A delicious egg-free, butter-free, gluten-free, vegan chocolate chip cookie dough that gives traditional cookie dough a run for its money!

Today we’re going to spend a little bit of time talking about a few of the things I’m afraid of… or at least a few of the more lighthearted things, since no one likes talking/hearing about losing loved ones and severing limbs. Moving ON…

Snakes. I’ve made my peace with spiders after having a basement room for a couple of years (exposure therapy at its finest!), but I’m still not cool with snakes. This probably has a lot to do with the fact that we don’t have a lot of them up here in my neck of the woods, so I’ve never had a chance to ‘get to know them’… and the unfamiliarity freaks me out. So does the idea of having a snake coil up and spring for my face. Do they even do that? I have no idea — and that’s the problem!

Deep, dark water. Not because I’m afraid of drowning, but because I’m afraid of something coming up from the abyss, grabbing my legs, and pulling me under. Omigosh 😯

The back basement steps at my parents’ place. These steps don’t have any backing to them, making it super easy for whatever lurks underneath the stairs to… again… grab your feet and pull you into the abyss. You better believe that, even at the ripe age of 29, I’m still sprinting up those suckers at top speed.

Horror movies. I haven’t watched a horror movie since 2002. I know this because it was The Ring, and after not being able to sleep for something like 2 weeks following it, I swore off horror movies for good.

And if you’re wondering what on earth my fears have to do with today’s recipe, it’s because raw cookie dough makes that list too…

Or, more specifically, the raw eggs in raw cookie dough… which could potentially have salmonella, which could potentially make me sick, which would lead to me throwing up, which is another one of my biggest fears. I won’t delve into the specifics of how long it’s been since I’ve had to pay homage to the porcelain gods, but let’s just say that I’ll go to great lengths to avoid it, which means that I’ll go to great lengths to avoid eating raw cookie dough, no matter how delicious and tempting it might be.

And, yes… I know the chances of getting sick from eating cookie dough are slim-to-none and that everyone has eaten pounds and pounds of it without ever encountering any problems, but knowing my luck, I’d have one spoonful and come down with the plague. Luckily, there are ways of getting around this…

Vegan cookie dough… with a twist. See, not only is this cookie dough egg-less and butter-less, but it’s also wheat-less and refined sugar-less. What it’s not, however, is tasteless. After bringing a batch of bites with me on my last camping trip, I have it on good authority that my modified cookie dough can easily hold its own against traditional cookie dough. So there.

I credit the coconut flour for that one, which I was inspired to try adding by The Big Man himself. I’ve done coconut flour in mug cakes before, but never in bites, and it.is.fabulous. Doughy and moist, just like cookie dough should be… whether that’s in bite, bar, or spoonful form.

Vegan Chocolate Chip Cookie Dough

Ingredients

Scale
  • 1/4 cup almond butter*
  • 6 Tbsp. agave nectar**
  • 1 tsp. vanilla extract
  • 1 1/2 cup oats, ground into a flour (measure before grinding)
  • 4 Tbsp. coconut flour
  • 2–4 Tbsp. vanilla almond milk
  • 1/4 tsp. salt
  • 1/3 to 1/2 cup non-dairy chocolate chips/chunks (I like Enjoy Life)

Instructions

  1. In a small pan over medium-high heat, add the almond butter, agave, and vanilla extract, stirring until smooth and fully combined. Bring the mixture to a boil before removing from heat. Stir in oat flour and coconut flour, mixing well. Add almond milk by the tablespoon, mixing between each until desired consistency is reached. Fold in chocolate chips and mix well.
  2. If making balls, drop dough onto a parchment lined baking sheet by the heaping tablespoonful, studding the tops with more chocolate chips if desired.
  3. If making bars, line an 8×8 baking pan with aluminum foil, leaving some to hang over the edges to allow for easy removal. Drop the dough into the prepared pan, using your hands or a flat-bottomed cup to spread it out evenly and press it down firmly.
  4. Transfer to the fridge and allow to cool for at least 30 minutes until dough has set. Store in an airtight container in the fridge until ready to eat.

Notes

* You can sub this with your favourite nut butter. Use soy nut butter and soy milk to make these nut-free.
** You can sub with maple syrup or brown rice syrup; or honey if not strictly vegan.

      You could probably get by with just adding a few more spoons of oats, but then you might want to hold off on adding the almond milk since coconut flour is a lot more absorbent and you might not need it!

    I can’t how believe how addictive these are!!!! I just polished off my second batch! They are just so perfect to have in the fridge as a little treat for my sweet tooth, and I don’t feel tooooo guilty about eating one (or two) of them after dinner (or lunch). πŸ™‚ Thanks for the recipe!

    I love all things cookie dough. I added this to my favs!!! I have never gotten sick from eating cookie dough but I also haven’t done it since I was a kid and didn’t know any better. But if cookie dough is an option you better believe I’m choosing that flavor! Right now my obsession is the cookie dough quest bar!

    Oh I love coconut flout in my baked goods! I’m pretty sure I end up eating at least 2-3 servings of raw chocolate chip cookie dough anytime I make cookies. I know it’s not the best idea to eat the egg whites raw but it is just so good. Great idea doing a vegan cookie dough! I’ll have to try this the next time I have a craving, Thanks for sharing!

    While I do love classic raw cookie dough, the raw eggs in it always freak me out a bit too. Doesn’t usually stop me though. πŸ˜› This recipe looks great and I have no doubt it tastes amazing. Almond butter and chocolate together is magical.

    I don’t know if it counts as silly, but I’m scared of flying. How the heck an object weighing thousands of pounds stays up in the air totally beats me. What I hate even more though is the landing/take off. When I landed yesterday my heart was beating a million beats per minute because I was convinced we weren’t going to deccelerate and that we would crash. Lol, I’m nuts.

    Ummm besides the obvious factors: spiders, wasps, kidnappers, werewolves, math tests, leaving the closet doors open at night, hot chili peppers, and drowning…
    I have this irrational fear of looking UP while being in a really high/elevated positing. So like the opposite of ‘fear of heights’… isn’t that weird?

    And any cookie that tastes good cooked probably tastes good raw… probably… πŸ˜‰

    Oh wow those look so so good!! I’m always game for anything that has almond butter in it. Do you think if I use cacau nibs instead of choc chips I should increase the sweetness with more maple syrup (since I’m more of a maple girl)?

      It might not be a bad idea. The dough is subtly sweet as is, but it would definitely help combat a little of the bitterness of the nibs if you added a little extra sweetener πŸ™‚

    LOL, does flying count?! I really think I’m going to have to be medicated (in all seriousness) before I get on my next flight. I wish I could be more rational with myself but it’s just one of those things that terrifies me! I love the look of these cookie bites/bars/balls πŸ˜‰ They look like Quest Bars in some of the photos!

    While I share your fear of deep water, raw cookie dough has never scared me. I ate that stuff until I was sick in my pre vegan days, and even MORE so now with my vegan doughs. This looks so good, and I love the “spoonful” idea. I must try these.

    I am scared of spiders which jump and/or are absolutely huge. If I can squash them with my finger, I’m A-Okay… Otherwise, no can do. I’m afraid of clowns, too, but it’s situational. If I know who the person is or see them put on a mask, I am okay… But if I don’t know the person or it’s like a creepy carnival clown. UGH. I just cannot do it. My friend chased me around a Halloween store my senior year of high school by standing at the end of every aisle and “stalking” me. He told me he was going to the bathroom…

    This looks freaking delicious–and I don’t even like cookie dough. I never understood why people are so crazy about it…but, THIS I would eat. I’m actually tempted to make a batch and bake them–I think they would turn out great. Have you had them baked by any chance?
    Silly thing I am afraid of? Ceiling fans–sometimes I fear they are just going to fall especially if they are spinning uncontrollably fast lol

      I haven’t tried baking them, no, and I’m not sure how they would turn out, to be honest. The dough isn’t really wet enough to need an oven — I have a feeling it would just make them dry out and get kind of hard.

    I dont think so, i have not tried your recipe, but traditional cookie dough is VERY sweet, i do not have an overly sweet tooth, so Id pass πŸ™‚

      They would probably just end up way too dry and crackly. The dough isn’t wet enough to bake, and there’s nothing in it to make it rise so it would probably just harden.

    The basement stairs were my nemesis growing up, and even now I don’t love spending time in the basement especially at night. I also must have all closet doors closed at all times because something could sneak out of that abyss and grab me. After watching Poltergeist I will never see the closest the same way.
    That being said, I do love a scary movie and intend to watch some while the Hubby is gone if only to torment myself. I know, it’s weird but so am I.
