Hey, hey, hey! Happy What I Ate Wednesday! :mrgreen:

I missed you guys yesterday! But after a rather manic Monday followed by a less-than-stellar Monday night (toss, turn, rinse, repeat), I woke up yesterday morning and declared it a very much needed rest day… from blogging, at least. As much as I love blogging, it has a tendency to take up a good chunk of the day, and I needed that chunk to catch up on a few other things.

Because of my wonky night, I ended up sleeping in until the glorious hour of 5:30. And yes — I very much consider that sleeping in. After brewing a cup of my favourite tea, I got to work on breakfast…

Buckwheat Breakfast Bowl

Remember how I mentioned wanting to add a little more variety to my diet? I’ve been slacking 😳 Β BUT! IΒ did manage to whip up something a little different yesterday with this buckwheat breakfast bowl. All I did was take some leftover buckwheat, add a splash of almond milk, slice up a banana, toss on some blueberries, and finish the whole thing off with a glob of almond butter. It wasn’t oatmeal, but it got the job done.

After that, it was time forΒ me to get some work done… but not before heading out for a quick walk/run first. Is anyone else upset over the fact that it takes the sun so long to rise these days? I went out a little after 7 and it was still pitch black… I came home around 8 and it was just starting to get light out. Good thing we’ll be turning the clocks back pretty soon.

I was a little chilly after my walk/run (I’ll go into a little more detail as to what exactly I’m doing in a future post), so I whipped up a homemade latte, buried it with cinnamon, and enjoyed it with the last of my chocolate chip pumpkin oatmeal cookies before settling down to a few hours of work.

Pumpkin Oatmeal Cookie

We’ll gloss over the work bit because, really, who wants to talk/hear about work? I’ve been able to start doing a lot more work from home over the past year, which has been both a blessing and a curse. A blessing because it lets me pick my own hours, but a curse because sometimes those hours end up being ridiculously early or ridiculously late, depending on how bad I’ve been slacking. But I digress — it’s lunch time!

Veggie Egg Wrap

Two eggs scrambled with veggies and stuffed inside a wrap along with some avocado. No fuss, no muss. And yes, I ran out to the store to restock my kitchen after my eggless baking debacle this weekend; and look what I found while I was there!

Apple Chips

Barefruit apple chips! After three weeks of going without, I basically inhaled the entire bag while I was out running work-related errands in the afternoon. Holy.snap are they ever good. And did you know they’ve introduced a new sea salt caramel flavour? I have a nagging feeling that it’ll be slow to show in Canada, but fingers crossed that it gets here eventually — my American food shopping list is already long enough.

… blogging, pampering, and Skyping with J, and you pretty much have my Tuesday in a nutshell. Well, I suppose thereΒ is one other little thing that’s worth mentioning…

Ice Cream and CTC

… because no day is complete without a little dessert, and this bowl of vanilla bean ice cream topped with Cinnamon Toast Crunch definitely ended things on a good note.

    Hello beautiful girl! I have never commented but now after coming here to look at how to make cheesy quinoa I am fascinated- what do you do? As in work lol- it sounds great and flexible how awesome is that! Xo hope you get to Skype J heaps these days

      Hi Tammy! The cheesy quinoa is REALLY simple. All I do is cook up a batch of quinoa like normal and toss in some shredded cheese after it’s absorbed all the water. When the cheese gets all melty, I just stir it up, and voila! Cheesy quinoa πŸ˜€

    I like any day that ends in ice cream, although I wouldn’t turn down your bowl of cheesy quinoa goodness either.
    Blogging, as much as I love it, does take an incredible amount of time. I actually skipped WIAW last week because I needed a night off. Work has been incredibly busy and pressure filled and I haven’t been working out, which means less restful sleep, which translates to increased fatigue and loss of creativity. Not ideal when you’re trying to write. The good news is I gave myself a break and much like you, took a needed rest day. High five for listening to our bodies cues. We’re pretty sweet.

    Blogging certainly does take up a big chunk of your day! That’s why I’ve fallen so far behind when my day is being filled with other things like school. Bah. Who needs it πŸ˜‰

    Hot cinnamon spice tea? I think if I tried that it would be my favorite too!

    Favorite ice cream topping? Cookie dough.

    Do I walk in the dark? On Sundays, yes, when I am walking back from the school parking lot. But I always call my parents and stay on the phone with them until I’m back in my dorm. This past week I had to park a super far ways away and it look something like 20 minutes… I am NOT looking forward to that walk back tomorrow to get my car πŸ™

    Shamelessly, we ended our night LATE with dinner. Matt worked a long night shift + we needed groceries in a bad way. We ended up making a ‘homemade’ pizza with some Brussels sprouts. My favorite toppings are the little fruity boba beads at froyo spots.

    I resorted to greek yogurt with granola last night, due to our lack of ice cream. I love ice cream, especially at night. There is just something about that cool, creamy texture that is perfect for ending a day. Greek yogurt isn’t the same..

    5:30 is totally sleeping in for me too haha! People think it’s crazy, but it works for me!

    Umm, I think I need a few more details on that cheesy broccoli and quinoa bowl! That sounds amazing! Yay for finding the apple chips again! And what tha-WHAT?! Sea salt caramel?! Be still my beating heart!! I’ll have to be on the lookout for those…you know so I can stash them away with the two GINORMO bags of plain ones I have but refuse to open just yet! I’m savvvvvvvvving (read: hoarding) them…my precious! Lol

    I ended my day yesterday with a peanut butter and jelly and cold roasted veggies…all eaten while standing in the middle of the kitchen about 3.1732 minutes before faceplanting after work! And I’m actually kinda liking the dark in the mornings…but only because it helps this zombie fall asleep easier! πŸ™‚

    Favorite fro-yo topping: Fruitty Pebbles aka CEREAL SPRINKLES!! πŸ˜€

      Giant bags?! Did you get them at Costco? ‘Cause I’ve been hearing about them showing up there, but I have yet to go in search of them myself. And the cheesy quinoa is reaaaally simple — all I did was stir in some shredded cheese towards the end of cooking, when all the water had been absorbed.

        I haven’t seen them at Costco (according to {Smart Kitchen} Sarah, the south doesn’t really have the selection that the Northern states have), but I actually found mine at TJ Maxx…on SALE at that! Normally $9.99 marked down to $6.99…and they’re the cinnamon ones! πŸ˜€

        Hmm, can’t believe I’ve never thought of that with the cheesy quinoa…especially since I’ve done the EXACT same thing with savory oats! See? Not so weird! πŸ˜‰

    I haven’t noticed how late the sun’s been rising since I’m up around 7 and it doesn’t seem too dark, but what I hate is how dark it’s been getting. It feels like 9 pm when it’s really only 6:30! That’s one of the many reasons I love summer–longer daylight hours.

    Ice cream is definitely the best way to end any day! I’ve been eating my banana softserve as a nighttime snack a lot lately and while it might not be exactly like regular ice cream, it works just as well πŸ˜€

    A girl after my own heart! Pre-baby I was known to get up at the ungodly hour of 4am to have a leisurely breakfast and read before work. I worked at 7-3:30 which worked well for my early bird life style. My friends and husband thought I was nuts! Post baby I’m sleeping in a little more 5am, sadly I’m going to bed later with all of the stuff I need to get done now that I’m back at work. . . it’s still a work in progress. . . .
    I’m envious of your ability to work from home but I can totally see how sometimes it would be hard to kick your butt into gear.

    Last snack yesterday… I was naughty and took the bag of almonds to bed. Playing with my phone and eating almonds before sleep – kinda liked it.

    Just wondering – do you not get lonely working from home? I can imagine the convenience of being at home would be nice but I’m curious if you ever miss seeing your coworkers.

      Nope! I actually hardly notice it. I usually have to run in to the office every day, so I always see them for an hour or two, and if I feel like I need to get out of my place then I go work in a coffee shop. I actually go to Bux so often that I know a lot of the other regulars there, so it feels like going to see friends.

    What a great way to end the day πŸ™‚ I haven’t allowed myself to have ice cream in the house for a little over a year now (I’ve been known to eat almost an entire GALLON in a night – hello binge!) I’m getting a bit better with that now so maybe I can start trusting myself again πŸ™‚ Ice cream is one of my all time favorite foods and life really is too short to deprive oneself!

    My knees are decked from running- so frustrating. I competed as a teenager and little kid but my knees can’t take it anymore πŸ™ I love vanilla I’ve cream with wafers or sour lollies or gummy bears ( sounds weird but it’s so good)

    mmm ice cream is the best way to end the day! πŸ™‚ I typically eat my ice cream sans toppings, but with froyo I always get mini chocolate chips. Mini chocolate chips > regular sized chocolate chips πŸ˜‰

    As for running/walking outside, I’m too paranoid to do it in the dark. I keep looking over my shoulder or think someone is going to pop out and scare me. Obvi I’ve watched too many scary movies or something…haha

    I was starting to notice how dark it was in the mornings, but once I started my new job I started working out AFTER work rather than before work so I don’t pay as much attention to it anymore. I’ve been working out in the am for so long, it is taking a while to get used to…but I think my body is liking the change. I have had savoury buckwheat but haven’t tried it in a sweet breakfast bowl, that is definitely something I think I would enjoy. I look forward to reading about why you are doing the whole walk/run thing.

      I’m thinking about switching my workouts to the afternoon as well, mostly because that’s the time the energy slump hits, so a little movement and fresh air would probably help wake me up. That and it would probably be warmer — I was literally defrosting for 45 minutes this morning.

    Wow. All I have to say πŸ˜‰ First, love how the sad face turns colors at the top. Also that’s a great idea for quinoa! I’m a big fan of adding something crunchy to my froyo – sometimes a crumble or graham cracker. Yesterday I ended with a big glob of sunflower seed butter and a swig of almond milk. So tasty!

    I hear you on working from home- the flexibility is great but makes it easier to put off! Last night I literally put the spoon in the almond butter and called it a night.

    Vanilla ice cream is by far the most underrated flavour- even though I love some of the random flavours Australia has (lamington, Anzac biscuit, pavlova) nothing beats a classic vanilla. And the fact that you mixed cinnamon toast crunch in it- genius.

    I haven’t run for ages, but the last fun run I did was during the day…so no night running.

      Vanilla will always be my favourite flavour — mostly because it’s the best base for whatever you want to toss on it. But I have to admit that mint-chocolate comes in a close second. And I saw your late night AB — impressive πŸ˜‰

    Ugh I hate how dark the mornings are now too. Most mornings I have to leave the house to drive to the hospital while it’s still dark out – it’s brutal!!

    Last night before bed I had Oikos Greek yogurt with pumpkin, cinnamon, and maple syrup. Your ice cream looks like a much better idea though. πŸ˜‰ My favourite toppings are chocolate chips, chocolate sauce, butterscotch sauce, and Oreo bits!

    The cheesy quinoa looks delicious! And I can never go that long without eggs- no bueno. And can I just say I WISH I couldn’t sleep past 530! I would probably get way more blogging stuff done. How long do you sleep per night? Less than 8 hours?

      Usually around 6. I’ve tried going to sleep earlier to try and get more, but then I just end up waking up even earlier.

    Rest days are so needed! I sort of took one yesterday but mainly because of a killer migraine that kept me from doing much of anything all afternoon. Blah!
    I love those apple chips! I buy the big bag from Costco for my son πŸ˜‰ Who am I kidding, I eat them all! So good and love that they are just apples!

    I’m pretty much a wimp when it comes to running or walking in the dark. I’ve been waiting to run until the sun comes up, which is about 7:30 here and it’s really annoying. By the time I got back from my long run the other day it was practically lunch time. Ice cream is one of my favorite ways to end the night. I like to top mine with granola, cereal, fruit or nuts.

    I just tried those bare fruit chips! I had them at the airport yesterday. I really liked them and I was surprised that there really weren’t other ingredients in there!

    That cheesy quinoa looks fantastic! Topping your ice cream with cinnamon toast crunch sounds amazing. I absolutely love having blueberries or bananas with some good ol’ vanilla ice cream. Crunchy cereals are also fabulous!
    I ended my day with dried apricots yesterday–a light, but sweet snack. πŸ™‚

    It really is sad how long it stays dark in the mornings now isn’t it! I think I am kind of looking forward to the time change. I know when it comes I will mess the daylight in the evenings though. A case of the grass is always greener? For the last month or so I have been ending my day with a nice bowl of cereal and milk. So satisfying!

      Nope, never thought of sharing because it’s just too easy! I just cooked up some quinoa the regular way and stirred in shredded cheese towards the end when all the water had been absorbed.
