It’s no secret that I love breakfast. I’d go as far as to say that the reason I can’t seem to sleep in past 5 AM comes down to the fact that my brain can’t wait to dig in to whatever deliciousness I have planned for that day — like a little girl waking her parents up on Christmas morning. There are days where I swear the only thing that gets me out of my warm and cozy bed is the promise of a warm and cozy bowl of oatmeal; or in some cases, a warm and cozy bowl of [chocolate chip] oatmeal cookie dough…

Cookies for breakfast? You betcha! Or cookie dough, anyways, since you guys know I’m not a huge fan of scooping out individual little cookies… or having a breakfast-making process that’s overly involved… which is why I can’t do pancakes in the morning… but I digress. Back to cookies!

You know those healthier recipes that label themselves as soft serve or frosting when they have nothing to do with ice cream or butter They’re still tasty! But they’re also a pretty far stretch from the real thing. Well, this isn’t one of those recipes — this is legit, straight up, ooey, gooey, delicious cookie dough.

It also happens to be good for you. You’ve got your oats, your almonds, your apples, and your maple syrup. I mean, it’s basically like eating a bowl of oatmeal [with toppings] in a different form! And if you’re a little iffy on the chocolate, you can always sub in some raisins or nuts if you want a little added nutrition; but I firmly stand by the belief that everyone deserves to have chocolate for breakfast every now and then…

Ingredients

Scale
  • 1 Tbsp (16 g) almond butter*
  • 1/4 cup (60 ml) unsweetened applesauce
  • 2 tsp (10 ml) maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 cup (20 g) rolled oats
  • 2 Tbsp (14 g) almond meal**
  • 1 Tbsp (10 g) chocolate chips***

Instructions

  1. Preheat your oven to 350°F (176°C) and lightly spray an individual sized (~16oz./500 ml) ramekin with cooking spray or grease it with cooking oil. Set aside.
  2. In a small bowl, combine the almond butter, applesauce, maple syrup, vanilla, baking powder, and salt. Mix well until fully combined. Add the oats and almond meal, mixing until you’re left with a sticky dough. Fold in the chocolate chips.
  3. Transfer dough to your greased ramekin, topping with a few extra chocolate chips and a sprinkle of sea salt, if desired. Bake for 18-20 minutes, until the centre has set and the bake has reached your desired consistency.

Notes

* Feel free to use any nut butter you have on hand.
** If you don’t have almond meal, you can replace it with an equal amount of oat flour. To make oat flour, simply grind rolled oats in a food processor or blender until they reach a floury consistency.
*** Feel free to sub with raisins or nuts for some added nutrition.

    Oh my goodness, this is like desert for breakfast. I wonder what this would be like with flaxseed? I’m going to try it this weekend. I’m with you on the oatmeal for breakfast! That and coffee is what gets me through my morning workouts!

    Considering the only flavored coffees I like have mocha in them, chocolate for breakfast is fine by me. Give me a plate of chocolate chip banana pancakes and I’m GOOD to go! And I’m definitely a huuuuuge batter eater… To the point I’ve made myself sick on multiple occasions (I’ll never learn), so I definitely love my cookies ooey-gooey and straight from the oven!

    Is this for real?! Looks/sounds sooo ridiculously delicious. Anything oats + cookie dough + chocolate chips and I am all in. And I am totally the same way as you– breakfast is the only thing that pulls me out of bed in the morning, and boy does it thrill the crap out of me when I have a heavenly bowl of overnight oats waiting for me to dig into!!!

    Underbaked and gooey is the only way to go for me when it comes to perfect cookies. Unfortunately, not everybody appreciates this and I got the “are you sure you baked them long enough??” comment before. Tssss… some people don’t know what’s good.
    “Well, this isn’t one of those recipes” <- what everybody likes to say and I usually shake my head in disbelief [I'm sure you know which kind of recipes I'm talking about] but – feel honored 😉 – I'm taking your word here. Because it really sounds amazing. We're talking almonds, honey and oats – how could it not be?!

      I definitely know what you mean… especially because I’ve been guilty of those recipes myself! And I like my cookies the same way, but I sometimes end up over baking them because I’m afraid of getting food poisoning from the egg. That’s why vegan recipes are perfection 😀

        Haha, sorry but I think it’s -so- cute every time you mention your fear of salmonella. Either my mum really didn’t warn us as children. Or we just pretended we didn’t hear her because I’m sure both me and my siblings have eaten a lot of raw cookie dough during our childhood. I promise you’ll be fine if you ever dare to try it :).

    That looks good! I don’t think that I could do the chocolate chips so early in the morning, but I’d love some apple chunks or raisins.

    Very rarely do I wake up wanting chocolate in my breakfast which is strange coming from the queen of dessert, chocolate fudge and former routine eater of cocoa pebbles for breakfast. I forgot I used to make a version of this only using banana in place of apple sauce and peanut butter in place of almond. I think I need to try this recipe especially since I have oat flour on hand to avoid my almond issue. And now I even recall that I bought the cutest ramekins for dishes like this!

    You know I LOVE my chocolate (self-proclaimed addict here!), but I have to say, I just can’t do it in the mornings. Nothing beats a bowl of hot cinnamon oatmeal with almond milk, cardamom and ginger:) I’m a bit high strung so that somehow mellows me out first thing in the day, HOWEVER- this looks INCREDIBLE for dessert, oh my gosh! Around 3-4 p.m. everyday is when my chocolate monster cravings hit, so this is perfect! Thanks for sharing:)<3 HAPPY FRIDAY<3

    You know what Amanda, I think you might have a slight chocolate/oat addiction…just saying 😉
    I think we need to start a chocolate/oat lovers club – we can start off our meetings with your skillet chocolate chip cookie, break in the middle for your oatmeal cookie dough breakfast bake and end with some of your pumpkin pie oatmeal bars…sounds good? (I imagine you are nodding your head emphatically-such a good idea right!)

    Okay now THIS is a Friday breakfast! Do you think that mashed banana would work in substitute for the unsweetened applesauce? I’ve heard sometimes you can do that in recipes…

    Oooey goooey cookies all the way. There is a place in the UK called Millies cookies and their cookies were so melty and gooey and warrrrm. Me and My Mum used to share a big bag of them after our McDonalds (wow…) in my not so healthy days…This looks like a healthy way to re live those badboys! Thankyou!
