Almond flour, shredded coconut, chocolate, and oats make up the base for these Almond Joy Oatmeal Cookies. A soft and chewy gluten-free cookie that’s loaded with texture and flavour!

I’m going to start this post with a confession that you have to promise you won’t judge me for. Ready? Okay…

I’m not a huge fan of chocolate chip cookies. That’s not to say that I don’t enjoy them, but they’re not my favourite as far as cookies go — that title belongs to chocolate chip oatmeal cookies.

Remember how I went on and on about being huge on textures in my granola post? The same thing applies to cookies. I prefer denser, chewier, heartier cookies to the smooth and buttery kind that melt in your mouth… which is why tossing in some oats is a must. 

Chocolate is another must, although I do have to admit to really warming up to raisins in my old age (read: I’m not really that old). In fact, sometimes I’ll actually choose those over chocolate chips when it comes to picking my cookie add-ins. I know, I know… The younger me would be scoffing at the current me as well, which is why I’m going to stop talking about my strange preferences and start talking about these cookies instead…

… with ‘these cookies’ being Almond Joy Oatmeal Cookies; named for the simple fact that they contain almonds, coconut, and chocolate… just like an Almond Joy bar.

Can I tell you a secret? Another confession? I’ve never actually eaten an Almond Joy bar before… which is entirely my country’s fault, since I’m pretty sure they’re not sold up here in Canadaland. That being said, I have no idea whether or not these cookies do justice to the original bar, but calling them Almond Joy Oatmeal Cookies was a lot more convenient than calling them Almond, Coconut, & Chocolate Oatmeal Cookies, so you’ll have to forgive me for that one, alright? I’ll give you a cookie if you do…

… or a stack of cookies since I’m currently swimming in them thanks to the fact that I burned the first batch. But never mind my [occasional] culinary ineptitude — I made a few tweaks to the second batch and it came out even better than the first. See? There’s a little bit of good to be found in every situation. Or in this case, a lot of good…

These cookies are soft, chewy, and loaded with texture. They melt in your mouth while still giving you a little bit of something to chew on, with each coconutty bite being punctuated by a delicious burst of dark chocolate… And can I get any weirder with my descriptions? 😯 Bear with me…

They’re made with almond and coconut flours, making them gluten-free for those who are trying to avoid it, yet completely irresistible for those who don’t have to worry about it. The coconut flavour isn’t overwhelming, but it’s definitely detectable. The dough itself isn’t overly finicky, so you don’t have to worry about over-mixing it and ending up with hockey pucks in place of cookies, but it does require a little bit of chilling time to help it set so that it doesn’t melt all over the place and form one giant mound instead of cute individual cookies.

Aaaaaaand I think I’ve rambled on long enough, so I’m going to end by saying… These cookies — they’re amazing and you really need to make them.

Almond Joy Oatmeal Cookies

Ingredients

Scale
  • 3/4 cup (60 g) old fashioned oats
  • 1/2 cup (56 g) almond meal/flour
  • 2 Tbsp (14 g) coconut flour
  • 1/4 cup (20 g) unsweetened shredded coconut
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup (48 g) coconut palm sugar*
  • 2 Tbsp (40 g) honey
  • 1 large egg, lightly beaten
  • 2 Tbsp (15 ml) coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup (42 g) dark chocolate chunks/chips

Instructions

  1. In a large mixing bowl, combine oats, almond flour, coconut flour, shredded coconut, baking powder, salt, sugar, and honey.
  2. In a smaller mixing bowl, whisk together egg, coconut oil, and vanilla extract. Add to dry ingredients and mix until well combined. Fold in chocolate chips.
  3. Place bowl in fridge and chill for a minimum of 30 minutes.
  4. When ready to bake, preheat oven to 350F (176C) and line a cookie sheet with parchment paper or a non-stick baking mat. Use a tablespoon to drop cookies onto baking sheet, pressing down to flatten them slightly.
  5. Bake for 8-10 minutes, or until the edges begin to turn golden brown.
  6. Remove from oven and allow to cool on sheet for ~5 minutes before transferring to a cooling rack to cool completely.

* you can also sub with brown sugar

    I’ve been reading a lot about different flours and I can’t wait to start experimenting with them. Will definitely have to give these a try. To answer your questions, all of the above. It really just depends on my mood… I go through my phases lol.

    you know Jen (peas and crayons) started calling me ALmond Joy about 3 years ago. It’s stuck ever since. I think this is a sign she needs to make me these and come visit. p.s. you don’t need to try almond joy’s since you have made these!

    Oh, good lord, those cookies look amazing! I’m gluten-free, so these are right up my alley! I haven’t been too impressed with gluten-free cookie recipes lately, BUT this one, looks delicious! I’ll have to give it a try. :-_

    I prefer cookies with anything or everything, but to answer your specific questions…I like oats in my cookies and I like raisins with oatmeal cookies. There is something about that chewiness that makes them so yummy! But again, I can totally do chocolate chips too…HA!

    Hello Amanda,
    First, of all, I have a LOT in common with you, Amanda! First of all, I’m just so sorry that you haven’t yet eaten an Almond Joy (candy) bar. That’s just a sin that they don’t have them up there in Canada. I should buy you a package and ship them up to you. Seriously (and I’m NOT just “saying” this: Almond Joy’s have been/are my 2nd favorite candy bars (2nd to Reese’s PB Cups, but I know you are allergic, so I’m sure those wouldn’t be your favorite). Anyways, the mix of almond + chocolate + coconut…man! Great combo. Anyways, I can also totally relate to burning batches of stuff. Boy…have I done that (and JUST recently did with a batch of muffins). Oops! Gotta stop multi-tasking and pay attention to my timer. Ha!

    These cookies look delicious! Seriously, I printed it out…and when my current batch of bars (I JUST made two days ago) runs out (which I’ll post the recipe for next week), I’m going to make these cookies! As you described them “soft, chewy, and loaded with texture” that’s exactly how I like them.

    Maybe I’m one of the only people but I’ve only had regular chocolate chip cookies so far so I have no preference in terms of oats or not. Neither chocolate chip nor oatmeal raisin cookies are classics over here. Either way, though, whichever kind of cookies we’re talking about: chocolate chips win. No burnt raisins for me.
    I’m all about textures so I like the mix of different nuts/ almonds in this recipe and well, the whole cookie idea.

    Holy ish girl these look so yummy… I never liked coconut until like the past year or so, now I can’t get enough! I am pinning these to make when I’m back next weekend… you are so a genius in the kitchen, I love it!! But seriously, who doesn’t like chocolate chip cookies?

    Mmmm these look tasty! I’m all for an Almond Joy, so an Almond Joy inspired cookie sounds right up my alley. I prefer traditional chocolate chip cookies without oats, but I will never deny one WITH oats. 😉

    All this crazy rain = make ALL the cookies! I literally have a running list of 5 so far that I want to bake…it looks like my friends are going to be some very lucky people. 😉

    And just because I’m curious, what is the difference between coconut palm sugar and brown sugar? Is it healthier or a different texture or?

      Coconut palm sugar is made from coconut sap whereas brown sugar is made from sugar cane. It has a similar taste to brown sugar, but it has some nutrients in it and is slightly lower on the glycemic index. At the end of the day, though, it’s still sugar.

    I like all things with textures, but I’m not really sure if I could pick a favorite cookie. I do love a plain old chocolate chip cookie, but I don’t know if I ever met a cookie I didn’t like. And as far as raisins vs chocolate chips, I definitely like both… But if those little shriveled grapes PRETEND to be a chocolate chip (read: unlabeled)… I get a little bitter!

      Honestly… I would never say no to a cookie either. There are just some that I prefer over others. And can you believe my mom used to try to trick me with the raisin vs. chocolate chip thing? I still won’t let her live it down…

    When I was a kid my dad always bought almond joy bars when we went to the states. I wasn’t a huge fan of chocolate growing up (strange kid I was) so I would always get my mom to leave out the chocolate chips when she was making cookies. My tastes have changed and now chocolate is a great addition, especially when Oatmeal is involved 🙂

    My mom would LOVE these, and she and I were just talking yesterday about how she could cut refined sugar from my dad’s and her diet. She thought she could never eat sweets again. Oh no! Even though I hate baking, I am going to make these for her!

    I love almond joy!!!
    I definitely prefer oalmeal in my cookies and I’m pretty old fashioned…. So I tend to go for raisins over chocolate as my add-in. I especially love trader joe’s jumbo raisin medley! Soooo perfect and delicious!

    Oatmeal chocolate chip are my favorite cookies (way better than original). My grandma always made them and I had never heard of anyone else that made them until recently. I love this twist with the coconut, too!

    I happen to make the best oatmeal raisin chocolate chip cookies in the world. Really. They are the recipe that started my cookie business that I was doing a few years ago. So good, so thick and chewy and perfect in flavor. They were a meal in itself.

    Definitely prefer them with oats! You’re right, it’s something about the texture. Just so much yummier with that extra bit of substance. I definitely prefer chocolate chips, but I am also coming around to raisins more and more as I’ve realized that it’s dangerous for me to keep a bag of chocolate chips in my apartment 😉

    nom nom nom! I love chocolate chip cookies, and I am able to forgive you for not liking them, but I do agree oats add a little something extra, but my vote goes for white chocolate chip cookies….so I am a neutral party!

    You know anything with almonds & oats in it has my heart! I cannot tell you how many times I’ve had to remake something for pictures. It doesn’t happen often but when it does it’s frustrating. I just bought coconut flour last weekend. Do you think the flavor is real intense when you bake with it?

      Nope! It has a pretty mild flavour. That being said, it doesn’t behave like other flours so it takes a little while to get used to working with it.

    I LOVE almond joy bars….I actually bought some back from America (the fun sized ones) and they melted…still ate them anyway.

    I am a texture freak too, so if you say the addition of oats make elevate them to another level, I’ll add the oats. Boom.
