s’mores truffles

These quick and easy no-bake s’mores truffles combine the delicious flavours of marshmallows, graham crackers, and chocolate into one melt-in-your-mouth bite-sized dessert! Easily adaptable to suit gluten-free and vegan diets.

I don’t mean to toot my own horn (read: I totally do), but I roast a mean marshmallow. Brown and crispy on the outside. Ooey and gooey on the inside. It’s a work of art, and one that I’ve been perfecting for years and years.

See, I was always that kid at the campfire who was in full-blown concentration mode — sitting there quietly and carefully rotating the stick just so to ensure proper heat distribution, while all the other kids went about setting their marshmallows on fire and haphazardly flinging them at each other. I’ve always had the biggest sweet tooth, and there was no way I could justify ruining a perfectly good marshmallow by burning it to a blackened crisp. No way. I wanted the silky, sticky reward of a job well done.

And when I wasn’t away at camp? I was roasting marshmallows over the gas stove at my parents’ house using a metal shish kabob skewer. Desperate times, friends. Desperate times. But what was a girl to do when she needed a fix and couldn’t go starting fires in her backyard without her neighbours calling the fire department?

I suppose I could have just eaten a regular old marshmallow straight up, but I’ve never been a big fan of the raw ones… especially after attempting the Chubby Bunny challenge with a friend on a random summer afternoon. The idea of putting an untoasted marshmallow into my mouth continues to skeeve me out to this day.

And you know what else I’ve never been a fan of? S’mores. I know, I know. I’m crazy. I’ve heard it all before. But I honestly don’t care for them very much. I like the idea of combining marshmallows, chocolate, and graham crackers, but I’m not a big fan of the execution… which is why these s’mores truffles are my idea of perfection.

They’ve got the delicious flavour trifecta of s’mores in a melt-in-your-mouth truffle that you can whip up ahead of time and grab whenever the mood strikes — no roasting required.

In fact, roasting very much discouraged. I tried using melted marshmallows in this recipe (twice) and ended up with a sticky mass that seemed to work at first blush but wasn’t all that pleasant after it set. Which actually works out better because it means one less step and a whole lot less mess.

All you need to do is toss some [mini] mallows into your food processor with the rest of the ingredients and you’re good to go — the cream cheese not only softens the marshmallows right up, but it also melds all the flavours into one irresistibly creamy ball of amazingness.

And the best part is that you can totally modify these based on your dietary preferences. Gluten-free? Use gluten-free graham crackers. Vegan? Use vegan marshmallows, cream cheese, and chocolate. With all the substitutions and alternatives out there, there’s no reason for anyone not to feel the love. Happy Valentine’s!

Ingredients

Scale
  • 1.5 cups graham cracker crumbs
  • 3.5 oz cream cheese, softened to room temperature
  • 1 heaping cup of mini marshmallows
  • 1 cup chocolate chips or chocolate chunks
  • 1 tsp. coconut oil
  • extra graham cracker crumbs for sprinkling

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Add graham crackers to the bowl of a food processor or blender and process until they become very fine crumbs. Add cream cheese and continue processing until fully combined. Finally, add marshmallows and pulse until marshmallows are broken down into small bits and evenly distributed in the dough. Dough should be moist enough to hold together when you press it with warm hands. If it’s too crumbly, add an additional spoonful of cream cheese.
  3. Using a tablespoon, scoop out dough and use your hands to shape it into 1-inch balls. Place balls onto parchment lined baking sheet and repeat until all the dough has been used up. Set in freezer to set.
  4. To prepare the chocolate coating, melt chocolate and coconut oil in the microwave or over a double broiler, stirring periodically to ensure no clumps remain. Using a toothpick, dip each ball into melted chocolate, gently tapping side of bowl to remove any excess. Place back onto parchment-lined baking sheet and immediately top with more graham cracker crumbs. Repeat until all truffles have been coated.
  5. Refrigerate for ~15 minutes, or until the chocolate has set. Store truffles in an airtight container in the fridge for up to 2 weeks, or freeze for up to 1 month.

    Those look ahhhhmmaazzzzinnnggg! Yummm! What a great combination lady! Thanks so much for the idea. I love truffles, but they are so dangerous, because then I want to eat like 10 of them, and they are calorie BOMMBBBSS, I can get away with it right now, but steve and I have committed to only one sweet thing a day….I think I could get away with 2-3 of these being my sweet for the day!

    With a post like this I think it is official that I need to ask you to be my Valentine! LOL! Holy cow do these look amazing! I LOVE S’mores…I was totally the brat that refused to char her mallow also! They are just too delicious if toasted to a golden brown perfection!

    I will most definitely have great dreams about ooey-gooey, chocolatey, camp-fire goodness. That is for sure!

    Hmm. I make a really mean…roasted broccoli? I made it for my parents one night before I moved and my mom didn’t stop talking about it for like a week. To be fair, she only ever steams hers! Also: dessert in general. I’m the dessert queen in my family.

    S’mores definitely take me back to summer family camping trips. And I am totally with you on the whole roasting thing – the perfect, golden brown mallow takes patience! With Girl Scout Cookie season in full swing in my area, I can’t help but think how amazing a s’more would be made with two Samoas instead of the graham crackers! Love your blog – have been reading and enjoying your posts for years. Thanks for inspiring me to get cooking and trying new things in the kitchen!

    I think I said this the other day when we talked about smores in my post, I always liked them but they weren’t my most favorite had to have dessert. But they are simple and delish!

    Yummmm! I love s’mores and roasted marshmallows. And I totally agree that raw marshmallows are gross. The roasted flavour totally brings out the best in them!

    I make a really mean risotto – that’s actually what I’m making tonight along with garlic butter shrimp. Mmmm.

    These are so cute! I actually hate s’mores since I once got poisoned from a fire when we were making smores over them….yah, it was bad haha and I can’t eat a s’more since then! My friend once taught me this granola recipe you can make camping and that’s by far my favorite thing to eat!

    Odd fact about me, I don’t like marshmallows unless they have been roast oven an open flame, and then preferably stuffed into a s’more. Gosh, I haven’t had s’mores in forever, and now I want one… okay ten, I want ten.

    I make a really mean dark chocolate cake. Uhm, I am pretty sure I let out a squeal when I saw these… Err, yeap. Definitely did. S’mores is one of those nostalgic things for me when we had a fireplace in my childhood home. SO MANY ROASTED MARSHMALLOWS. And for s’mores, I found putting the chocolate in the microwave on a graham cracker for 5-10 minutes and then smooshing makes a GOOD s’more. Otherwise, the chocolate is like a brick against the marshmallow.

    I talk wayyyy too much about food. LOL I could keep going and going forever.

    I really like the pops. Honestly, they are so quick, easy and simple…and delicious. Smores take me back to childhood and warmth (and we got a huge cold front) so these are calling my name right now.

    Wait these are totally perfect for me! I’d rather not have s’mores, I don’t love roasted marshmallows. I like the idea of them, and I’ll eat them if I’m by a fire and that’s all there is, but I don’t loooove them. I’d like these much more! So smart!!

    Looks absolutely delicious! I make a mean salmon and sweet potato slider – one of my first recipes and still one of my favorite! I’ve never been camping, but I’d probably just pack a ton of precooked meals and lots of homemade trailmix! 😀

    Lady – these are insane!!! Wow – so easy and yet only percolated to perfection in your brilliant brain! Thanks for sharing these!
    Btw – I couldn’t help LOL at you toasting mallows over a gas stove – once, our power went out and my daughter had a hankering for roasted marshmallows and when I refused to go out and light a fire (it was pitch dark outside and Im a scardy cat) she tried making roasted marshmallows with a candle!

    Happy Valentine’s Day indeed! These look phenomenal. I was never really into s’mores until I tried them one day in high school and totally understood the hype…sort of. Either way, I think I much prefer them in this truffle form!
