If I had to pick 4 foods to eat for the rest of my days, I would probably go with: almond butter, oats, bananas, and chocolate. Sure I’d miss things like yogurt, eggs, chicken, avocado, apples, kabocha, and broccoli (yes, I really would miss broccoli), but seeing as I can’t even remember the last time I went a day without eating every.single.one of the four foods I first mentioned, I think it’s safe to say that I’m kind of obsessed with them, and I’d like to take this opportunity to introduce you to the most recent love-child of that obsession…

Flourless Chocolate Chip Almond Butter Muffins — a bit of a mouthful, but a ridiculously delicious mouthful. Not only are these muffins gluten-free, sugar-free, dairy-free, and oil-free, but they may just be some of the softest and fluffiest muffins that I’ve ever eaten. You’d never be able to tell that they don’t contain an ounce of flour just by biting into one…

… and you’d be surprised to learn that they can be whipped up in a blender in under 30 seconds flat. That’s right — no flour means no need to baby the dough, and no need to baby the dough means you can just toss everything into a blender, flip the switch, and be guaranteed perfect muffins every.single.time.

The only thing easier than making these muffins is eating them, which isn’t a bad thing considering they’re made with the same wholesome ingredients that you find in a healthy breakfast. Egg, banana, oats, almond butter, and chocolate. Yes, chocolate… because what good is taking care of your body if you don’t take care of your mind? Luckily, these muffins allow you to do both πŸ˜€

Ingredients

Scale
  • 1/2 cup (128 g) almond butter (can use other nut butter as well)
  • 1 medium ripe banana (100g or 1/2 cup)
  • 1 large egg
  • 1/4 cup (80 g) honey
  • 1/2 cup (40 g) rolled oats
  • 2 Tbsp (14 g) ground flaxseed
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup (60 g) mini chocolate chips, plus more for sprinkling

Instructions

  1. Preheat your oven to 375F (190C) and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside.
  2. Add all ingredients except for chocolate chips to a high-speed blender and blend on high until the oats are broken down and the batter is smooth and creamy. Stir in chocolate chips by hand.
  3. Pour the batter into your prepared muffin pan, filling each cavity until it is about 3/4 full.
  4. Bake for 10-12 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.

    These look absolutely delicious!!! I love that they have almond butter delicious!

    I would have chocolate, sushi, cheese and red wine if that includes liquids or if I get liquids on top of food my fourth one would probably be a tie between ice cream and mangoes.

    Chocolate for breakfast = yes all the way!

    i got my hopes up…lol. saw sugar free and jumped but it actually has a lot of sugar in it. i think you meant refined sugar-free

    I agree with the chocolate 100%! I think for me it would be Sunflower seed butter though. I didn’t think it would be possible but I love that stuff more than almond butter!

    These look soo good! I’d love to give them a try. My 4 might be toast, chicken, oatmeal cookies, and seasonal fruit of choice (grapefruit/cantaloupe/cherries/apples in yearly order).. was that cheating..? πŸ™‚
    I must ask though… why no flour??

    I could definitely eat those four foods for the rest of my days. I’d never get tired of them. πŸ˜‰ I would also miss the chicken, veggies, and other fruits. I’d probably sub the banana for sweet potato, because my stomach has a hard time digesting bananas (unfortunately..) *sigh..*

    These bad boy looks amazing and I have all of the ingredients! Looks like I know what I’m whipping up in the kitchen this weekend. πŸ˜‰

    Yes to a gf muffin that doesn’t call for gf flour!!! Now I can serve these to gf friends without breaking the bank πŸ™‚ Oh my gosh, they look SO good. Muffins and quick breads are a major weakness of mine!

    I am loving all these delicious wheat-free creations you are coming up with. I am still not feeling almond butter on it’s own after overdosing, but I have a feeling it would be perfectly acceptable to my body in these muffins.

      Honestly, I have a feeling you could leave them out entirely and it would still be fine… The banana, egg, and nut butter are the main players.

    How can I convince you NOT to post a recipe for the next 4 weeks until I have a kitchen? Well a proper one, not a temporary one. I love how it doesn’t call for crazy ingredients and classic Amanda ingredients too- I swear oats and almond butter have been in all your creations..love it.

    A wise LCP once told me chocolate for breakfast is always acceptable.

    I was soooo excited to try these when I saw the pictures, but then I saw the recipe calls for banana. I’m allergic πŸ™ Any idea on what might be a possible substitute for it? These look so yummy and perfect.

      Ack! You could probably try replacing it with something like pumpkin (maybe 1/2 cup?), but you might have to add a little bit of extra honey or sugar to make things sweeter.

    Ok this has taken some serious thought! 4 foods: eggs, chocolate, carrots and coconut. That last one is kind of a cheat because it means I can have coconut oil and coconut milk AND coconut butter… right!? I’m not sure I’d get much of a muffin if I combined that lot but it may be worth a try… Pinning these bad boys!

    A breakfast with out chocolate is a sad day, haha! I go through cocoa powder like a boss!

    These muffins sound absolutely amazing! I’m still planning on making those bars of yours, and now I’ve added these muffins to the list. Good thing all this snow we’re getting in the northeast provides the perfect mood for baking!

    Only 4 foods eh? It would have to be brussels sprouts, chocolate, mangos, and sushi. But that list probably rotates, except for the chocolate. That one is non-negotiable πŸ™‚

    Can these BE any more perfect??? I think not. I might purposely let my bananas go super brown just to make these.
    My four foods for life are very similar to yours: peanut butter, bananas, greek yogurt, and bread.
    Yes, I love oats, but there is nothing better than a hot, doughy slice of bread (esp. with pb and banana) in my opinion.
    I know I’ve said this before, but…I’m not THE biggest fan of chocolate. I always feel like running away when I tell people that. I’ve been eating (and enjoying) a lot more recently than I have in the past, but I’d say nay for breakfast.

      Bread.is.amazing. You know what I’ve been loving lately? Bread with butter and honey. So simple, but so good. That might be because it reminds me of my childhood, though…

    GIVE ME THOSE MUFFINS!!!!!! Heading to the grocery store now to pick stuff up for dinner. All I’m missing is the chocolate chips for this recipe so I’m going to pick some up while I’m there! Going to try using an egg substitute…hopefully it works! πŸ™‚
