A Tuesday sounds like a good day to have cookies for breakfast. Wouldn’t you say?

I mean, every day sounds like a good day to have cookies for breakfast, but Tues-days especially. They don’t have the “go-get-em” fresh start feel of a Monday, and they’re waaaaaay too far away from the weekend to offer any comfort.

Sorry to remind you 😂 But it’s a good argument in the case for having cookies for breakfast.

Then again, I feel like these guys can probably speak for themselves…

Deep dish. Double chocolate. Breakfast cookies… which didn’t actually start out as cookies at all.

They started out as a crazy idea to bake a smoothie. Yes. Bake a smoothie. I figured that most of my oatmeal smoothies were nothing more than runny batters (ew?) anyways, so I took the ingredients for my hot chocolate breakfast smoothie, subtracted some milk, added some baking powder, and voila!

A giant… err… what the heck do I call it?!?

I’m not even going to pretend that I wasn’t seriously considering calling it a “Something, Something Baked Smoothie,” because that’s exactly where my mind went first.

But what the heck is a baked smoothie? And how much more mutually exclusive could two words get? You can’t bake a smoothie. I mean, you can, but then it’s not exactly a smoothie anymore… eh? Eh.

Thank goodness the senses kicked in as soon as I had my first bite…

Ooey. Gooey. Soft. Chewy. Just like a cookie. That’s healthy enough to eat for breakfast. Which also happens to be made with a double dose of chocolate. And in a deep dish.

Ingredients

Scale
  • 1 cup (80 g) quick oats*
  • 1/4 cup (20 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 cup (120 ml) unsweetened almond milk
  • 1 medium-size ripe banana (100 g)
  • 2 Tbsp (30 ml) maple syrup**
  • 2 Tbsp (32 g) nut/seed butter***
  • 1 tsp vanilla extract
  • 2 tbsp (20 g) vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (176°C) and lightly grease 2 individual sized (~16oz./500 ml) ramekins or oven-safe dishes with cooking spray or oil. Set aside.
  2. Add the oats, cocoa powder, and baking powder to a blender and process on high until the oats have broken down into the consistency of a fine flour, about 10 seconds.
  3. Add all of the remaining ingredients except for the chocolate chips, and process on high until the dough becomes smooth and creamy, about 20 seconds. Periodically stop and scrape down the sides of your blender, if necessary. Finally, fold in the chocolate chips by hand.
  4. Divide the dough between the two ramekins and fold in the chocolate chips. Bake for 30-35 minutes, until a toothpick inserted into the centre comes out clean. Remove from oven and allow to cool for 5-10 minutes before enjoying.

Notes

* Make sure to use certified gluten-free oats if you need these to be gluten-free. ** Feel free to sub this with any sweetener you like. Other liquid sweeteners work great, as do regular sugars. *** You can use any nut-butter you have on hand, or use a seed or soy nut butter to make this nut-free. In this case, you also need to replace the almond milk with another type of non-dairy milk.

      I think that would be fine! The texture might be -slightly- different, but I don’t think it should be anything too noticeable.

    I had a super random breakfast but very tasty of poached eggs and left over veggie curry and sauerkraut – breakfast of champions!!! But love anything chocolate – cookie- breakfast related so YUM! And just read you news – congrats lovely!!!

    Yummmm these look delicious! Perfect for those days where you just need a lot of chocolate! Tuesdays are often my least favorite day. There’s still so much of the week ahead and sometimes they feel like a repeat of Monday.

    I made these just now! I forgot the banana (it’s that kinda morning I guess 🙈) and I was so worried it would lose its cakiness. Nope! It’s sort of between fudgy brownie and cake, and without the sweetness of the banana it has a rich “dark chocolate” taste. Mm… Anyway, nice job knocking it out of the park again, Amanda.

      Man these cookies would make any morning better- just thinking about them already makes me feel warm & fuzzy! Given how warm the temperatures in Mumbai have gotten, yogurt bowls have been my go-to breakfast recently. Today’s bowl rocked some Greek yogurt, raw oats, muesli, peanut butter, cubed apple & of course cinnamon. Seriously though, it just never gets old!

    Mmm these looks great Amanda! What a great idea to use the smoothie batter – this is defintiely more my kind of way to eat those ingredients 🙂
    Least favourite day of the week is Wednesday. I don’t know why but I always feel tired on a Wednesday!
    And brekkie today was gf toast and jam, eggs and asparagus! Making the most of that asparagus before autumn kicks in and it’s gone!

    You know what I first thought of when I saw this picture? Vita muffins! I never had one, but yours looks like a much healthier. Always a fan of chocolate for breakfast. It’s a life goal of mine to try and include it where ever feasible.

    I don’t think I have a lease favorite day, because my days off change so each week is different. I think my favorite day to wake up is any day I have off =P This morning I made a microwave banana bread and topped it with peanut butter. Ripe bananas=yummy breakfasts!

    Dang! I sat down to eat my breakfast and read blogs this morning and opened this…whhhaaatt?? How could I have already made my breakfast?? This looks like my favorite everything personified (<- just realized that's kind of weird to say about an inanimate object…), which I guess is just yet another way of saying that I like ooey-gooey super-duper chocolate things. 😂 But I really, really need to try this and pronto. What do you think…seems to me it'd make for a perfect dessert. 😋 And if that doesn't work out, there's always breakfast tomorrow. 😍

    WOOOOOOAH BABY!!! These remind of the deep dish, half-baked pizzookies that I used to get when I visited my aunt in Arizona SO GOOD Except these maaaaay be better since they are DOUBLE chocolate. LOVE.

    Honestly? I had the exact same thought about Tuesday earlier today. Wednesday? Meh. Thursday? Yes. Friday? YES!
    A baked smoothie?! You’re a genius. Why start from 0 when you have a stock of great recipe bases in your repertoire? Which means we can expect many more baked smoothies/deep dish cookies, right :)?! One for every day of the week. Mmmh. I could become a smoothie fan this way.

    Somehow it doesn’t surprise me that you thought to bake a smoothie, lol! But I do think it was a fantastic idea because this looks like the breakfast cookie of my dreams. Soft and chewy with lots of chocolate? I can’t think of a more delicious way to start a Tuesday. 😉

    Scrump-diddly-umptious is the only way to describe these…I’ve been eating chocolate cake for breakfast, literally, since I’m experimenting with a GF chocolate cherry cake recipe. Maybe breakfast cookie will assuage the jealous looks of my coworkers…or not 🙂

    OMG, you are talking my tune and I must make these! And I only have one banana left, which I had planned to eat after my run today, except now I think I must save it for these, because the bananas I will be buying are unlikely to be ripe.

    Deep dish, cookie, and breakfast. Those three words caught me and now I’m not letting go! Mmm! Chocolate cookies for breakfast. I mean, what gets better! I’m eating protein pancakes which are delicious 🙂 My least favorite day of the week is probably Tuesday. Not much happens and I work so not the best day hahah

    I love the idea of a deep dish cookie! You are breaking ground here. Especially since it’s double chocolate and a breakfast cookie. And I was just talking about Tuesdays last week I think. Definitely my least favorite day and it seems like something stressful always comes up. Chocolate helps!
