Gooood morning, good afternoon, good evening, or… good night? Whenever you happen to be reading this, I hope it finds you well ๐Ÿ˜€

So that may have just been the goofiest intro I’ve ever written, but I’ve been in a pretty goofy mood so I’m afraid you’ll just have to bear with me for the time being. I’m sorry for standing you guys up yesterday, but I needed to take a mental health day. Okay, that’s not entirely true. What really happened was that I blew you off to go to the mall.ย I know… Between working, studying, erranding, and shopping, I didn’t end up getting home until about 9:30 on Monday night, and by that time, the only things on my mind were pyjamas and cereal.

BUT!!ย The good news is that I finally managed to find a dress for HLS. The bad news is that I managed to find a lot more that I didn’t even know I needed. Huh. Funny how that works. But I’ll share some of that with you guys tomorrow, because today… today is all about the food!

WIAW

Yessss it’s What I Ate Wednesday yet again, andย I’m particularly excited to share this one with you guys because it was one of those days where each meal managed to hit the spot juuuuuuust right. Don’t you love it when that happens? I mean, I’m happy to be in a place where food no longer has the ability to make or break my day (sadly, a bad meal used to have the ability to totally wreck my day), but you definitely won’t find my objecting to satisfaction. But enough babbling… Food!

Breakfast…ย [Craving] a bowl of comfort.

Cocoa Powder Oats

I don’t know what mornings are like in your neck of the woods, but they’ve been pretty cold, dark, and gloomy around these parts. I want to say that’s why I’ve been craving a nice warm bowl of oats for breakfast, but let’s not kid ourselves here – I crave oats even when it’s obnoxiously hot outside… they’re just that much more comforting when it’s gloomy. Today’s bowl was cooked sans egg whites with just a banana. I added a spoonful of cocoa powder when it was all done and didn’t bother stirring it in completely so that some chocolate clumps were left.ย Love. Topped with a good amount of roasted almond butter, this bowl was pure bliss.

Morning snack…ย [Craving] something cool and fresh.

Fruit Mess

Once the sun comes up and things start looking a little more summery, I start craving fresh fruit and cold yogurt. Okay, that’s a complete lie… I crave cold fresh things in the morning regardless of the weather, but it sounds better to say that I’m all in tune with the seasons ๐Ÿ˜‰ Speaking of which, I’ve been doing my best to load up on all of the end-of-summer fruits while I can, because soon there’ll be nothing but apples, pomegranates, and pears. That is, unless you’re willing to sell a kidney on the black market to be able to afford organic berries when they’re not in season. Dang. But at least there’s always bananas…

Lunch… [Craving] salty, salty, SALTY!

Tofu Stir Fry

Remember how I mentioned my chronically low blood pressure? One of the things my doctor recommended was to eat a fair amountย of salt. Alrighty, I can do that – salt makes things delicious. I remember a few years where I avoided salt like the plague because of the whole water retention and weight gain thing, and let’s just say those were some of my more unpleasant years… hellooooo lightheadedness and fatigue to the max. But I digress. LUNCH! This was some leftover tofu stir fry with a side of rice. For the stir fry, I just fried up some tofu and veggies (mushrooms, bell peppers, broccoli, onion) in toasted sesame oil and went to town with the soy sauce.

Afternoon snack… [Craving] leftover roasted veggies.

Roasted Veggies

Stop laughing! But I know, right? Who craves vegetables?ย Who?!ย I do, apparently, because the only thing that sounded good at that point was a bowl of cold veggies that I roasted the day before. We’ve got some Taber corn (so sweet!!), kabochaย (no squash belly!!), and broccoli. But don’t worry – I haven’t completely turned over to the dark side. My sweet tooth kicked in a little while later and I followed up my veggies with a pot of caramel pudding.

Dinner…ย [Craving] pizza.

Pumpkin Hummus Tortilla Pizza

I feel like I’ve been seeing pizza all over the blog world lately, and although I didn’t have any figs and goat cheese to make one a laย Amy,ย or arugula and goat cheese to make one a laย Becky, Iย did have some pumpkin and hummus to make one a la Spoons. It’s pretty much been forever since I whipped up a pumpkin hummus tortilla pizza, and I’m kind of kicking myself for not doing it sooner. Holy.wow did this ever hit the spot. And it’s the perfect way to use up some of that pumpkin that gets left over from baking.

Evening snack…ย [Craving] breakfast.

ABJ Toast

If it’s not cereal, it’s yogurt. If it’s not yogurt, it’s toast… Apparently, I’m just a big fan of ending the day with breakfast. But really, a crispy piece of toast topped with ooey-gooey almond butter and sweet blueberry jam is a perfect way to end the day.

And that brings us to today – my last full day at home before I hop on a plane for Minneapolis tomorrow. EeeeeeEEEEeee!! ๐Ÿ˜€ I managed to get most of my shopping and odds ‘n’ ends taken care of, but my suitcase is still empty (typical), and there’s some food prep to be done.

    Starting and ending the day with breakfast doesn’t sound half bad to me! I am craving stir fry veggies now that I saw your lunch… but I have no soy sauce! The horror! If I snack on veggies I usually have tomatoes or mushrooms or baby carrots.

    I used to love soy sauce allllll over my sushi. I drenched it! There’s something good about salt sometimes especially sprinkled on corn on the cob! ๐Ÿ˜€ I’m currently in my car ready to fit my ass into your suitcase! Be prepared to make room! Lol!
    I’ve been craving pancakes, macaroni and cheese, and baked beans (random) lately. I blame cold weather and comfort foods!
    My dinner last night was Chipotle with extra guacamole! Tonight is waffles. Yum!

    I have been needing inspiration for dinner as well lately. Now that I’m cooking for two people, it’s weird to think that someone else relys and I have to take into what they want. Anyways-I’ve been craving ihop so I think we might go for dinner there tomorrow. LOL.

    Ahhh your breakfast looks so good! I wish I had the motivation to make that. I also like how you sneak in the evening snack. That’s my kinda style. ๐Ÿ˜‰ My dinner last night was brisket tacos – so spicy but really good.

    Your stir fry looks amazing. I think anything with a side of rice tastes good, though.

    Dinner for me will be veggie lasagna! I made it for the first time this week, and it turned out surprisingly well (surprisingly because I thought I would miss the meat to the max). Have a great day!

    Oh man, those oats look incredibly good. I’ve been mostly eating cold breakfasts lately, but I have a feeling hot oats will be making an appearance very very soon around here.

    We’ve been ALL about homemade pizzas around here lately. They’re so easy, and you can be so creative with them! Yours looks great!

          I don’t, but I plan on making one before the winter hits because I don’t think I’ll be able to deal with the lack of natural light.     Dress shopping is one of the best excuses to forego blogging – if you’re showing off your purchases, that is. Looking forward to that tomorrow – and I’ll even forgive you not getting any coral-coloured ones should that actually be the case ;).
    Somebody else who shares my fondness of cocoa clumps – that slight bitterness and rich chocolatey flavour … sorry, I can’t help it. And craving and snacking on veggies – more specifically: mushrooms and kabocha (!!!) – is so NOT unusual. Oh, well, unless you asked my friends maybe.
    What I’ve been craving lately:
    1. quality time with my parents
    2. a nice hike in the countryside [related to 1.]
    3. seeing my sister
    Wait, was this supposed to be about food? Can we stretch the term ‘cravings’ to current needs like the above? I’m rather happy food-wise so these are things I’m actually longing for.

    I am so jealous of everyone going to HLS!! I can’t wit to see your dress and read all about your time there.

    I like the look of pizza ala Spoons. Pumpkin hummus sounds awesome. And somehow you always make me want almond butter & jelly toast. You just make it look so good!

    Everyone of your photos made my mouth water! I crave veggies too! My body can tell when it hasn’t gotten enough of them and asks for them through cravings!
    Dinner last night was a huge salad with mixed greens, peas, bell pepper, olives, turkey, cheese, sunflower seeds, tomatoes, and honey mustard dressing. Tonight’s dinner is salmon with almond, caper and sesame oil with a side of veggies of course!

    I seriously fell in love with your pumpkin hummus tortilla pizzas last year. I’m pretty sure I could dream up a different combination for pizza to have one every night… ๐Ÿ™‚ I wish I craved vegetables for a snack – I always try to convince myself I like them, but then I have to douse them in copious amounts of hummus in order to actually eat them. Maybe I should just stick to my cravings…

    oh i totally get veggie cravings!! if i go a day without them, i CRAVE them by the following day. its like im vitamin deficient or something. but lately ive been craving chocolate. lots and lots of chocolate, and for the most part ive been giving in to that craving ๐Ÿ™‚ i had the best chocolate cake last night. omg so good ๐Ÿ™‚

    Everything looks delish! I definitely crave fruits/veggies. They can be a very refreshing snack, especially during the hot summer months.

    Lately I’ve been craving pancakes, anything pumpkin and bananas (I just can’t get enough of them – I know you can relate!).

    So, last nights dinner was pumpkin soup. I’ll be sharing the recipe soon. It’s SO good!

      Oh gosh bananas… don’t even get me started – especially if they’re frozen! And I looove pumpkin soup. I have a curried apple/pumpkin soup that I haven’t made since last year. Need to get on that!

    I absolutely have not started packing for Minneapolis yet. Oops. Maybe I just work best under pressure? But ohmygodohmygodohmygod TOMORROW!!!!!! ๐Ÿ˜€ ๐Ÿ˜€

    3 things that I’ve been craving lately: roasted squash (tis the season) chocolate (like that ever changes) and guacamole. Normally at this time of the year I’d be craving pumpkin, but it’s so stupidly hot out right now that that’s not the case. Ahhh weather, give me Fall!

    I do snack on veggies once in a while – baby carrots are usually my go-to, but right now i’m also snacking on squash. Dinner last night was a banana, animal crackers and peanut butter snack plate (fortunately the nausea seems to be gone this morning though) but I’m making a lasagna for dinner tonight. So Eric has leftovers and isn’t running to Five Guys for the next 4 days :-p

    What a great day of eats, I’m glad everything hit the spot. I crave cold fruit an yogurt and hot oatmeal year round regardless of the temperature. I think they are my comfort foods. Pizza a la spoons sounds good, although I never have leftover pumpkin. It goes something like leftover pumpkin, spoon, mouth, belly :).

    How do you make your tofu? I love getting it at restaurants/takeaways but I’ve never cooked it at home. I bought some the other day and would love to know how you cook it (hopefully a way where it’s not fried to death?)

      It’s actually really simple! I usually press mine before hand to get all the water out and cut it into cubes. Then I drizzle a little oil into the skillet, cook my onions until they’re translucent, and throw in the tofu. I let that cook until the outside is golden brown, and then I add the rest of my veggies.

    Aw yay congrats on finding a dress for HLS! I can’t wait to see it. ๐Ÿ™‚ I tend to snack a lot more on fruits than I do veggies, but that’s probably because I eat a lot of veggies at meal times and don’t really want them in between big meals (aka, breakfast, lunch, and dinner). I think I’m going to start making AB&J paninis once in a while now that I’m back at school and I have access to a panini machine…we’ve come up with a few other sweet+savory panini ideas that are wonderful, too. (Ahem, banana, nutella, and AB…)

    I remember going to a chocolate festival a couple of years back – where pretty much all day I ate chocolate samples – I have never craved a bowl of steamed vegetables more than when I got back!! Crazy!
    At the minute I’ve just been craving my usual stuff – greek yoghurt, oats (of course) & ice cream…which is strange because its getting colder here & rainy..I don’t think my cravings are in tune with the weather either hehe.
    I’m having a turkey mince mexican style stir fry tonight with turkey mince, peppers, onions, mushrooms, mexican spices & avocado ๐Ÿ™‚

    Okay that pizza looks amazing! What a delicious day and I totally crave veggies too. Yesterday I was craving salty which neverrrr happens (I am a sweet girl all the way) but I had trail mix and lots of veggie chips. Have a wonderful day lovely!

    Definitely snack on veggies and baby carrots are my top choice, but I also love the looks of the corn with kabocha. I need to check out that recipe for that caramel pudding. Yippee for HLS… I fly out early Friday morning!

    As I sit here with my flaxmeal muffin (EPIC fail recipe that needs to be tweaked) your oatmeal with cocoa and almond butter gave me a good ol kick in the saliva glands!! AH OH YAH! Definitely crave veggies – though my cravings are usually for carrots/celery with peanut butter or hummus!
    Speaking of hummus I so need to try your healthy pumpkin hummus pizza-it looks fantabulous!
    Dinner last night and tonight is gonna be leftover quinoa with veggies, beans, avocado and chips…not too inspiring but my go to meal. I recently started eating dates with a spoonful of peanut butter – happened by accident when I dipped a pb spoon to fish out a date – so good, so so good! It’s my new crazy crave!

    Eeeekkk….you must have been UBER bloated after a snack of squash AND broccoli. But look at you, champ, following it up with a dinner with MORE broccoli. You deserve an award….or some tums.

    I may or may not have had a dream about that chocolate soy pudding last night…I ran out about a week ago and there is definitely a void in my life. I’ll be stopping on my way to work for some. Dreams don’t lie…I need it back in my life.

      Surprisingly enough, my stomach’s been handling it pretty well. But I tend to keep my portions pretty small and spread out instead of just going to town in one sitting. And yes… yes we all need the chocolate pudding. My store is still out ๐Ÿ™

        I think it’s Alpro Soya brand for us over here, Lucie. And it’s delicious – the caramel but especially the dark (!) chocolate flavour :).

    I totally snack on and crave veggies, especially roasted ones! In fact, I have to portion control the amount I roast because they just don’t last as leftovers in my house. I tend to eat them all right away. Could be worse, right? lol…I am with you on eating the salt – my doctors always told me that I need to be more bloated than the rest of society in order to keep from fainting from low blood pressure. Funny thing is though, I don’t like salt and of course hate feeling bloated but I have been trying to be better about it- especially during the summer heat when I run. I have found that eating salt in the form of soy sauce and Asian food helps me get the adequate sodium intake.

    I need to make some of that caramel pudding!!! I have a container of sea salt at my office to sprinkle on my lunches. If my co-workers didn’t already think I was crazy this certainly sealed the deal ๐Ÿ˜‰

    Ah I’m so excited for all y’all heading to HLS- have a blast, ok!! Your eats look delicious as usual..breakfast always sounds good to me, regardless of time of day…as does nut butter ;)! Speaking of which I love snacking on veggies with a side of nut butter or hummus…or sometimes straight up plain! I always feel like those crazy health nuts when I say I’m “craving” carrots but hey- the stomach wants what it wants ;)! As for dinner tonight- I’m debating between a brown rice & chicken stir fry or a big ol’ salad…at the rate the rain is coming down, I am probably going to go with the former. Cooked food always tastes better when it’s gloomy outside!

    Can’t wait to see what you got at the mall. Is it weird that I get more excited about that then grocery shopping these days. I’m hoping you stopped into Sephora too;)
    I love days where all your meals hit the spot. I find it happens pretty often these days. Especially now that I’m in a more positive mindset.
    Gosh, I also need some Dinner inspiration these days I always rotate the same things. Right now I’m stuck on almond butter chili. Seriously obsessed.

    Pure bliss your day of eats! Haha, I totally get making up stories why I ate stuff, but in the end it’s mostly as simple as: I wanted it, I ate it, duh! Though I find your late-afternoon-veggie-craving a tad strange ๐Ÿ˜‰ I totally get the comfort of a bowl of nana oats these mornings. It’s just so much more fun to eat something hot and goey when it’s cold and rainy outside… during summer eating oatmeal for breakfast seriously feels like working out.

      I can’t explain it either, but I’ve been craving veggies a LOT more lately ๐Ÿ˜ฏ And I almost always wait for my oats to cool before I eat them in the summer… that way they get a lot thicker and cakier.

    Ahh I couldn’t agree with you more! Oatmeal is like a huge bowl of comfort! It has got to be about one of my favorite things to enjoy in the fall on cool, cloudy, gloomy days. It always makes me feel so much better and more warm and cheery ๐Ÿ™‚
    And as weird as it sounds, I, too, often crave veggies. Sometimes that’s the only thing that really just sounds good! No shame in that, girl!
