Sometimes a girl just needs a cookie. A real cookie.

A cookie made with butter.

And sugar.

And chocolate… lots and lots of chocolate…

But that’s still loaded with plenty of texture.

Satisfy a craving for something ooey, gooey, chocolate, and sweet.

But that really needs no rhyme or reason other than “just because.“

I know, right?!

Ladies (and gentlemen?), allow me to introduce you to the solution to all of life’s little problems — also known as the double chocolate chip oatmeal cookie. The original plan was to make regular old chocolate chip oatmeal cookies (the best kind of cookies, imo), but when a chocolate craving hit and hit hard (interpret that as you will), I figured there was no harm in tossing a little cocoa into the batter dough… and maaaaaaaybe adding a few extra chocolate chips chunks for good measure…

The result is a chocolate lover’s dream.

A cookie lover’s dream.

The kind of dessert that makes people go “Ohhhhgggmaaguuuud” (true story).

But don’t take my word for it — whip up a batch of your own!

Because sometimes… everyone just needs a cookie…

Ingredients

Scale
  • 1½ cups old-fashioned rolled oats
  • 3/4 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1/2 cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • ½ tsp. vanilla extract
  • 1 cup chocolate chips or chunks

Instructions

  1. Preheat oven to 350F and line a large baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, whisk together oats, flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl using a hand-held or stand mixer, cream together butter and sugars until pale and smooth. Beat in the egg, egg yolk, and vanilla, mixing until light and fluffy — about 4 minutes.
  4. Slowly add oat mixture to wet ingredients, mixing until just combined. Do not over mix. Fold in chocolate chips.
  5. Drop dough by rounded tablespoon onto your prepared baking sheet. Bake for 10 -12 minutes, until edges begin to set.
  6. After removing from oven, allow cookies to cool on baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Store in an airtight container for up to 1 week.

    This is pretty much my ideal cookie. I LOVE oatmeal cookies, especially ones that involve chocolate and are soft on the inside and slightly crispy on the outside. These look perfect!!

    Just stop Amanda…..I can’t keep having these delicious cookie recipes a llllllll the timeeeeeee! I wish my dad lived closer, he loves oatmeal cookies, but steve doesn’t really like chocolatey things, so he would turn his nose up at these…..now I just have to convince someone else to come visit me who I can make them for 🙂

    Ooooh my gawd, Amanda….these looking amazing! Just look at the texture of those bad boys, and obvi the double dose of chocolate can only be a good thing ;)! I’ll be over in 5, armed with a cold carton of almond milk for dipping ;)! These are very few cookies which I don’t like but one that favourite that especially comes to mind are snickerdoodles…just the thought of them fresh out the oven makes my heart do a happy dance!

    I am loving on these. They are all kinds of goodness and since I love oats in my cookies (it’s a texture thing, I know you understand) and the Hubby adores chocolate, it’s the perfect mix for us. The best of both worlds.

    I saw the title and fell in love instantly. My absolute favorite kind of cookie is probably the classic chocolate chip, but I use the recipe on chocolatecoveredkatie.com because they always turn out perfect.

    To me, choosing a favorite cookie is impossible. I would always say a good chocolate chip cookies with walnuts (weird, I know), but my mind would change the minute I bit into something else lol. This weekend I am going to help my brother’s fiancé (!!!) choose a wedding dress. I am so excited and happy beyond belief she asked me to go to pick it out. It means a lot. SO excited.

    I agree… sometimes you do just need a REAL cookie 🙂 My absolute favorite are chocolate chip, that are just barely baked so they are super soft and chewy. Absolute best!!

    Yup – now my salivary glands are on overdrive – fabulous cookies Amanda – and they have oats – so that balances the other stuff off!!!

    Yum! These look delicious…but your recipes always do.
    I completely agree that sometimes you just need a real cookie. No protein cookies, or healthy cookies, but one filled with normal ingredients; especially if that’s what you’re craving.
    I think my favorite kind is just regular ol’ chocolate chip.

    Chocolate chip cookies are the one thing I am unwilling to healthify. All the recipes say “you can’t even tell the difference”, but I assure you, I can. 🙂

    It’s all about that extra yolk lol. I love how they look and I bet they taste great. We do need real cookies. The other kinds are good but they can’t possibly satisfy like a real cookie that has sugar and egg and butter (or coconut oil, I do believe butter can be subbed with coconut oil just fine). My all time favorite cookie is a classic chocolate chip.

    Those look great! Oatmeal cookies are my favourite – their texture is so much better than that of normal cookies! I’ve never tried cocoa powder in them before, interesting 😀
