Tomorrow is St. Paddy’s Day!

And I don’t know about you guys, but I plan to start drinking celebrating nice and early. I’m thinking somewhere around breakfast, and I’m thinking I’ll start by throwing back one of these colds ones…

Not what you were expecting? Sorry.

Truth be told, I’m not really much of a drinker, and I don’t even think I’ve ever really celebrated St. Patrick’s Day… at least not in the traditional sense.

BUT! I’m celebrating today [at least, #ontheblog] because I’ve been meaning to green-ify one of my overnight oatmeal smoothies for a while now, and I figured what better time to do it than on the eve of St. Paddy’s, where 5-minutes of prep work will let you start drinking bright and early tomorrow too.

I based the recipe for this creamy overnight oatmeal green smoothie off of McDonald’s infamous Shamrock Shake, only mine is made with seven ingredients instead of fifty-four.

Fifty-four ingredients. In one shake. Like… how is that even possible? Granted, it’s [only] 33 unique ones, but still! How do you cram that much crap into one 22/16/12 ounce cup?!? And how do you do it with a clear conscience when the majority of those ingredients are sugars, dyes, chemicals, and/or preservatives?! Did you know that a large Shamrock Shake contains 115g of sugar? 115!!! Cut back to a medium and you’re looking at 93g. You guys know I have a huge sweet tooth, but that sounds like insanity… even to me.

We’re not here to bash Shamrock Shakes, though… We’re here to make our own healthier version that’s just as delicious, but made with good quality whole foods and natural sugars.

We start with the basic overnight oatmeal smoothie base. This just means soaking a serving of oats (and a few add-ins) in the fridge overnight so that they can absorb the liquid and get suuuuuuuuper creamy. You guys… this step has completely revolutionized my smoothie-making process, and I’m not sure I could ever go back to drinking oat-less smoothies again. Try it out and thank me later.

Post-soaking, we take the smoothie base out of the fridge, toss in the remaining add-ins that we didn’t want to turn brown overnight, whirl it around in the blender for a handful of seconds, transfer it to a glass, toss on a few mini chocolate chips (<– MUST!!!), and dig in!

I realize that sounds like a tonne of steps when it’s all written out like that, but it literally takes all of 5 minutes to do. And the best part is that you’re left with a creamy overnight oatmeal green smoothie that’s vegan, gluten-free, packed with plenty of vitamins and minerals, and tastes pretty freaking fantastic.

I’m sure we can all drink to that.

Vanilla Mint Overnight Oatmeal Smoothie

Ingredients

Scale
  • 1/2 cup (40 g) rolled oats**
  • 3/4 cup (180 ml) unsweetened vanilla almond milk
  • 1/2 tsp vanilla extract
  • pinch of salt (optional, but recommended)
  • 1/2 cup (15 – 20 g) baby spinach***
  • 1 medium-size (100 g) ripe banana, frozen
  • 2 Tbsp (25 g) avocado (optional)
  • a few drops of mint extract****
  • 1/2 – 1 Tbsp (7 – 15 ml) sweetener, to taste (optional)

Instructions

  1. The night before, add the oats, almond milk, and vanilla to the bowl of your blender and give it a stir to ensure that everything is well combined. Cover and place in the fridge for at least 3 hours, preferably overnight.
  2. The next morning, remove your blender bowl from the fridge and add the spinach, frozen banana, and avocado (if using). Blend on high until a smooth and creamy consistency is reached, adding more milk if the smoothie is too thick for your liking. Add a few drops of mint and blend for a couple more seconds. Take a small sip and add extra mint and/or sweetener, if desired.
  3. Transfer it to a bowl or glass, add desired toppings, and enjoy!

Notes

* Cook time refers to chilling time. ** Be sure to use certified gluten-free oats if you need this to be gluten-free. You can also reduce the oats to 1/4 cup (20 g) and add a scoop of your favourite protein powder. *** Feel free to sub the spinach out for another leafy green. I like using baby spinach because of it’s mild taste. **** Start with a few drops of of mint and gradually add more to taste. Mint can get overpowering super fast, so always err on the side of caution.

    I added 1 packet of Truvia to the overnight mixture. The following morning, I added an additional Truvia packet after tasting. I did not use avocado. I loved the creaminess of the smoothie and its beautiful green color. I used very little peppermint extract because I know it can be overpowering, but if I make this again, I will probably add a little more. I think I used less than 1/8 tsp, but a full 1/8 tsp (or maybe even a bit more) would probably be fine.

    Can the mint extract be replaced with peppermint oil?

      You should be able to, Erin. But I think it’s a lot more concentrated than the extract, so I’d start with a drop or two and adjust to taste.

      I’ve never tried it personally, Jessica, but it would definitely work! I can’t say for sure how much, so I’d just add it gradually and adjust to taste.

    I pretty much live off of your overnight oatmeal smoothies these days. I had this mint one this morning, and it was so light, creamy, and refreshing! I might be my favorite so far. Thanks for the recipe!

    This will definitely beat my Shamrock Shake from yesterday! It was, like, supersaturated syrup. I had about 1/4 of it and then I just had to chuck it (I HATE wasting food, but this was ridiculous). But I still loved the vanilla mint flavor. So grateful for smoothie geniuses like you 🙂

    I love that these recipes have way more staying power that your typical frozen fruit and almond milk! I find myself almost never making them because I’m hungry 5 minutes after drinking them haha I might have to try some soaked oats next time

    Truth be told, I forget about St. Patrick's Day every year because it's just not known over here. I'm all for everything green – alcohol aside 😀 – though so maybe I'll eat an extra plate of greens tomorrow. Your smoothie looks awesome, too, though. Take a leaf from this book, McDonald's!

    This is so pretty and sounds delicious! Vanilla-mint is the perfect way to describe the Shamrock Shake flavor and this looks like a much healthier take 😀 Love it. And I drink lots of water first thing in the morning!

    Oooh – what a way to get your drank on for St. Pattys! This smoothie looks insanely wonderful – like all your smoothie concoctions and that pinch of salt maybe optional but so so necessary! The last green thing I ate were some Green Smoothie Cookies – do those count? Think I might post them tomorrow – in typical Shashi fashion – they almost missed the Green holiday! 🙂

    Ooh I might need to make this when I get home tonight! And that whole 50+ ingredient thing is insanity! Years ago, I found out that a chik fil a chicken sandwich had 85 ingredients and only one of them was chicken. I haven’t eaten fast food since haha.

    HI Amanda! Ughhh I am embarrassed to say that I’ve had this huge craving for a MC D’s Shamrock Shake. Almost got one. But I’m leaving for Florida on Friday and needed my bathing suit to still fit because I can’t afford a new one right now! Totally making this to satisfy that craving. I love how yours only has 7 ingredients….you’re scaring me with the 54 bit!! Yikes, talk about fake/phony food.

    This will be the first birthday in years where I didn’t start drinking very early, although I will say smoothies were always the base for my day followed by a great big breakfast so I could have something to absorb all the booze. Or at least help absorb all the booze.

    I’m thinking your Vanilla Mint smoothie will take the sting out of my traditional celebrating. Cheers friend.
