It’s no secret that I love breakfast. I’d go as far as to say that the reason I can’t seem to sleep in past 5 AM comes down to the fact that my brain can’t wait to dig in to whatever deliciousness I have planned for that day — like a little girl waking her parents up on Christmas morning. There are days where I swear the only thing that gets me out of my warm and cozy bed is the promise of a warm and cozy bowl of oatmeal; or in some cases, a warm and cozy bowl of [chocolate chip] oatmeal cookie dough…

Cookies for breakfast? You betcha! Or cookie dough, anyways, since you guys know I’m not a huge fan of scooping out individual little cookies… or having a breakfast-making process that’s overly involved… which is why I can’t do pancakes in the morning… but I digress. Back to cookies!

You know those healthier recipes that label themselves as soft serve or frosting when they have nothing to do with ice cream or butter They’re still tasty! But they’re also a pretty far stretch from the real thing. Well, this isn’t one of those recipes — this is legit, straight up, ooey, gooey, delicious cookie dough.

It also happens to be good for you. You’ve got your oats, your almonds, your apples, and your maple syrup. I mean, it’s basically like eating a bowl of oatmeal [with toppings] in a different form! And if you’re a little iffy on the chocolate, you can always sub in some raisins or nuts if you want a little added nutrition; but I firmly stand by the belief that everyone deserves to have chocolate for breakfast every now and then…

Ingredients

Scale
  • 1 Tbsp (16 g) almond butter*
  • 1/4 cup (60 ml) unsweetened applesauce
  • 2 tsp (10 ml) maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 cup (20 g) rolled oats
  • 2 Tbsp (14 g) almond meal**
  • 1 Tbsp (10 g) chocolate chips***

Instructions

  1. Preheat your oven to 350°F (176°C) and lightly spray an individual sized (~16oz./500 ml) ramekin with cooking spray or grease it with cooking oil. Set aside.
  2. In a small bowl, combine the almond butter, applesauce, maple syrup, vanilla, baking powder, and salt. Mix well until fully combined. Add the oats and almond meal, mixing until you’re left with a sticky dough. Fold in the chocolate chips.
  3. Transfer dough to your greased ramekin, topping with a few extra chocolate chips and a sprinkle of sea salt, if desired. Bake for 18-20 minutes, until the centre has set and the bake has reached your desired consistency.

Notes

* Feel free to use any nut butter you have on hand.
** If you don’t have almond meal, you can replace it with an equal amount of oat flour. To make oat flour, simply grind rolled oats in a food processor or blender until they reach a floury consistency.
*** Feel free to sub with raisins or nuts for some added nutrition.

      I’m honestly not sure since I’ve never worked with either, but I don’t see why not since you don’t have to worry so much about the cookie rising or anything. It’s definitely worth a shot!

    Hearing you talk about getting up at 5am makes me want to do an overhaul on my sleep schedule. But maybe once I’m not working until 8pm most nights. It is hard to wind down! I love mornings!

      Awwr yeah I hear ya on that front. It’s definitely a little harder to get to sleep early when you get home so late, but my body refuses to sleep in regardless… which is probably why I end up sleep deprived sometimes 😯

    You know I love my eggs for breakfast, but a certain someone (read the Hubby) just came home for the summer (insert excited squeak and jazz hands galore right here), and he does like oatmeal in the morning and he’ll eat chocolate any time of day. He’s also pretty adept in the kitchen so I’ll be sharing this recipe with him. I think he’ll love it.

    You know my thoughts on cookie dough especially for breakfast. Like the baked twist on it- I’m pretty easy with cookies- but when it’s hot, slightly under baked but with coffee- a firm one…for dunking purposes!

    this looks delicious! if i had oat or almond flour, i would be making this tonight. unless you think AP gluten-free flour may work . . . may be experimenting soon haha. chocolate has always been a favorite of mine. when i was able to eat non-gluten-free cookies, my favorite were chocolate chip cookies that are crispy on the outside, yet ooey gooey on the inside. try as i might, i cannot find that same consistency among the GF cookies. still searching though 🙂

      I’m honestly not sure how GF flour would work, but seeing as there’s no gluten in these anyways, I’d -guess- that it would be fine. If you have oats, you can make your own oat flour by grinding them in a blender or food processor.

    Ahhhhh YES PLEASE. I think we must have some sort of mental connection or something, because I was JUST planning on doing some sort of oatmeal breakfast bake. Cookie dough didn’t come to mind as a possible flavor combination though, so you win this one ;).

    This would also be perfect for when you have company and don’t want to spend time flipping eggs all morning. Just bake and eat!

    Promise not to defriend me but despite my love for chocolate, I’m going to have to pass at breakfast-time…I’m more into the fruity kind of sweetness at that time of the day. Although it’s a good thing I am ways down for brinner- can’t wait to try this out, girl! I love cookies slightly underbaked but my favorite variety would have to be straight out the freezer- the latter just tastes so darn delicious!
