless almond butter and jelly muffin that’s gluten-free, sugar-free, dairy-free, oil-free and whipped up in the blender in under 5 minutes flat.

Almond butter and jelly… is there any combination that’s more classic? Well, peanut butter and jelly, maybe, but you guys know how I feel about those lunatic legumes.

Lunatic? Really, Amanda?!? Ugh, sorry guys… my thesaurus failed me and I couldn’t find another word for ‘pesky’ that started with an ‘L’. But I digress. Back to the almond butter and jelly.

It’s one of my favourite combos, right up there with cheese and dough (read: pizza), cookies and [ice] cream, and chocolate and my face. I love it on toast; on rice cakes; on oatmeal; on spoons (true story); and now, on in muffins…

Better. And these aren’t just any muffins… Nuh uh. they’re flourless, gluten-free, refined sugar-free, dairy-free, oil-free, blender muffins. Kind of a mouthful, eh? But a mouth full of deliciousness! Err. That was a bad one — sorry. But these muffins? They’re gooders.

My flourless muffins are probably some of my favourite recipes here on Spoons, and seeing as they also happen to be the ones that get the most pins and shares, I’m going to go ahead and assume that you guys like them too. And for good reason! Not only are they ridiculously quick and easy to whip up (with barely anything to clean up), but they just so happen to be pretty darn tasty… and made with ingredients that you can feel good about eating.

So the next time you get hit with a craving for an almond butter and jelly sandwich (or peanut butter and jelly if you swing that way), scrap the bread and take an extra 10 minutes to whip up a batch of these flourless almond butter and jelly muffins — I can pretty much guarantee that it’ll be love at first bite.

Flourless Almond Butter and Jelly Muffins

Ingredients

Scale
  • 1/2 cup (128 g) almond butter*
  • 1 medium, ripe banana (100g or 1/2 cup)
  • 1 large egg
  • 1/4 cup (80 g) honey
  • 1/2 cup (40 g) rolled oats
  • 2 Tbsp (14 g) ground flaxseed
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup (60g) of your favourite jelly, divided*

Instructions

  1. Preheat oven to 375F (190C) and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside.
  2. Add all ingredients except for jam to a blender and blend on high until oats are broken down and batter is smooth and creamy.
  3. Use a greased tablespoon to spoon approximately 2 Tbsp (30 ml) of batter into the prepared muffin pan, filling each cavity about 1/3 of the way full. There should be enough to generously cover the bottom of the cavity.
  4. Add 1 to 1 1/2 tsp. of jam to the centre of each cavity before topping with another 2 Tbsp (30 ml) of batter, or until each cavity is 3/4 of the way full. You want to make sure that all of the jam is covered so that it doesn’t seep out and burn on the side of the pan.
  5. Bake for 10-12 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.

Notes

* you can easily sub this with a different nut butter, or use a seed or soy nut butter to make these nut-free.

    Almond butter and jelly is such a classic combo — the best. I’ve never been much of a fan of peanut butter myself. These muffins look so perfectly moist and just amazing. I love how simple and natural the ingredients are. Beautiful job!

    I actually have almond butter now so I can make these the way that you’re supposed to make them! Any sort of nut butter and jelly makes me happy…although I just finished my raspberry jelly so now I need more.
    Favourite food combo right now? Justin’s + spoon. Speaking of which, I think i need a snack…

    Any thoughts on how to sub in almond flour or coconut flour for those of us who don’t do any grain? Look yummy!

      I’m pretty sure you could replace the 1/2 cup of oats with 1/2 cup of almond flour and they’d come out just fine.

    I’m not a huuuuge jelly fan (I know what’s wrong with me?) but these maybe combined with um…..nutella?….would be awesome. Not really healthy buuuut that’s beside the point. Also–A++ for your photos–seriously amazing.

    This officially makes you the queen of flourless muffins. Even though I don’t like Jelly and consider oat flour a flour but that’s just me being sassy lol. I’m also hungry so if you wanna omit the jelly and send me some of these I would be eternally grateful!

    Would you hate me if I made these with peanut butter instead? I love almond butter for the sake of convenience (i.e. what I have on hand), peanut butter has a one up! Lately I’ve been loving the combination of dark chocolate & coffee…especially when you dip the chocolate into the coffee- heavenly! As for peanut (or almond) butter, I especially love it with chocolate…or bananas…or a spoon ;)!

    Oh wow! Marvelous work m’lady ..this is just perfection. An incident with a regular store-bought muffin (it was chocolate at that!) emphasised -to me- that indeed, your flourless muffins are the fairest by far. , once the taste buds have been acquainted with them, very rarely a muffin that can live up to those standards!

    These look good… sadly I can’t tolerate bananas in any form 🙁 Do you think I would be successful subbing applesauce?
    I can’t remember if I’ve commented this before, but I have a couple of recipe videos on my YouTube channel I think you would LOVE, Amanda! Almond butter (or soy or sun butter!) can totally be subbed for the PB in my peanut butter energy bars https://www.youtube.com/watch?v=KwZsAJddlcE (no bake, super easy, incredibly easy, there is CHOCOLATE involved) and in my Maple Cinnamon Nut Clusters https://www.youtube.com/watch?v=SVan12lTNKY you could just leave out peanuts!       I’m honestly not sure about the applesauce… I might have to give it a try one of these days and see if it works out. And I just checked out your energy bars and they definitely look like the kind of thing I love. All of my favourite things in one bar <3

    Should I congratulate you on the brilliant creation or be mad because almond butter is about three times as expensive as peanut butter? Meaning I could still try these but let some lunatic legume action happening ;). Which is what I’ve been doing with every of your almond butter recipes I’ve tried so far. Lunatic krispie cereal energy bites?! I feel I’d better not advertise them that way…
    You say peanut butter I say: lunatic deliciousness but beaten by almond butter. Though I’ve mixed them at breakfast today and that wasn’t half bad either. Then again: what’s not good when eaten with almond butter?!

    Any recipe that can be whipped up that quickly is good in my books! Especially with a center like these. I totally agree about the combo, I often don’t even taste the difference between almond butter and peanut butter anyways so this is as good as classic! Haha chocolate and my face is also a good combo, that made me laugh!

    Wow, do these look amazing! Peanut butter and jelly is such a classic combination and always reminds me of my childhood. It’s still one of my favorite sandwiches to eat even as an adult, and I love the idea of having it in muffin form. Can’t wait to give these a try!

    I like these. A lot. Obviously made with peanut butter in place of almond but still, so simple. I never liked peanut butter and jelly as a kid and probably didn’t learn to like jelly at all, especially with my peanut butter until I was in college. I don’t know, jelly wasn’t my thing. It still isn’t but I have learned to appreciate it.

      You could always just make the chocolate chip ones. It’s basically the same recipe just with chocolate chips instead of the jelly.

    Peanut butter and banana is a winning combo but any nut butter and jam is a classic combo.
    These look great – I will definitely be whipping them up next week when I am home from visiting my family! Gluten free goodness at it’s best. Jam in muffins is so bloody good – all warm and gooey! Could really use one for my afternoon tea actually. Fancy sending one over the Atlantic with a courier – we’ve got two hours… 😉
