If you love banana bread, then you’ll LOVE this banana bread breakfast bake! Soft, doughy, and loaded with banana flavour — like a slice of banana bread without any refined sugars or oils!

I admit defeat… Remember that big banana stash I boasted about a little while back? Well, I think I bit off more than I could chew because I ended up not being able to finish those suckers off before they started turning spotty black… which is crazy because I eat a lot (read: ~3 a day) of bananas!

But I love them, and it actually makes me sad to see bananas getting such a bad rap in today’s diet and weight loss obsessed world, because they’re easily one of my favourite foods and I find that my digestion, energy, and even mood improve when I include more of them in my diet… which isn’t surprising considering all of their amazing health benefits.

What isn’t as amazing is trying to figure out what to do with a bunch of spotty black ones. Don’t get me wrong — I love my bananas extra ripe — but not to the point where they mash themselves while they’re still in the peel. Know what I mean?

Thankfully, self-mashed bananas not only save me a little bit of arm work in the kitchen, but they also happen to taste extra sweet in baked goods… which only further proves my theory that baking is the best solution to so many of life’s little problems. The only question is… what to bake? Banana breads are an obvious choice — as are muffins and mug cakes — but I wanted something a little different… something like a banana bread breakfast bake…

Say hello to what’s been my breakfast for the past 4 days. Well, the base of my breakfast, anyways — my actual breakfast looked a little more like this…

… because as good as bananas and banana breads taste, they taste even better when paired with [chocolate] almond butter. Just sayin’. I suppose you could go the peanut butter route if you had to, but don’t tell me about it because it’ll make my allergy-ridden heart all sorts of sad #teamABforlife.

As for the breakfast bake itself, there really isn’t a whole lot to say about it besides that it straight up feels like eating a slice of banana bread… a banana bread that comes together in a flash and doesn’t contain any added refined sugars or oils. It’s soft, it’s doughy, it’s banana-y, and it can easily be made gluten-free (by using GF flour), or vegan (by swapping honey for maple syrup/agave)… which means banana bread breakfast bakes for ALL. Yay!

Ingredients

Scale
  • 1/4 cup rolled oats
  • 2 Tbsp. oat bran
  • 2 Tbsp flour of choice*
  • 1/4 tsp. baking powder
  • 1/2 tsp. cinnamon
  • pinch of salt
  • 1 ripe banana, mashed (about 1/2 cup)
  • 1/4 cup vanilla almond milk
  • 1 Tbsp. honey
  • 2–3 Tbsp. add-ins of choice (chocolate chips, nuts, etc.)

Instructions

  1. Preheat oven to 375°F, and lightly spray an individual sized ramekin with cooking oil.
  2. In a medium bowl, combine oats, oat bran, flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, combine banana, almond milk, and honey.
  4. Add wet to dry and gently stir to combine. Fold in any add-ins and transfer to prepared ramekin.
  5. Bake for 25 – 30 minutes, and allow to cool before adding toppings of your choice.

Notes

* Any flour will work. Use a gluten-free flour to make this gluten-free.

    I chopped up 3 pitted dates as my add in, and used coconut flour …….. AMAZING! I didn’t even need to add anything on top 😀

    Since I get super sick from eggs, I use mashed banana as my binder for EVERYTHING. I COULD use applesauce, but the flavor and mushiness that a black banana gives is un-replaceable! Like gooey banana pancakes…oh lord help me….

    I can’t afford to eat nanners more than once a week (starving college student here) and they MUST be black for me to eat ’em. I don’t do none of that bitter yellow stuff.

    And ALMOND BUTTER ALL THE WAY! Especially straight up raw, nor roasted. Oh my, I;m salivating! Thank god it’s lunch time and that’s exactly what I packed!

    I spy a brand new, yet antique, spoon. Perhaps the same one you were gifted as a blogiversary gift from Mama Spoon?

    You know how much I love bananas so I won’t count the ways today. Suffice to say, I adore them, and I get excited when they start to turn because it means I get to bake them. My go is usually muffins though so I can share with the Hubby.

    I am team PB, but I have been working with almonds all week so I can share with a certain PB allergy ridden friend. And by all week, I mean yesterday. 😉

    Ok I think they need to change the old expression “if like gives you lemons, make lemonade” to “if life gives you mushy bananas, make banana bread breakfast bake” This looks amazing!! I wish i had some right now. I probably average a banana and a half per day 😀

    My brother loves banana bread, and it’s one of the few things he can eat with his Crohns that has fruit in it. So I always make it for him. Sacrificing delicious baked goods. I’m a nice sister.

    Ahhh I sooo love breakfast bakes… I love your pumpkin one. I’ll definitely have to try this one! Lately I’ve just been mixing up my fave oatmeal combos, throwing some baking powder in, baking them & hoping for the best, haha. Whatever works! 😉

    This looks delicious! Especially with that chocolate almond butter. We are so far behind here with our almond butter flavours we don’t have chocolate, yet, but hoping we catch up soon. I go between being team PB and team AB. I think really I am just team nut butter 😉

    Yummm, Amanda! Totally laughed out loud because ummm YES I know what you mean about bananas mashing themselves while still in the peel. Had a whole lot of that going on last week when I spontaneously went out of town and came home to lots of on-the-verge-of-being-black bananas.     All that nut butter snarking. Don’t you feel bad making many children’s best breakfast buddy cry 😉 ?? Poor little peanuts were unfortunate enough for destiny deciding to make them a more potential killer than almonds. Okay, long story short: Team Almond butter BUT I still like peanuts, too.
    One of my favourite ways to use ripe bananas is still your banana bread mug cake. Hm … I need to have one of those again soon.

    Ooh very nice Amanda! I never know what to make with ripe bananas other than smoothies and breads – this breakfast bake sounds incredible! The sliced bananas mixed in just can’t be beat … this calls for breakfast three times a day! Pinned!

    I seriously love these little breakfast bakes! Now that the weather is cooler in the mornings, I can definitely see myself making more of these on mornings that I don’t go to the gym! Although I think the chocolate chip one is still my favorite….

    These looks so good! I said these because every mug recipe at the end had me drooling. That said, I fo not metabolize bananas well and always gain weight eating too many. I have to be careful. Some people’s bodies go crazy on stretched and I’m one of them.
