Thick and creamy with a subtly sweet vanilla flavour, this cake batter smoothie tastes like a slice of vanilla cake without the added sugars or oils.

Sorry for basically disappearing from the blog world this weekend! But sometimes a girl just needs a little time off, ya know? Especially when she’s in the mountains with a shifty internet connection. But I’m back now! Safe, sound, and sore. Not only did I manage to squeeze in a snowboarding trip this weekend, but the weather was gorgeous enough to allow me and Mom to do a fair bit of hiking while we up in the Rockies as well. Rough translation: even wiggling my toes hurts. But it was an amazing weekend and I’m seriously considering relocating from Edmonton to Banff. But I digress…

I’ll share some highlights from the trip in a few days, though, because I wanted to spend today talking about one of the things I missed most while I was gone. Can you guess what it was? Not my bed (I was too exhausted by the end of the day to care where I slept); not my kitchen (our room had one!); and not my stable internet connection (it was nice to unplug for a little while).

I missed my blender. Or, more specifically, what that blender allowed me to do…

While I refuse to fully admit to it just yet, I might have a problem — it depends on whether you see needing to get a smoothie fix on a daily basis as a problem or not. Personally, I’m inclined to err towards not, but I’ll let you decide on how sound my opinion is given my current… relationship… to the subject in question. Don’t judge me — there are worse problems to have.

I’ve told you guys before that I have a serious obsession with my thick and creamy chocolate smoothie, but when it came time to toss in the ingredients to make it, I just wasn’t feeling the chocolate. I know, I know — blasphemy — but there are just some cases where vanilla wins out over chocolate (ice cream, for example), and this was one of those cases.

Instead, what I ended up with was this beauty right here…

A vanilla cake batter smoothie… topped with whipped cream because what’s a cake without the frosting? Actually, this would probably be a bad time to admit that I prefer cake over frosting… and that sometimes I’ll actually scrape off the frosting and go for more cake instead. I know, I know — more blasphemy… Try not to judge me too harshly.

In any case, this cake batter smoothie may just become my newest obsession. It’s thick and creamy, just the way I like it, with a subtly sweet vanilla-y flavour that reminds me of vanilla cake. There’s no way I’ll every say goodbye to chocolate, but you know what they say… variety is the spice of life.

Vanilla Cake Batter Smoothie

Ingredients

Scale
  • 1 banana, frozen*
  • 1 Tbsp. coconut flour**
  • 1 Tbsp. softened coconut butter***
  • 1/2 cup vanilla almond milk (regular milk is fine too)
  • 1/2 tsp. vanilla extract
  • whipped topping (optional)
  • sprinkles (optional)

Instructions

  1. Place all ingredients except for whipped topping and sprinkles (if using) into any standard blender and blend until smooth. You may have to spend a little extra time blending to ensure that the coconut butter becomes evenly distributed and you don’t end up with small solid chunks in your smoothie.
  2. Transfer smoothie into a glass and top with whipped cream and sprinkles!

Notes

* I like to freeze my bananas when they’re just starting to sport a few brown spots — I find they add the best texture and flavour that way. Also, peel and cut your bananas before tossing them into a Ziploc bag into the freezer — it saves you the hassle of trying to get the peel off when they’re frozen.
** You can sub in a few tablespoons of oat flour instead.
*** You can sub in another nut butter like cashew or vanilla almond.

    I love all your smoothy recipes. The cake batter one sounds so yummy. I love cake batter icecream so im sure the smoothy would be just as good and even healthier. Although some of the ingredients sound like it may be hard to find.

    I will now be on the search for coconut butter so I can try this recipe. I have to say, you make some of the best smoothie recipes. =) I’m totally a vanilla over chocolate girl for ice cream. I like my chocolate in bar form.

    I can’t believe I’ve never thought to put coconut flour in my smoothies! I added some to my green smoothie this morning and it was great. This Cake Batter Smoothie is next on my list!

    Dude, VANILLA ICE CREAM. Plain vanilla ice cream is deep down, my secret favourite ice cream flavour.

    I love cake batter anything and I have some coconut flour I need to find a use for. Have you tried butter extract before? It gives things a slight cake batter flavor too! I’ll have to try this out.

    Those photos are so stunning! I am a vanilla girl through and through so I feel ya with this one. I actually have heard and tried adding cream of tartar ..just a pinch.. To my vanilla smoothies to impart a cake batter taste and I think it makes a difference ..bbbuuuttt maybe it was a placebo effect. Lemme knownif you ever try or have tried. But then again…why mess with perfection. ps. A move! You are full of surprises. Maybe that short hair cut might coincide with the relocation. New ‘do…new digs…lol

    Whenever I make smoothies, they tend to always be chocolate – but I’ve been feeling like something different lately and this looks perfect!

    I’m all about the chocolate cake, unless we’re talking about cheesecake, in which case I prefer vanilla for the base (but with chocolate still incorporated into the dessert somehow, like as a ganache!). I’m 100% on vanilla ice cream’s team though. As for cake or frosting… do you really expect me to choose? 😉

    Oh yum. This looks so good! I’m the same way about my frosting- I only like a little with my cake. Too much and I have to scrape it off. But in this case, I wouldn’t mind drinking my frosting!

    Vanilla!! Now that’s up my alley 😉 And you’re so right— as much as I like frosting, sometimes there’s just too much of it and I’d rather just go for the cake if it’s really good.

    Chocolate cake! No question about that. I love frosting, but I’m with you on the more cake part! I would much rather not have frosting and just have the cake. And weirdly I prefer vanilla ice cream with chocolate syrup!! Your smoothie recipe is super simple, so maybe if I ever get a vanilla cake craving I’ll make it!

    I’ll have to try this recipe sometime soon; it looks delicious! Vanilla cake definitely wins over chocolate (nothing beats carrot, though).
    I’m the odd person who actually prefers the frosting over the cake. literally EVERYONE I know would choose cake over frosting, which is why I’m always being offered the extra bits that no one wants.
    I don’t really like chocolate OR vanilla ice cream, to be honest, but if I have to choose, I’d agree on vanilla.

    I’m not a big cake person, but this smoothie sounds really good! I too really enjoy having a smoothie on the regular. In my opinion, your ‘obsession’ is no problem at all 🙂

    Cake flavored foods are my favorite (and I guess smoothies too).

    I like vanilla cake (or red velvet cake) and chocolate frosting. I’ve never been a fan of chocolate ice cream though…in all honesty it’s not as sweet as I want!

    Ummmm yum. I definitely think coconut butter is magic because it gives nut butter, mug cakes, etc. the flavor of vanilla cake. I don’t know how it happens but I’m not complaining! Now that I have my ninja back I need to make your smoothies ASAP. PS. I emailed you like three weeks ago, and my mail app was acting crazy, so I’m not sure if you got it or not? I just didn’t want you to think I was ignoring you!

    When I saw the first picture, I was almost convinced that this would have dairy or some sort of whey protein…which I can’t have for the next few weeks…but then I read the ingredients!!     Ok, yummmm. I too am in a total relationship with my blender/my daily smoothie, so I very much understand this love affair. And I totally agree that sometimes vanilla wins out over chocolate (key word: sometimes!!) and when it does, it is ridiculously good. And yay for unplugging for the weekend!     Girl, your photography is out of this world! I’ve never been much of a smoothie person, because I don’t really feel satisfied without the ‘chewing’ factor. But I may have to get in on this train. Come on – vanilla cake batter? Oatmeal cookie dough? I don’t think I’ll be able to resist much longer.

      I used to feel the same way about the chewing factor, but I’ve found that as long as it has the right ingredients, a smoothie can be crazy satisfying.

    When it comes to cake, as long as it’s moist and has really good frosting, then I don’t care whether it’s vanilla or chocolate. I love it all! As for ice cream, I’m totally a vanilla girl. This smoothie sounds yummy!
