Hey, hey, hey! Happy What I Ate Wednesday! :mrgreen:

I missed you guys yesterday! But after a rather manic Monday followed by a less-than-stellar Monday night (toss, turn, rinse, repeat), I woke up yesterday morning and declared it a very much needed rest day… from blogging, at least. As much as I love blogging, it has a tendency to take up a good chunk of the day, and I needed that chunk to catch up on a few other things.

Because of my wonky night, I ended up sleeping in until the glorious hour of 5:30. And yes — I very much consider that sleeping in. After brewing a cup of my favourite tea, I got to work on breakfast…

Buckwheat Breakfast Bowl

Remember how I mentioned wanting to add a little more variety to my diet? I’ve been slacking 😳 Β BUT! IΒ did manage to whip up something a little different yesterday with this buckwheat breakfast bowl. All I did was take some leftover buckwheat, add a splash of almond milk, slice up a banana, toss on some blueberries, and finish the whole thing off with a glob of almond butter. It wasn’t oatmeal, but it got the job done.

After that, it was time forΒ me to get some work done… but not before heading out for a quick walk/run first. Is anyone else upset over the fact that it takes the sun so long to rise these days? I went out a little after 7 and it was still pitch black… I came home around 8 and it was just starting to get light out. Good thing we’ll be turning the clocks back pretty soon.

I was a little chilly after my walk/run (I’ll go into a little more detail as to what exactly I’m doing in a future post), so I whipped up a homemade latte, buried it with cinnamon, and enjoyed it with the last of my chocolate chip pumpkin oatmeal cookies before settling down to a few hours of work.

Pumpkin Oatmeal Cookie

We’ll gloss over the work bit because, really, who wants to talk/hear about work? I’ve been able to start doing a lot more work from home over the past year, which has been both a blessing and a curse. A blessing because it lets me pick my own hours, but a curse because sometimes those hours end up being ridiculously early or ridiculously late, depending on how bad I’ve been slacking. But I digress — it’s lunch time!

Veggie Egg Wrap

Two eggs scrambled with veggies and stuffed inside a wrap along with some avocado. No fuss, no muss. And yes, I ran out to the store to restock my kitchen after my eggless baking debacle this weekend; and look what I found while I was there!

Apple Chips

Barefruit apple chips! After three weeks of going without, I basically inhaled the entire bag while I was out running work-related errands in the afternoon. Holy.snap are they ever good. And did you know they’ve introduced a new sea salt caramel flavour? I have a nagging feeling that it’ll be slow to show in Canada, but fingers crossed that it gets here eventually — my American food shopping list is already long enough.

… blogging, pampering, and Skyping with J, and you pretty much have my Tuesday in a nutshell. Well, I suppose thereΒ is one other little thing that’s worth mentioning…

Ice Cream and CTC

… because no day is complete without a little dessert, and this bowl of vanilla bean ice cream topped with Cinnamon Toast Crunch definitely ended things on a good note.

    Where can I find your cheesy quinoa recipe?! It looks amazing!

    I ended yesterday with a glass of Savingnon Blanc. Probably not the BEST thing to have before bed when you’re waking up for a 6:30 yoga class, but I had a wine tasting event last night.

    My favorite froyo topping is granola and fruit, although I usually leave mine bare because the froyo itself is the most exciting part for me.

    And I only run in the dark when I’m being chased!!! Haha πŸ™‚

      No recipe since it’s way too easy! All I did was cook up some quinoa and stir in shredded cheese towards the end after all the water had been absorbed.

    Mmmmmmmm, it’s been too long since I had icecream!
    5:30 is not a lie-in! Although I would probably let 6:30-6:45 count as lying in…I’m very much a morning person and if I wake up any time past that I get really annoyed with myself for wasting the day.

    Last night I ended the evening with “Thindictive” biscotti thins with a little Justin’s Chocolate Hazelnut Butter.

    My favorite ice cream/fro yo topping is something chocolatey… and I usually like to have a little fruit.

    I like running in the dark sometimes, if it’s through a city. In neighborhoods I’m afraid I’m going to be hit by cars. This morning I started my run in the dark!

    Wahooo! I now can sleep in later than 5:30 am because Selah has been sleeping through the night for about 2 weeks πŸ˜€ Yayyy! lol. And omgnesss I really want some of your latte and pumpkin oatmeal cookie, as they look delicious and so comforting. I actually love dark mornings because it makes me feel even more reflective about life than usual, so I can’t complain about the fact that it’s been slightly darker in Socal too lately–but probably nothing like what you experience! πŸ˜€

    Yesterday, I ended with some yogurt raisins. Exciting, I know.

    My favorite topping is…too hard to choose. Please don’t make me. Oreos, candy bars…nothing healthy. LOL

    I totally would run in the dark, but I don’t have anything reflective yet since I haven’t been running long enough to have run in the dark before. I need to get out there and buy some stuff like that, but I’d totally be up for it.

    I’m having a hard time not being jealous of your ability to run right now. Oof. You’re so lucky, lady! I definitely used to run at the peak morning hours but it was inside. I’m too afraid to run outside before the sun comes up considering it’s either a.) in the woods b.) on the street where I’ll most likely be hit by a car. No good.

    I had a small dinner, so last night I ended my day with a chocolate mug cake with whipped cream and Chicago Mix popcorn sprinkled on top. It was a good idea…but now I think I need to get my hands on some ice cream πŸ˜‰ And adding Cinnamon Toast Crunch on top? I knew I liked you for a reason :-p Although favourite ice cream of froyo topping has to be either M&M’s or crushed Reese’s peanut butter cups. But preferably both of those things.
    I don’t usually walk or run in the dark, because that implies that it’s cold and I’d much rather wait until it warms up a little :-p I’m a bit of a wuss with exercise in cold weather!

      You and me both! This morning was a cold one, and I’m sitting here 30 minutes later still trying to get the blood flowing to all my muscles. Ohhh Canada. And I can’t do M&M’s OR Reese’s, so I make do with what I have πŸ˜›

    Apple nachos – totally good for dinner, right? And I’m such a scared-y cat that I refuse to run in the dark. I’m afraid someone or something is going to jump out at me! With the whole winter thing coming though, I’m going to have to start walking to the train station in the dark – eek! Looks like it is time for me to become brave πŸ˜‰

    I haven’t tried buckwheat for breakfast but have added it to my list. I was on an oatmeal kick for some time, love it with coconut oil, berries and agave nectar. Have you thought about picking up an inexpensive rice cooker? You can dump in the water and rice, turn it on and walk away. I cook up a batch, cool and toss into the fridge so it’s there when I crave it.

      I think I’m going to have to do that because rice is the one grain that gives me the most trouble when it comes to cooking — I almost always burn it!

    what else, besides eggs and avocado, is in your wrap? Also, how do you make that cheesy quinoa? Everything looks great, as usual! Good for you for taking a day off from blogging. Don’t want burn out!!

      My eggs had spinach, mushrooms, bell peppers, and salt. As for the quinoa, I just added some shredded cheese after the quinoa finished cooking (while it was still warm), and stirred it all up.

    I LOVE that you topped your ice cream with cinnamon toast crunch. lol. My favorite fro-yo/ice cream topping is most definitely Heath Bar. In fact, I’ve got some pumpkin ice cream in my freezer that I think it’d be AMAZING with.

    I used to run in the dark all the time, but I’m not really much for it these days…..I just feel nervous about it. Although, running with the sun rise is pretty spectacular.

    Yesterday I ended the day with a coffee yogurt topped with oats and dark chocolate granola. It was basically a dessert it was so good.

    I would loooovvveee to work from home but my job doesn’t really work like that. I can see how it has it’s pros and cons though.

    Eeek! You are an early riser! I thought my 6 AM wake up was “early”. πŸ˜‰

    I’ve really been wanting to try buckwheat. Is it good? Don’t want to buy a bunch and then not like it, you know? But I think it’d be good to help me mix up my breakfasts a bit. I’m stuck on my love for oatmeal!

    Love the Cinnamon Toast Crunch on ice cream idea! Yummm. One of my favorite sugary cereals! I just had a mug of cookies ‘n cream ice cream topped with PB last night – delish!

      I actually like buckwheat quite a bit! It doesn’t have -too- strong of a flavour, so it soaks up whatever you add to it nicely, and it’s a nice change in texture from oatmeal. Can you buy it from bulk bins? That’d probably be a great way to try it out first to see if you like it.

    No dark adventures for me, unless I have a buddy. I’ve watched too many horror movies haha. I am so excited to read about your workouts right now, I get so giddy when others talk about running! That ice cream bowl looks PERFECT!

    Sounds like a wonderful day! We all need a blogging break sometimes and it helps a lot getting work done. Since I am working on a lot of coding-related stuff recently and do not only write blog posts it tends to feel like a fulltime job from time to time.

    And I totally feel your pain about the sun rising so terribly late. I am a morning run person and recently I had to move my runs into the afternoon, since it’s too dark outside at 6/7am. Good thing I have two great friends who like to go for a run with me, otherwise I really couldn’t make me do it in the afternoon – and we all know that we feel a lot better after getting some fresh air and sunrays.

      Actually, I’m thinking about switching my runs up to the afternoon as well — that’s when the energy slump usually tends to hit, and I always find that some fresh air and movement wakes me right up.

    Because I work in the court system with victims of crime, its made me become kind of paranoid. I don’t run/walk in the dark unless I’m with another person, but generally I prefer doing those activities in the daylight no matter what.

    I love your buckwheat breakfast bowl. I’ve actually never tried buckwheat before, but it certainly looks tasty.

    My favorite ice cream/froyo topping is definitely rainbow sprinkles!

    running in the dark kind of scares me. I mean, when I am running in the dark with my earphones, I feel that everything and everyone around me is frightening. Seriously! Every squirrel and piece of garbage is terrifying when you are out running in the dark. I try to do my outdoor workouts before the sun goes down!

    I have the option to work from home every now and then, and you’re absolutely right, it’s a blessing in most ways but it can be a curse too. I love the flexiblity but sometimes I find that the lack of structure throws me off too much. And really, my office is a five minute walk from our apartment, so I have no excuses to just go in, do my thing, and come home. πŸ™‚

    I hate how dark it is in the mornings, too! It’s so depressing to be awake for 2 hours before it even gets light. I had some froyo yesterday and topped it with oreos and strawberries. Such a good combo!

    That cheesy quinoa looks amazing. Lately, I’ve been much more into savory than sweet, so that quinoa looks way better than the ice cream. Also, it’s before 6am, and ice cream doesn’t usually sound good before the sun comes up.

    Everything looks so good! Its so nice when your working from home and able to eat when and what you choose. I know you can bring lunches to work, and I always do, but when your home you can make what you want based on what your currently craving. My favorite froyo toppings are fruit but my favorite regular ice cream toppings are cookie crumbs, grahm crackers and nuts.

    Ooh excellent call on the cinnamon toast crunch topping! One of my favorite toppings for ice cream/fro yo is crushed Oreos–> DIY cookies ‘n’ cream! And if you stir in some nut butter? HEAVEN! Your Tuesday sounds very productive- how’s J? Does he read the blog (if so, HELLO to him)! And good job on the walk/run! I am a chicken and try to only go during daylight. I was up at 6 yesterday read to go for a run but ended up waiting around for an hour till the sun came out!

    I know that curse and blessing when working from home. I am allowed to work half a day from home and it always ends up to be the evening because I used the afternoon to do other things, whoops!
    Hey, and we both cheated on oatmeal this week, with buckwheat! You’re my buckwheat twin.
    Yesterday evening I had half a mug filled with Justin’s AB, cacao powder and honey mixed. It’s like cookie dough or decadent pudding, whatever, it’s just darn delicious.
    PS. I LOVE to run in the dark!

    Starting the day with a workout just sets the tone for the day! I used to run at 4.00am and I use to be TOTALLY bugged out – TOTALLY paranoid – the slightest shadow, noise and I would be picking up my pace – which does make for a good workout πŸ™‚
    But now, I am a run when I can kinda gal!
    Trader Joe’s here in the US has this chocolate syrup called “organic chocolate moo” and I am addicted to it! It goes on fro yo, in shakes, in oatmeal!
    Last night, I was out of froyo but I was full of these 3 layer bars I made – will post recipe next week. They were gonna be breakfast, but they were just too decadent – even for me! So dessert bars they will be!

    Well, I’d say it looks like you have a variety of deliciousness in your oatmeal…. so I think that counts πŸ™‚ Totally feel ya on the break from blogging from time to time! I debated even writing up a WIAW post today, but settled down and pumped it out in 30 minutes before bed last night. My last meal was dinner – spaghetti with tomato, onion and garlic turkey meat sauce. It was pretty fabulous – and the boy cooked it. Can’t really beat that! Have a great day love!

    So weirdly I am eating an identical breakfast to yours except with leftover rice instead of buckwheat…the things we do to avoid oatmeal intolerance lol!

      Gah! Rice is the one grain I still mean to try for breakfast. The only thing is that I -hate- cooking it. If I try to do it the old fashioned way, I usually end up burning it 😑

        I have a tip- if you cook the rice in milk it dosn’t really matter if its not all absorbed as long as its tender and not too soupy, it’s much harder to burn. It’s a really nice breakfast. πŸ™‚ xo

    I hate how dark it is when I get up lately! I wait until the sun starts to rise so at least I am not running in the dark but I am totally missing my 6:00 am sunshine….I originally ended my day yesterday with popcorn and dark chocolate, but, then somehow ended a second time with an apple and peanut butter.

      The end of your day sounds like the start of mine. I started with my regular bowl of oatmeal, and started again with a banana and almond butter. I have a feeling it’s going to be one of -those- days.

    You consider – gasp! – 5.30 sleeping in?! Not like I hadn’t known about your early mornings before but I’m still feeling a twinge of guilt thinking about those days when I sleep in …Send me some of your early bird genes, please.
    My night ended with one of the last of my homemade caramel bars because, well, chocolate is the best way to end any day, right?!
    Er … yes, I run in the dark. Not purely out of choice, though, but because I’m just not good at scheduling my walks/runs and it always somehow happens to be evening before I notice. Can I blame the adaption to daylight savings [after several months still]?
