These light and fluffy Blueberry Banana Greek Yogurt Pancakes are sure to keep you satisfied all morning with over 20g of whole food protein! They’re gluten-free thanks to the oats and whipped up in the blender in under 5 minutes!

Did I ever tell you about the time that I placed second in a pancake eating competition?

Yep! I sure did! Granted, I was only competing against one other person and the “competition” took place at my grandma’s kitchen table, but still! I did technically place second in a pancake eating competition, right? 😉 And I did it by eating a stack of pancakes pretty similar to this one…

Okay, okay… so I realize that a stack of eight pancakes isn’t necessarily anything to write home about, but to my scrawny 10-year old self that was basically nothing but spindly arms and legs? It was a big deal!

And for the record, the only reason I lost came in second was because I was competing against my eleven year old male cousin who apparently had a way better strategy than I did. See, he stuck to eating the pancakes on their own, whereas I was all about those sides and toppings…

But come on! How can you say no to that sweet, sweet maple syrup? You can’t! And don’t even talk to me about those sugar-free “syrups” unless you want a stank eye shot your way and an earful of why you shouldn’t be putting that crap in your body. It’s skeevy. That and I’m Canadian – it’s basically a slap in the face.

Speaking of which, did I ever tell you about the time that I did shots of maple syrup? I was young and stupid and I wouldn’t recommend it unless you like the feeling of nausea. For the most part, I’d stick to using it as intended – as a topping for pancakes…

So let’s talk about these pancakes – these light and fluffy blueberry banana Greek yogurt pancakes that have 20g of protein without any protein powder. Nothing but Greek yogurt, eggs, and oats beefin’ up these bad boys!

AND! the entire recipe is a single-serving, meaning you can eat the same stack of 8 pancakes that got me second place in my pancake eating competition all by yourself 😉 Well, maybe not the same, same… since I don’t think Grandma used oats or whipped hers up in the blender… but close enough.

The point is, you kind of need these in your life…

Pin Recipe

Ingredients

Scale
  • 1/4 cup (60 g) plain Greek yogurt
  • 1/2 medium, ripe banana (50 g or 1/4 cup [60 ml] mashed)
  • 1/2 cup (40 g) rolled oats*
  • 2 large egg whites OR 1 large egg
  • 1–2 Tbsp (15–30 ml) unsweetened almond milk**
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 cup (35 g) blueberries, fresh or frozen

Instructions

  1. Preheat a skillet over medium heat and coat it with cooking spray or oil. You want to make sure that it’s very hot before you start cooking your pancakes.
  2. Add all the ingredients except for blueberries to a blender in the order listed and blend on high until the oats are fully broken down and the batter is smooth and frothy, about 1-2 minutes. Fold in the blueberries by hand and allow batter to sit for a few minutes so that it thickens up.
  3. Pour batter straight from blender onto skillet until desired size of pancakes is reached and cook until the edges have set and bubbles begin to form on the tops of the pancakes, about 3 minutes. Using a spatula, flip and cook for another 2 minutes. Repeat until all the batter is gone, making sure to coat your skillet again with oil between each batch. Top with desired toppings and enjoy!

Notes

* make sure to use certified gluten-free oats if you need these to be gluten-free. ** start with 1 Tbsp (15 ml) of almond milk and only add a second if you feel the batter is too thick.

    Hey Amanda

Luv these. I am a cancer survivor having difficulty with getting enough protein. I was advised to eat yogurt but was never a yogurt fan. With this recipe I get protein and yogurt adds a nice tang. Delicious healthy and easy to prep
Thank you thank you so much. Now to try more recipes. I’m sending link to my nutritionist 🙂

Hi Amanda, these looked and sounded so good, I made them for breakfast today. They were everything my taste buds were looking for! I did make my own syrup with a quarter cup of blueberries, the other half of banana, a squeeze of honey and a little bit of no sugar added apple juice. Cooked it on the stove top then let it cool a little while I made the pancakes. Delicious! Thanks!

If you will ask me what is the best above, I will never hesitate to say “Sculpted Biblical Moments”. Imagine how hard to use the sand just to create images. You need more time, effort and imagination and of course, you must have the techniques how to manipulate the sand. So inspiring.

I keep hearing how the Princeton offense should only be used with players who aren’t that good. Does anyone know what makes the Princeton a bad system for NBA and the Triangle a good system for the NBA? Don’t they both similar basketball philosophies?

Thank you for this recipe, Amanda! I’ve been making pancake recipes via Pinterest all week and yours is the winner. WOOP! Have had it two days in a row now. Love that I can just throw all the ingredients in my blender too, so I make the batter at night and whip them up in the morning. SO GOOD!

Hi there! Just came across this recipe and looks and sounds amazing! Have you tried freezing them by any chance? And reheating somehow? Just wondering if I could prep a bunch of these in advance or even just to last the week! How long would they stay fresh in the fridge for do you think?
    Thanks so much!

This may seem dumb but can I use oat flour instead of grinding up oats? Thank you! I can’t wait to try!

Do you recommend thawing the berries before cooking the pancakes if the berries are frozen?

This recipe was pure garbage. I followed the recipe to a T and the batter was a goopy mess. It could barely hold together on the pan and it all went to waste. I think I’ll stick to regular old pancakes made with flour not this oat nonsense.

must be great for you to have the option, many of us cannot eat flour due to illness. No need for the rude comment. Maybe you should learn to cook or adapt.

These were great! Followed the recipe to the letter. I added a handful of whole wheat flour at the end, as the batter just seemed a little runny. So healthy and satisfying. We will definitely be making these again!

Hi, I love all of your recipes, but i’m just curious if this recipe would also work with spelt flour? or any other flour? have you tried it yet?

    Thanks for your answer!

I’m honestly not sure how these would work with other flours, Urška. I wouldn’t recommend making them in the blender since all the mixing might make them come out rubbery. I also wouldn’t use a 1/2 cup, but instead only about 3-4 tbsp of flour and mix all the ingredients by hand. I haven’t tried it myself, but I’d love to hear if you do!

I hope that by the time you read this you have had a successful journey. I know what you mean about not thinking about the time. I find that letting go of the hours allows them to slip by more easily. Travel time was never meant to be measured in minutes, anyway.

Was looking for healthy pencakes and tried this recipe. By mistake added extra egg…. But it still turned out extremely delicious, a little thinner, probably due to that extra egg. So we rolled it, dipped in the sauce and ate that way. I’ll definitely keep this recipe and keep making these pencakes. Thank you!

(Uses regular milk instead of almond milk, and old fashioned oats instead of rolled oats).

Would you know the calorie count for this recipe?

Always looking for healthy versions of almost everything. This looks great! But I always have a problem with my healthy pancakes still being too wet in the middle. I’m trying to cook them though, but then the edges get burnt. So frustrating! Maybe I have too much banana? Any thoughts?

It could definitely be too many wet ingredients. Try using a little bit less banana. Or you can also try covering your skillet with the lid to a pot to help keep the heat inside. That should help with getting the middle cooked.

They’re about the size of the palm of my hand as far as surface area goes, but they’re not as fluffy as a lot of other pancake recipes so a little batter goes a long way.

I’ve never tried it overnight, but I think it should be fine. If anything, just leave out the baking powder and add it in the morning so it doesn’t lose any potency while it sits.

Thanks for this recipe! I’ve tried making different protein pancakes and they always let me down! These were quite good. They aren’t the same as regular pancakes, but I still felt happy eating them. I always have honey greek yogurt, so I used that instead of plain. It makes them super sweet!
I tried making this recipe twice. The first time I made 3 thicker pancakes and the texture inside was a little mushy. The second time, I made 6 smaller, thinner pancakes and I found the texture a lot better!
