15 easy and healthy vegetarian lunches

We need to talk. About lunch.

More specifically, about the struggle that is packing a lunch that you actually look forward to eating. Because I know we’ve all been there – standing in front of the fridge or pantry with the doors wide open, just hoping that something jumps out and dazzles us. Well, not literally jumps out at us since that would be terrifying, but you get what I’m saying. Lunch ideas – we need ’em.

But they’re so evasive! So.ridiculously.evasive that we stand there looking like a lost puppy until we realize that we were supposed to be out the door 10 minutes ago and grab whatever catches our eye first… which usually ends up being a random conglomeration (had to sneak that word in there) of snack-type things that leave us unsatisfied and wanting more. Or maybe we’ve given up on the lunch battle completely and just pack the same thing every.single.day so we don’t have to think about it.

I feel ya. I’ve definitely been there. It might not be such a big problem anymore since I’m no longer in school and work from home, but that doesn’t mean I don’t remember the days where I ate an almond butter and jelly/banana sandwich daily because I couldn’t be bothered to think up something more exciting.

But now I’m doing the thinking for you, and I’ve rounded up 15 easy and healthy vegetarian lunches that you can pack for work or school and actually look forward to eating. They’re portable, nutritious, delicious, and double as healthy dinner options too. They’re also all from other bloggers since… uhm… most of my creative energy goes towards baking, which leaves my cooking skills slightly lacking.

    Funny: so many of these sandwichs/wraps are sooo not portable and would get soggy. your muffins are much better for the grab n go.
    The salads without the dressing, or salads that marinate are ok… if youve got a gd-blessed leak proff container! #soggyassignment

    Oh how I wish my lunches looked this good every day! I usually focus so much of my energy on dinner that lunch is just whatever. Like today I had a frozen burrito with tomatoes and sweet potato chips. Yeah, I much rather have any of these! Thanks for including me, lady! <3

    These all look amazing! I am the worst with packing lunches. Unless I have good leftovers on hand, I’ll throw a frozen meal in my bag or go out to eat. Maybe this weekend I’ll get motivated enough to do some prep for the week!

    Yesss!!! Lunch is my least favorite meal to come up with! It’s so difficult lol Making lunches at night is seriously the worst but these are all such great ideas! And now I’m starving lol
