This soft and chewy chocolate chip skillet cookie requires no fancy mixers and no bowls to clean. The perfect way to satisfy that cookie craving in a flash.

I had all sorts of ambitious plans to get a weekend recap post up yesterday, but I was so exhausted by the time I got home late Sunday night, that it was all I could do not to pass out in my hallway as soon as I closed my front door. Let’s just say it was an epic weekend filled with lots of snowboarding and not much sleep — similar to this one… except slightly warmer and much sunnier.

That being said, I spent most of yesterday napping (6 hours of sleep over two days is not okay), nursing a very awkward sunburn (if you think getting the outline of sunglasses tanned onto your face is bad, try a helmet and ski goggles), and baking cookies. Or, a cookie, I guess I should say…

This was my first time making a skillet cookie, and I’m tempted to say that I may never make individual drop cookies again. Not only was this one of the softest, chewiest, and doughiest cookies I’ve ever had, but I’m kind of in love with how easy it was to make. No fancy mixers, only one “bowl” to clean [with your spoon], and no measuring/scooping out dozens of small cookies. Oh, and ice cream…

Ingredients

  • 1 stick (1/2 cup) butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk*
  • 1 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chocolate chips


Instructions

  1. Preheat oven to 350F.
  2. In a 9-inch cast iron skillet, melt butter over medium heat, stirring frequently until it begins to turn golden brown; about 3 minutes. Whisk in sugars and vanilla.
  3. Remove skillet from heat and allow to cool for about 5 minutes before adding in egg and egg yolk. Whisk gently until well combined. Add flour, baking soda, and salt, stirring until just incorporated. Fold in chocolate chips.
  4. Using a spatula, spread the dough until it is evenly distributed in the skillet. Bake for 18-20 minutes until edges begin to turn golden brown and a toothpick inserted into the centre comes out clean.

Notes

* The addition of the extra egg yolk results in a softer and cakier cookie. I made one without it and it still works, so you can omit it if you wish.

    Warm cookies with both 😉 and a cherry on top! This has my name written all over it…the easier to make something is (less ingredients/bowls/utensils) the better it is in my book! Can’t wait to try this out 🙂

      I have! I was SO tempted to pick one up, but I needed a big skillet anyways so I went with that. Individual little cookies would be amazing though.

    Looks delish! Best decision ever – to put ice cream on it! Well maybe second best. First best is creating this skillet cookie 😉 I love it when the ice cream starts melting over that cookie and all the flavors kinda just combine together. Mmm.

    Hmmm, whats better.. warm cookies with cold milk or warm cookies with cold ice cream.. how about all three?!? Holy crap these look SO good, Amanda! I pinned the crap out of all of the photos even though the cookies are not vegan… all of my non-veg friends will MUCH appreciate. Now I am off to figure out how to make cookies that look as yummy minus the eggs and dairy 🙂 hope you’re enjoying every bite!

    Skillet cookies are the best! I haven’t made one in a really long time. My Dad would love this. The only treat he will eat is chocolate chip cookies. He will NEVER venture to try something else. Definitely with ice cream!

    LOVE skillet cookies. Simplicity at its finest. I mayyy make this today, actually, because we haven’t had one in a while! I’m definitely a warm cookies and milk person, but I mean… who would say no to ice cream?

    I’m sorry about your sunburn! It’s so awkward to think about going skiing and getting sunburn, but I guess weird oddities do happen sometimes! ha!

    Eesh! What to do if you have no cast iron skillet? Could you use a nine inch cake pan to bake it in? Looks too good to pass up!

      Yup! It would still work, even without the skillet. You would just have to melt the butter and sugar in a separate saucepan and then mix everything up in a different bowl before adding it to your pan.

    1. Twinning again!!!! 2. I bought a cast iron skillet for $20 bucks yesterday and I think I’ve told the entire world about it. I love me a good deal. Now I need to find individual sized ones…clearly a kitchen necessity!

    I am all about the doughy-ness in baked goods..which is why I generally prefer a muffin over a cookie. But this! The texture looks mind-blowingly epic! I will be making this..working with the ingredients will be a good challenge for me.
    The sooner I can consume the results, the better..so simple recipes for the win 🙂

    Yay for the skillet cookie! I knew you would love how easy it is to make! I love warm cookies with ice cream and I love baking my cookies in cake/pie/skillet form because it is so simple! I am all about simple which is the main reason I prefer to dine on cupcakes from Crumbs versus making my own. The whole decorating/frosting process is just too much work and detail for me.

    when you were describing this to me last night I figured I would want it…and now that has been confirmed. Looks amazing love! Considering that I’m not the biggest fan of drinking milk, imma go with ice cream…plus ice cream is just better with everything 😉 Now I need to run out and buy the appropriate sized skillet…
    If I’m making something for myself, I usually go simple. But it’s fun to break out something complex for someone’s birthday or a holiday!

    Good lord, girlie…this looks unreal! I’m all about the quick recipes- more time for eating ;)’. Is it weird that I actually prefer cookies frozen over warm out the oven?? I love ice cream with cookies but if the latter are super sweet, I’m partial to a chilly glass of milk.

    We were celebrating my friend’s birthday today and we skipped the cake in favor of an extra large cookie- definitely the better alternative :-)!

    Oh Amanda – this cookie – wow! I have tried making a skillet cookie before and ended up with the bottom burnt – the result did not look like this! I think I said this already but wow! A hunk of this with ice cream and coffee would be like heaven!
    I love baking – and now that you posed the question, I think I really enjoy the process, because most of the time I end up gifting my baked goodies on the rare occasions I make more than that will serve my 2 person home.

    I just cannot get over the idea of digging into the whole thing with the melty vanilla ice cream on top, it looks too good to be true and I have no clue how anyone could stop eating after just one piece 😉 good job on the picture front, lady! It looks mouthwatering!

    Now this, THIS is my kind of dessert. Everyone can take their chia seeds, overnight oats, and green smoothies and just give me this cookie. Wow. You have hit a home run in my book.     Oh my goodness this is the best recipe I’ve seen around blogland in MONTHS. Chocolate chip cookies in a skillet taste infinitely better than drop cookies. I don’t know why, they just do.

    I’ve never actually made a skillet cookie but this looks incredible! I like most of my food cold (even hot dinners) and that includes cookies. Chewy is definitely an attribute I look for in any cookie 🙂

      I’m a fan of cold foods as well. I’ll always let my meals cool off to room temp before I eat them — they taste better that way!
