Today is a good day for two very simple reasons.

First, it’s Friday, which really needs no further explanation. Second, thanks to an awesome sale at my local health food store, I’m currently well stocked on my favourite Dagoba chocolate, which is extremely convenient seeing as I’ve been dealing with some serious chocolate cravings lately.

A few squares of chocolate or a handful of chocolate chips is usually enough to get the job done, but the other day I found myself with a pretty intense craving for chocolate cake. What’s a girl to do?!? I didn’t have the time or desire to whip up an entire chocolate cake from scratch, but my craving needed to be satisfied yesterday so I did what any chocolate-crazed person would do — I made myself a single slice of cake… in a mug.

I’m pretty new to mug cakes. In fact, the one I tried from Becky the other day was the first one I ever had. I know, I know… I’m late to the party. But in my defence, I grew up without a microwave so the idea of cooking in one is pretty foreign to me. I have a feeling that I’ll be getting a lot more familiar with it though, seeing as it allows me to enjoy things like this in under 5 minutes…

Let’s just say it killed my craving for chocolate cake. But enough about me and my cravings — let’s talk cake.

A few notes about this one. First, it took me three tries and a handful of curse words to get it just right, which means that I probably would have saved myself the time and trouble if I had just baked an entire cake from the start. Whatever — it’ll be worth it in the long run. This recipe’s a keeper.

Second, I know the recipe says that chocolate chips are optional, but they’re really not.

Third, it’s super quick and easy. You only need to dirty up one dish (and one spoon/fork) and you can enjoy  a serving of chocolate cake in under 5 minutes.

Fourth, despite the fact that I call it chocolate cake, it’s actually pretty healthy (but shhhh… don’t tell). The protein and fat from the egg and the fibre from the coconut flour make for a balanced snack that’s perfect for when that afternoon slump hits. And no crazy sugar highs or lows — I promise.

Ingredients

Scale
  • 2 Tbsp. coconut flour
  • 1 Tbsp. unsweetened cocoa powder
  • 1/4 tsp. baking powder
  • 1 Tbsp. sweetener (honey, maple syrup, cane sugar, etc.)
  • 1/4 cup of milk (any kind will do)
  • 1 egg
  • Optional: 1 heaping Tbsp. chocolate chips

Instructions

  1. Add coconut flour, cocoa powder, and baking powder to a microwave-safe mug or bowl. Stir until well combined.
  2. Add sweetener of choice and milk, stirring until no clumps remain before adding in your egg. Use a fork or whisk to beat the egg into the batter, making sure that it is fully incorporated. Fold in chocolate chips, reserving a few to sprinkle on the top.
  3. Microwave on high for 2 1/2 to 3 minutes, depending on microwave strength and thickness of mug.
  4. Remove from microwave, grab a spoon, and enjoy!

Healthy Double Chocolate Mug Cake

The texture of this mug cake is a little hard to describe. It’s dense enough to make you feel like you’re really sinking your teeth into something, yet incredibly light and moist at the same time — I credit the coconut flour for that one. I was a little hesitant to work with coconut flour since I’ve had some pretty bad flops with it in the past, but I really loved how it worked in Becky’s recipe and I wanted to use it in my own as well. It took me three tries to get the liquid to flour ratio right, but it was more than worth it.

    I’m so glad I found your blog. I’ve decided to embrace low GI and I have just ordered a bag of coconut flour on amazon. It arrived today in time to make this mug cake. It turned out really well! I need to have a look at some of your other recipes now.

    I just made this, it’s my first attempt at using coconut flour & it turned out perfectly! I added 1 extra tbsp of du chocolat drinking cocao & then only put in half a spoon of rice malt syrup & as I said it turned out to be really yummy! Thanks so much for the super easy but totally delicious recipe

    I finally summoned the courage to go out and buy coconut flour after seeing so many recipes involving it! This recipe was the first one I made using the flour and I’m SO glad I made this!! It had the perfect texture and tasted absolutely amazing. I made this for breakfast, and after popping it out of the mug, I cut the cake in half horizontally and spread some chocolate “frosting” (1/2 banana + 1 TBSP unsweetened cocoa powder + 1/8 tsp vanilla extract + drizzle of maple syrup) on the first and second layer of the cake. I topped it with more chocolate chips, and oh my goodness, it was heaven!

    CONFESSION: first time I made this, I used regular flour and it came out eggy. I didn’t like it and was sad. Today I was on a serious chocolate hunt. I finally bought coconut flour and am eating it right now. PERFECTION!! Truly an, “it was me, not you , 😀

    I never comment on blogs but I just had to… this was FANTASTIC! I have tried so many mug cakes and have always been disappointed but desperation and a newly-diagnosed wheat allergy changed my mind. SO glad I tried this! Thanks for the fantastic recipe! Oh and I ate it with cashew butter on top… yummy! 🙂

    Have you ever tried to make this mug cake with another type of flour? If so, which one? Would it work? I don’t think coconut flour agrees with me. Thanks much. It was so good, though.

      Sorry Beth, but I’ve never tried subbing out a different flour with this recipe. I do know there are mug cake recipes out there that use regular flour, though.

    although i’ve never eaten anything from a mug that comes out of a microwave, i just had to pass this recipe along to a gal i know from school. she posted a link for a mug “cookie” on her facebook wall which had some nasty ingredients in it (butter, brown sugar, white sugar, etc), so naturally i had to step in and link her up to this recipe. i think i may have raved a little bit about how awesome you are too! 😛

    Amanda; you are the best. A healthy mug cake that actually looks fudgy and indulgent (AND doesn’t call for a bunch of crazy ingredients I never have on hand)??? I can’t wait to try this! Pinned!

      I tried this today and loved it! It was the first mug cake that actually worked for me. I subbed a couple tbsps of flour and a couple tbsps of cocoa for the coconut flour, but it still worked. We loved it and will definitely use it again!
