Feel good about satisfying those chocolate cravings with a flourless double chocolate chip muffin that’s gluten-free, sugar-free, dairy-free, grain-free, and oil-free, but so soft and fluffy that you’d never be able to tell.

I’m not one to say no to chocolate. Ever. Well, unless it’s paired with peanuts, but in that case it’s more an issue of self-preservation rather than choice. Pesky allergies.

If you’ve been reading Spoons for any amount of time, you’re probably well aware of my allergy to peanuts. I try not to complain about it too much, but it can be hard when you live in a [blog] world that’s obsessed with the little legumes and you’re constantly being reminded of your dietary limitations. At the end of the day, though, it’s not all that bad. I definitely still manage to eat quite well, and it helps that there are some pretty awesome allergy-friendly companies out there who are sympathetic to my situation.

When Enjoy Life reached out to me and asked if I wanted to sample their new dark chocolate morsels, my answer was pretty much a no-brainer. I’ve been a big fan of their products for years now, and… I may have mentioned that I never say no to chocolate? But neither would you if you were presented with these rich bites of dark chocolatey goodness! I started out by taste-testing them straight from the bag (naturally), before figuring that I should probably do some baking with them to see how they fared. The result of my experiments? Flourless Double Chocolate Chip Muffins.

If these muffins sound familiar, it’s because I based them off the same recipe that I used for my original flourless chocolate chip almond butter muffins, simply switching out the oats for some cocoa powder to make them extra chocolately — just in time for Valentine’s Day 😀

Like the originals, they’re gluten-free, sugar-free, dairy-free, and oil-free, but as an added bonus, they’re now grain-free as well. You can make them nut-free by replacing the almond butter with sunflower seed butter, but I’m afraid I haven’t quite figured out how to make them egg-free just yet — I’ll be sure to let you know if I ever do.

Until then, I hope you enjoy some of the softest and fluffiest muffins that I’ve ever had the pleasure of eating, whipped up in a blender in under 30 seconds just to make them that much more easier to enjoy.

Flourless Double Chocolate Chip Muffins

Ingredients

Scale
  • 1/2 cup almond butter*
  • 1 ripe medium/large banana
  • 1 egg
  • 1/4 cup honey
  • 1/4 cup unsweetened cocoa powder
  • 2 Tbsp. ground flaxseed
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/4 cup chocolate chips, plus more for sprinkling on top

Instructions

  1. Preheat oven to 375F and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside.
  2. Add all ingredients except for chocolate chips to a blender and blend on high until batter is smooth and creamy. Stir in chocolate chips by hand.
  3. Pour batter into prepared muffin pan, filling each cavity until it is about 3/4 full.
  4. Bake for 10-12 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.

Notes

* To make these nut free, simply replace the nut butter with soy nut or sunflower seed butter.

    I remember the first time you mentioned you were allergic to peanuts I was actually pretty shocked. You almost never talk about it. These do look good though. I like chocolate a lot myself so I’ll never say no to that.

    Well, add these to my [long] list of reasons why I need to invest in a new blender. The one I have now is on it’s last limb and can barely blend up a smoothie anymore. Merrrr.
    I honestly don’t know how you come up with so many amazing recipes but I’m sure glad that you do. As soon as a new, beautiful blender comes home with me, I’ll be making these. (:

    Hey Amanda. First of all, I’ve been reading your blog for years now and it’s the only vaguely “HLB” one I still keep up with because I like you, your writing, your photography, and your recipes. I have noticed that you’ve been posting more recipes that are “gluten/sugar/whatever-free” and I guess I’m just wondering why. One reason I like your blog so much is that it doesn’t subscribe to all of those bullshit fads and I have to admit that it’s a bit disappointing when you post something like this that seems to endorse them. I hope this doesn’t come across as rude or anything, as that’s really not my intention, but I would like to know your reasoning behind this.

      I have been wondering the same. I would love a post about your whole journey – and your views looking back at certain stages 🙂 (I don’t want much haha) I hope you are doing ok digestively, I thought maybe that’s why all the ‘free’recipes- so take care of yourself Amanda 🙂

      Hi Emma! To be honest, I didn’t even notice and it’s definitely not something I’ve been doing on purpose — I’ve just been enjoying experimenting with a different style of baking, especially since leaving the flour out means I don’t have to be so careful with the batter and can whip things up a lot quicker and easier. I’m not trying to endorse any fads, and if you read my WIAW’s you can see that I’m not eating either gluten or sugar free.

    The last form of chocolate I ate were a few dark chocolate chips which happened to escape from the bag while I was baking… Totally not my fault 😉

    Thankfully, I don’t have any food allergies (I’m aware of, anyway). I feel SO bad for your peanut allergy because there are SO many companies who process things in a plant which “also is used for products with peanuts”. It just stinks because it’ll be a product with absolutely NOTHING to do with peanuts, but there’s the little disclaimer at the bottom!

    Woahhh! Heavenly girl :D! And I am so excited that one of our supermarkets have started to stock legit choc-chips – not disks, or shavings that taste like crap!..can you believe all my life I have not worked with a bag of chocolate chips!? I don’t mean to give you a heart attack but it’s the truth.
    I’m sure I can sub oats or something for the flax seed?…but whatever I’ve got to make these!

    I have all of the ingredients on hand but flaxseed? This is a silly question (and I’m too lazy to Google it right now), but what are the benefits of flaxseed? Is it necessary in the recipe? Figured you’d know the answers!

      You could probably get by just fine without it, actually. I add it for a little bit of extra fibre/nutrition, but they shouldn’t make much of a difference to the muffins themselves.

    So, just a question….do you need a taste tester? I think you need a taste tester (read: this is yet another recipe of yours that I want to devour).
    As for chocolate, you know how I feel about the stuff. Last chocolate thing I ate? Chocolate chips on my pancake yesterday.
    Annnd I have a bit of chocolate chips left and everything else in this recipe, so I think these might have to happen this weekend…

    Also where did you get those dark chocolate chips? I haven’t seen the DC enjoy life anywhere. Loblaws? Bulk Barn? Help a sista out!

      Enjoy Life actually sent them to me! Other than that, I haven’t seen them in the stores around here 🙁 Just the mini chips and the bigger baking bites.

    Oh yummmmm!! The last chocolate I ate was gelato last night 🙂 One of my good friends has a peanut allergy and she is always saying how it can be tough but how by now she’s learned to adjust. I do imagine the blog world makes it a bit more tricky. Have a great weekend, Amanda!

      I like to slice mine into quarters, scoop out the seeds, rub the outside with some coconut oil, and then stick them in the oven at 410F for about 30 minutes.

    Ohhh gurl I need these now! Love that you made these in a blender. Such a quickie way to get them in the pan and in your mouth! Haha. I’m a fan of all things chocolate, and when you say double chocolate I am doubly enticed. I’ve been seeing a lot of flourless things on the web lately. I need to start experimenting with that.

      It’s definitely interesting! What I love most about flourless cooking is not having to worry about babying the dough so you don’t end up with hockey pucks.

    Oh goodness, flourless chocolate ANYTHING is always incredible to me.

    Last chocolate thing I ate: brownies at our MOPS brunch yesterday. They were gooood.

    No allergies or food intolerances, thank goodness! I will say that if I have too much milk, ice cream, or cheese, my stomach isn’t always the happiest, but I have to eat quite a bit for it to affect me.

    Chocolate bar, I eat it every afternoon with/as my snack :). It just makes me happy, so why change it?? Yum!! I love that you make all your recipe dairy and gluten free! I’m allergic to both, so it makes it nice when I don’t have to completely alter a recipe sometimes 😉

    You can sub chia “eggs” for the eggs and it works great! The recipe for a chia egg is 1 tbsp chia mixed in 3 tbsp warm water. Let it sit for a couple of minutes and add in place of the eggs. Works perfectly!

    Tasty! This is almost like the almond butter chocolate chip muffins, which I LOVED, so I’ll definitely be trying these as well!

    I have an intolerance to eggs actually, but never when they’re in baked goods or other recipes. But if I eat them on their own, I almost always regret it because I feel off the rest of the day. I substitute liquid egg whites because there ain’t no way I’m skipping out on omelets!

    Two all-star recipes in one week? Nice work, Amanda. I’d say you were doing pretty well on your resolution to post more recipes. As a semi-lazy cook I appreciate the ease of blender usage. Kudos!
    I cannot remember when I last had chocolate. Wait, strike that. I had a Bites of Bliss bar a couple of weeks ago. I don’t eat chocolate nearly as often as I should. Although I enjoy it for some reason I tend to forget about it. Maybe I’m not really human?
    I have no known allergies but I never feel quite right after consuming shellfish so I suspect I may have a minor allergy. Since I rarely eat shellfish it’s hardly much of an issue.
    Have a terrific weekend! (By the way, good thing you went to Disney last week. Yesterday, it poured. Although the rain is MUCH needed I would not have wanted it to dampen your vacation.)

      It’s great to hear that you guys got some rain! It was SO dry when I was there. And I went through a phase where I wasn’t really big on chocolate either — I think I’m making up for lost time 😆

    Yum! I made the almond butter ones, and they were wonderful. I am sure chocolate with chocolate could only be even better! The almond butter ones were a great snack to enjoy after my runs before I was able to have breakfast; while I stretched/showered. Nutritious and delicious, that is what my refueling needs, and you are able to give me recipes to do so 🙂

    I love me some chocolate muffins! I’m also loving the “whip it all up in a blender” deal. I’m lucky in that I don’t have any allergies or issues with certain foods. That means I get to eat everything!! yay! haha have a great weekend girl!

    These are way cute. I may have to make them – with the pb of course. I love chocolate chips straight up from the bag, in fact, I choose it as a dessert over other things quite often. I am all about simple and you can’t get much more simple than that….As for my allergies, I know I told you I have the Oral Allergy Syndrome which relates to the pollen I am allergic to – so, I have a birch pollen allergy which correlates to an allergy to raw apples, pears, peaches, cherries, plums, and sometimes carrots, walnuts, almonds and grapes…Aren’t you glad you asked? lol

    Yum – just plain yum! And since these ” gluten-free, sugar-free, dairy-free, grain-free, and oil-free” I could eat a double batch of 9 right? 😉
    Last form of chocolate were in chips form in my oats this morn! I am fortunate not to have any allergies – but I am really lactose intolerant – so the fact that these are dairy free means I dont have to do my own substitutions!

    I’m so happy I’m picking up my vitamix this weekend when I am home. There have been so many smoothies I want to make with it and now chocolate muffins! Chocolate muffins made super easy in a blender, genius! I’m sorry you can’t eat peanut butter but i’m sure these little gems are just as good with almond butter as you have made them!
