Happy What I Ate Wednesday, friendly faces! 😀

Long time no [foodie] talk! This post was supposed to go up last week (so these are last Tuesday’s eats), but I was stuck in a writer’s block funk that I still can’t seem to fully shake. And the weirdest part is that it seems to hit the hardest when I’m trying to talk about my meals… or at least this particular day of meals. Maybe it’s because they’re so taupe? Can we go with that as a theme? Because that’s the first thing that hit me when I looked over the pictures for this particular day — how brown everything was 😆 And will you forgive me for going the photo dump route? Because after 10+ failed attempts at sitting down to write this post, I give up on words. Thank goodness tomorrow I can do some Thinking Out Loud…

Breakfast…

Coconut Basmati Rice Bowl

A bowl of leftover white basmati rice cooked in coconut milk, then topped with almond butter, honey, and cinnamon.

Morning snack…

Smoothie and Cereal

A salted caramel cookie dough smoothie and a bowl of Barbara’s Morning Oat Crunch cereal.

Lunch…

Yogurt Snack Bowl

A snack plate with two flourless apple cinnamon muffins, roasted kabocha, Justin’s maple almond butter, dried figs, and plain Greek yogurt.

Afternoon snack…

Pumpkin Granola Bars

Taste testing the soft and chewy pumpkin granola bars.

Dinner…

Quinoa Avocado Bowl

A bowl of red quinoa cooked in coconut milk with chickpeas, spinach, broccoli, avocado, and kabocha squash.

Evening snack…

Pudding and Almond Butter

A Belsoy dark chocolate pudding cup with a spoonful of Maisie Jane’s crunchy almond butter.

    I just ate a little…lot ..of cereal!
    I get writers block often. Mostly because I’m not sure if people will find what I have to say interesting lol!

    Writer’s block SUCKS. I usually find just walking away for a few minutes and distracting myself before trying gain does the trick! Last thing I ate was some maple baked tofu (just made up the recipe and it is SO good). Your breakfast looks especially delicious!

    I get writer’s block a lot which usually goes with my oversharing. It might be a good thing I’m not good at blogging because people would seriously get wayyyy too much TMI. I have no filter. It’s bad sometimes. Lol.

    The last thing I ate were pumpkin spice and smore flavored candy corn. I’ll have probably 10 more of each before I get sugar tongue. My candy corn loving attitude doesn’t last very long. Lol

    When I usually have writer’s block, I honestly just take a break, and it usually comes back! Last thing I ate was a leftover lunch, which was a slow cooker chicken sweet potato black bean quinoa chili. Gosh darn that was a mouthful! 😉

    That dessert – I would do bad things for that dessert. I don’t even like almond butter really but for some reason that looks perfect!

    Writer’s block hmm? I can’t say I’m acquainted with it, though I can believe it would hit at some point when running on a blogging schedule. More often than not I possess a million words ready to flow from my head if I would just get typing…unfortunately -these days- I struggle to develop an eagerness in spending extra time at the keyboard after the majority of the day working on it 🙁 .
    With your tasty-looking eats I can overlook the lack of your engaging conversation this once 😉 …the basmati rice breakfast bowl looks particularly appealing right now.
    Just about done snacking on a few squares of the most incredible dark chocolate with roasted hazelnuts <3 . I am utterly obsessed with the combination of hazelnuts and chocolate these days!

      I don’t blame you for not wanting to spend more time on the computer — it definitely gets tiring after a while! And dark chocolate and hazelnuts isn’t a bad combo to be obsessed with at all 🙂

    Mhmmm I never would have thought of making rice into a sweet dish, but that melty almond butter and honey… 😯 . Neeeeed to try! And your roasted kabocha reminds me that I need to cook mine up today! It’s been staring at me on the counter since I bought it a few days ago. ALSO. Pudding! Totally obsessing over it the last few days and I have no idea why. It seems like such a weird thing to crave 24/7. I’m glad I’m not the only one 😉

    Last thing I ate: currently eating leftovers from dinner last night. Farm bought pork chop with apple cider gravy, and a ceasar salad. Perfect 🙂 But now I want a pudding cup.

    All of your eats look so comforting! I’m loving that quinoa bowl with coconut milk too, yum!

    I wish I had an answer for your writer’s block but unfortunately I don’t. I usually walk away from the computer if it feels too forced and distract myself with something else for a while. But sometimes I push through it so that I don’t miss a post. It’s definitely a learning process for me.

    I think the key to overcoming writers block is to switch up your schedule/routine & try something new. There’s nothing like a different experience or perspective to get things moving!

    okay, how do you prep your kabocha squash–the deets please and do you eat the skin?

      I don’t eat the skin because it’s a little too tough for my stomach to digest, but I prep my squash by cutting it in half, scooping out the seeds, cutting it in half again (so that I’m left with quarters), and then baking it at 410F for about 30 minutes.

    We just bought and prepped jasmine rice…I’ve been making brown rice for so long, I forgot how much I liked other varieties. Much better, actually! that breakfast bowl looks delish!

      It’s actually super simple! I just cook up a batch of quinoa like normal, subbing in 1/4 of the water with coconut milk, and then I toss in some canned chickpeas and whatever steamed/roasted veggies I have on hand.

    Writers block is the worst – especially when you’re blogging at the last minute and want to get a post up by the next day! I find that opening up a Word document and just writing down all my thoughts and ideas helps. Usually after that I can weave some of my thoughts into a coherent post!

    Amanda – this looks like the perfect day of eats to me, even if most of the meals are more taupe than others! I just came over a stomach virus, so these simple eats look like a perfect day. =) Last thing I ate was a plain ol’ banana (texture didn’t feel right to me), but I’m looking forward to my lunch in a bit – homemade chicken noodle soup from my boyfriend’s mom!

    When I am suffering from writers block I do one of two things. Either stop writing and take a well deserved break. Or I go and observe life – I will head to starbucks and people watch (it’s amazing watching what people choose food and drink wise or how they interact with people), I will read and read anything I can get my hands on or I will just chat to people. I always come back with a notebook full of blog ideas, some pass the test others don’t but it sure gets me thinking!
    Last thing I ate, some red grapes! 🙂

    Hey, sometimes words just have a hard time coming out… I totally get it! At least your yummy food photos make up for it. 😉 Your pudding and almond butter combo looks AMAZING. If I have a writer’s block, I will either take a break for a day or two (or however much time I need), or leave the computer and brain storm some topics to give me some inspiration.

    Definitely coming back to read the comments on this post- writers’ block has hit hard over here! Love the sound of your breakfast- so simple yet comforting! I am currently munching on some veggie sticks with hummus but my NEXT food of choice is a tad bit more exciting: PIZZA :)!

    Okay, I’ll take all of your meals. Tantalizing taupe?! I’d think so. And the chocolate pudding – especially the dark not regular – is even better frozen. If you haven’t tried it: !!!
    The last thing I ate was lunch I’d brought to work in my bew not-so-fancy microwave bowls: vegan chili bake with polenta crust. Finally no more soup for me!

      I only tried it frozen once, and I think I was too impatient to wait for it to unfreeze properly because it ended up being a little too icy for me 🙁

    Last thing I ate was one of my curry chicken burgers with sweet potato fries and a salad. It was pretty good, the best was the ketchup on top 🙂
    Writer’s blocks are horrible. I figure, that when I wait a little and stop thinking too much about it, the inspiration comes back and as soon as I start typing it flows. But yeah, if not, it sucks.

    We recently started eating more quinoa and I really like it. I was honestly pretty surprised but I really like it. What kind of pudding is that? It looks pretty interesting!

    Dinner, red quinoa eh? Hmmm I’m going to have to hunt that one down. I love regular quinoa and can get that mostly in any supermarket here, but I’m due a visit to the local health food store on Friday so I’ll be enquiring about this unbeknown to me there! 🙂

      Some people say it tastes nuttier, but I honestly don’t notice much of a difference. It does take a little longer to cook though!
