This soft and chewy chocolate chip skillet cookie requires no fancy mixers and no bowls to clean. The perfect way to satisfy that cookie craving in a flash.

I had all sorts of ambitious plans to get a weekend recap post up yesterday, but I was so exhausted by the time I got home late Sunday night, that it was all I could do not to pass out in my hallway as soon as I closed my front door. Let’s just say it was an epic weekend filled with lots of snowboarding and not much sleep — similar to this one… except slightly warmer and much sunnier.

That being said, I spent most of yesterday napping (6 hours of sleep over two days is not okay), nursing a very awkward sunburn (if you think getting the outline of sunglasses tanned onto your face is bad, try a helmet and ski goggles), and baking cookies. Or, a cookie, I guess I should say…

This was my first time making a skillet cookie, and I’m tempted to say that I may never make individual drop cookies again. Not only was this one of the softest, chewiest, and doughiest cookies I’ve ever had, but I’m kind of in love with how easy it was to make. No fancy mixers, only one “bowl” to clean [with your spoon], and no measuring/scooping out dozens of small cookies. Oh, and ice cream…

Let’s talk texture, because after the ease with which this cookie comes together, the texture is probably my favourite part (okay let’s be honest here — it is my favourite part)…

Ingredients

Scale
  • 1 stick (1/2 cup) butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk*
  • 1 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. In a 9-inch cast iron skillet, melt butter over medium heat, stirring frequently until it begins to turn golden brown; about 3 minutes. Whisk in sugars and vanilla.
  3. Remove skillet from heat and allow to cool for about 5 minutes before adding in egg and egg yolk. Whisk gently until well combined. Add flour, baking soda, and salt, stirring until just incorporated. Fold in chocolate chips.
  4. Using a spatula, spread the dough until it is evenly distributed in the skillet. Bake for 18-20 minutes until edges begin to turn golden brown and a toothpick inserted into the centre comes out clean.

Notes

* The addition of the extra egg yolk results in a softer and cakier cookie. I made one without it and it still works, so you can omit it if you wish.

    Can’t wait to try this one! I’m not always successful with cookies (I have a problem with timers) but I usually do fine with bar cookies. Never tried a skillet, but first time for everything! Yum! Pinning.

      I haven’t. But I’m a huge fan of oatmeal flour and I have a feeling it would work really well in this cookie.

    Question though- I am a twat but is there an actual difference between a skillet and a frying pan? Like when I read how others put ‘skillets’ in the oven…wouldn’t that melt it?

      Nope! That’s actually exactly what the difference is. Skillets are made entirely from iron — they’re heavy medieval looking things with no fancy ‘no-stick’ technology to speak of. Kind of like the difference between a Dutch oven and a regular cooking pot…

    Have I ever told you how much I adore you & your baked goods? I mean damnnnn I’m always drooling & frankly, I’m quite jealous of your kitchen skillzzz!! I’d much rather have ice cream w/ cookies, as I’m not a huge milk fan. I’ve never understood how people can dip their Oreos in milk. YUCK YUCK

    Seriously, woman?? SEEEEEEEEAR-EEEEEE-OUSLY?!?! 😯 You know I’m a total cookie fiend…but I have to say I’m a bit of a snob…the texture has to be jussssssst right! And with the way you described this thing, it sounds like you absolutely NAILED all my criteria! You may have outdone yourself with this one, m’dear! Now I just have to finally break down and get myself a cast iron skillet! Oh and warm cookies and ice cream ALWAYS trumps warm cookies and milk! 😀

    Stop. You just killed me with the photos of the recipes. Wow, this looks absolutely beyond incredible. Like I’ve never seen anything look so delicious. I don’t like normal cookies because I find them too thin and chewy but I LOVE the taste of the dough. This looks like the perfect in between. Love.

    I’ve neverrr made a skillet cookie! I really need to try. And I think I like the process more than the result. Baking is therapeutic to me… I think I like using all the energy to think about only baking and nothing else. I never thought about it like that until now!

      I’m a huge fan of the process as well. But I can’t deny that I love the end result… which is probably why I don’t enjoy the process of cooking quite as much.

    Okay this is just meannnnn. Why are you making me crave chocolate?! WHY? I mean, put something chewy, warm, and sweet in a skillet and serve it with ice cream and you’ve got me sold.
    Warm cookies with cold ice cream. I mean, c’mon now.
    Hmmm…if I’m feeling fancy and ambitious, I do like to try complex recipes, but usually I prefer simple ones like this. Less time baking it means more time eating it 😉

    Holy smokes girl! This looks absolutely incredible! Chocolate chip cookies are my absolute favourite kind of cookie. And I’ve actually been meaning to make a skillet cookie like this but never got around to it. I’m definitely imagining it paired with a homemade vanilla bean ice cream… mmmm.

        Could you tell how much oat flour to use to substitute the all-purpose flour?

          Hi Belle. You could substitute an equal part of oat flour for the AP flour, but because oat flour doesn’t contain any gluten, the texture of the cookie might come out a little bit different. It shouldn’t be a problem and should still turn out well, though!

    NOOO don’t force me to choose! It all the same how to choose whom from parents you love more 😀 Both options sound perfectly 😉 I love simple recipes. When I see many ingredients in the recipe, 9 of 10 that I won’t train him. Though… some recipes are so delightful that I am ready to spend a lot of time for them.

    I am not a milk fan, but I would prefer a warm cookie and cold almond milk. That makes my mouth water just thinking about it!
    As far as preparing a simple or complex meal, it totally depends on the day. If I am cooking for just me, I stick to something quick and simple. If I am cooking for my family, friends, or my boyfriend, I usually want to impress them so I pick something complex with lots of flavor!
    By the way… I told you in a previous comment that I was going to make your almond bars. We LOVE them!
