We’ve enjoyed beautiful sunny weather all week and then it decides to be cloudy and dark on the day I need to photograph a recipe. Typical. But after teasing you guys with visions of salted caramel cookie dough smoothies for a couple of days, I wasn’t about to hold off any longer — I’ll take a difficult photoshoot over the wrath of hungry readers any day 😉

That being said, I’m actually super happy that it’s cooling down. After the sprinkling of snow we got hit with a few weeks back, this past week saw us enjoying a slight heat wave which I didn’t really care for much. I mean… I want my sweater weather, dammit!

But I guess I can’t hate on the heat too much since that was what prompted me to create this freaking amazing smoothie. See, I wanted something that was cool and creamy but still comforting… meaning nothing overly fruity or fresh tasting. I thought about going the pumpkin route, but with the recent shortage and a few other recipes floating around in my head, I didn’t exactly have any pumpkin to spare. I did, however… have dates.

Fun fact: I didn’t actually have my first taste of dates until I was well into my 20’s (I grew up with raisins), and it was basically love at first bite. Not only are dates wonderfully sweet and gooey, but they also happen to taste a whole heck of a lot like caramel — hence the name of this smoothie.

Yup! This smoothie is made with dates. I apologize if you came here expecting actual caramel, but I can promise you that one sip of this healthier version will have you singing a different tune. It’s de-freaking-licious. The salt is, of course, optional, but highly recommended since it really helps bring out the sweetness of the dates.

As for the cookie dough part of the equation — again, it’s not actual cookie dough — but it is incredibly doughy thanks to the addition of raw oats. It’s also incredibly thick, creamy, and comforting. And if you’ve never tried adding oats to your smoothies, you need to change that stat because it will change.your.life. Ingredients

Scale
  • 1/4 frozen banana (2 – 3 small chunks, about 25 g)
  • 1/4 cup (20 g) rolled oats
  • 3 large or 5 small dates, pitted (around 1/4 cup, 45 g)
  • 1/3 cup (80 ml) vanilla almond milk
  • 3 – 4 frozen almond milk cubes (or ice cubes)
  • 1 tbsp (16 g) almond butter (optional)*
  • pinch of salt

Instructions

  1. Place all the ingredients into any standard blender and blend until smooth. This smoothie can be made in advance and stored in the fridge for extra thickness and creaminess!

Notes

* You can leave out the almonds and it will still taste amazing. These are just for added creaminess. Also, if you don’t have almonds on hand, a Tbsp. of almond butter will work too.

    Tried this smoothie this morning and it was SO good! First time using oats in a smoothie and I loved the way it turned out. Now to just try all your other smoothies recipes too lol!

    I have never had luck with dates in the blender. How do I make them blend smoother?

      You could try soaking them in some warm water for about 10 minutes before blending them. That should soften them up a bit. It also depends on what kind of dates you buy – some are softer and ‘meatier’ than others. But soaking should help!

    This is RIDICULOUS. Tastes too good to be healthy. I added 2 TBL of unsweetened protein powder and it’s perfect.

    OmG….I just turned this smoothie into breakfast bake! Increse the amount of milk into 3/4 cup and oat into 1/2 cup, add 1tsp chia seed, 1/4 tsp baking powder… Pre-heat oven to 350F and bake for 35 min…awesome!
