Y’all know I love me some dessert for breakfast!

And you all know that I have no business saying y’all since my Canadian butt is about as far removed from the South as you can get. Case in point -> I’ve never been to any of the states that make up the South (closest I came is New Mexico), and I actually had to google whether it’s spelled “y’all” or “ya’ll”… both of which are correct, according to the infinite wisdom that is Wiki. Snort.

Anyways! breakfast for dinner is the… no, wait. Not breakfast for dinner. Dessert for breakfast is the topic of the day because that’s basically what this strawberry cheesecake breakfast bake tastes like…

Despite not being a fan of cheesecake, I really, really like cream cheese.

I think a big part of it has to do with the fact that my mom used to make the most ridiculously delicious crepes, which she’d stuff with cream cheese and jam, and I’d go on to stuff in my face all nom, nom, nom style.

But because I lack crepe-making skills patience, I’ve been enjoying the sweet & tangy combo on things like toast, English muffins, rice cakes, and, more recently, breakfast bakes…

If you’re not familiar with them, my breakfast bakes are kind of like individually-sized baked oatmeals, but with some of the oats replaced with a couple spoonfuls of oat bran and flour. This give them a lighter, fluffier, and doughier texture, while still offering plenty of fiber and staying power.

The main difference with this one is that I mixed a few spoonfuls of cream cheese into the batter to give it that sweet and tangy cheesecake vibe… which works SO, so well with the strawberries.

And if you want to make this vegan? Just use a dairy-free cream cheese alternative. The same thing goes for making it gluten-free – just use a gluten-free flour. I’ve made countless variations of these bakes over the years, and while there might be subtle differences with different flours, they all turn out really well.

Ooey-gooey on the inside; slightly crisp on the outside; and loaded with sweet berry flavour. Basically dessert for breakfast.

Ingredients

Scale
  • 1/4 cup (20 g) rolled oats
  • 2 Tbsp (14 g) oat bran*
  • 2 Tbsp (15 g) flour of choice**
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/4 cup (60 ml) unsweetened almond milk
  • 2 Tbsp (30 g) cream cheese, softened***
  • 1 Tbsp (15 ml) sweetener of choice
  • 1/2 tsp vanilla extract
  • 1/4 cup (40 g) diced strawberries, fresh or frozen
  • 1 tsp of graham cracker crumbs, for topping (optional)

Instructions

  1. Preheat your oven to 350Β°F (176Β°C).
  2. In an individual sized (~16oz./500 ml) ramekin, combine the oats, oat bran, flour, baking powder, and salt. Set aside.
  3. In a small bowl or cup, combine the almond milk, cream cheese, sweetener, and vanilla, mixing until well combined. If you’re having problems with your cream cheese incorporating, nuke it in the microwave for a few seconds so that it becomes more “melty.”
  4. Add the wet ingredients to the dry ingredients, mixing until fully incorporated. Fold in the diced strawberries and sprinkle the graham cracker crumbs on top, if using.
  5. Bake for 20 minutes, until the centre has set and the bake has reached your desired consistency. Remove from the oven, add your favourite toppings, and enjoy!

Notes

* If you don’t have oat bran, use an additional 2 tbsp (10 g) of rolled oats. ** I usually use an all-purpose or whole wheat flour, but this recipe works fine with most flours, including gluten-free and grain-free ones. *** If you want to make this vegan, use a dairy-free cream cheese alternative.

    I made this for breakfast this morning and my husband and I loved it! I used almond milk and Daiya vegan cream cheese. I used maple syrup as my sweetener. It came out so yummy’ we tripped it with sliced bananas and almonds. Thank you for the recipe!

    There are several of your breakfast bakes that my kids and I love, but this is the current favorite of my middle son. Since he just helped make it for breakfast this morning, thought I should finally post a comment and let you know it is a regular on our breakfast menu and that we appreciate your great recipes – thank you! For our family with 4 kids, I just multiply most of the ingredients by 6, use a whole 8 oz brick of cream cheese, and bake in a 9″Γ—13″ glass pan. We don’t tend to have oat bran on hand, so we just use the additional rolled oats option and also use plain old 2% milk since we don’t have any dairy allergies. I like that it’s not an overly sweet breakfast, filling with all the oats, and makes everybody feel like we had a decadent breakfast.

    I grew up in the South but I still feel awkward saying y’all because I don’t really say it IRL. I mean I do if I’m being silly but I don’t really sound like I’m from the south.

    But I digress, strawberry cheesecake in breakfast form sounds like the best idea EVER. I would definitely be jumping out of bed in the morning to stuff this in my face!

    Oh yum! I don’t care if it’s 120 outside (it’s not but even if it was) I’d crank my oven on and get to baking cos strawberry chesecake for breakfast makes this al happy as pie, only this isn’t pie…but you get ma drift…
    Now I wish I had had this for breakfast instead of the granola dn yogurt I’ve been having these past few weeks…

    I could get down with dessert for breakfast. I could also get down with cream cheese that isn’t in cheesecake. This might be shocking but I don’t adore cheesecake. It’s too cloying for me, whereas cream cheese is my bestie. Come make this for me please. I have local fresh strawberries. πŸ™‚

    YES to this!! I actually really like cheesecake (and cream cheese in appropriate dishes…aka NOT sushi). I also really like your breakfast bakes so…..
    My mom hates cheesecake. “There shouldn’t be cheese in your dessert!” She makes some amazing mango with coconut sticky rice though!!

    My mom made some pretty good stuffed French toast. I liked it when it was stuffed with peanut butter and jelly instead of cream cheese. I really don’t like that actually. I don’t mind cheesecake pudding (which is vegan btw) and have added a scoop of that mix to banana ice cream to get a cheesecake ice cream.
    TBH the less it tastes like cheesecake the better. I think I would make this, but sub the jello mix for cream cheese:-)
    This morning I had waffle sandwiches for breakfast.

    cheesecake is my favorite kind of “cake”! cheesecake for breakfast sounds good to me, especially when it involves strawberries. I might even add some chocolate to this πŸ™‚

    OMG of course this looks perfect! I was also always very into cream cheese but also cheesecake! Love that this is so versatile with ingredients to make it what you want. As for my mom, I think the best (only?) thing she made was chicken cutlets and I still crave those.

    I to am a huge fan of cream cheese!! But usually on bagels or in savory dips. Breakfast today is going to be a huuuuge veggie scramble! We have a schload of produce to eat up before our 10 day vacation to Indiana…can’t let that food to go waste! πŸ™‚
