Please tell me you aren’t sick of gingerbread yet… because I have one more sweet and spicy recipe to share with you guys before Christmas (2 more days!!!), and while I briefly considered playing around with another one of the fabulous Christmas flavour combinations out there (chocolate orange was a big contender), I always seem to get hit with a huge molasses addiction around this time of the year, so I’m not even going to bother trying to fight it #SorryImNotSorry.

I have a feeling you’ll forgive me, though…

Do you have a go-to Christmas morning breakfast tradition? I know that cinnamon buns are a big one for a lot of people, but it’s always been pancakes at my house. Buttermilk pancakes topped with a sprinkle of icing sugar. Or maple syrup because #IAmCanadian.

I seriously love pancakes, but the whole flipping process has always stressed me out so Christmas morning breakfast was usually Mom’s job. And man oh man did she do some quality work. To this day, I have yet to find pancakes that I like more than hers, and even though she’s tried to teach me the ropes a few times, I’ve never quite been able to make pancakes like her. 

So I put my own spin on things… literally.

Pancakes in Blendtec

You guys know I adore my Blendtec Designer 725. I rely on it so much, that it even managed to snag a permanent place on my kitchen counter… which is saying a lot for someone who doesn’t like her counter space being cluttered. But I was getting tired of constantly taking it in and out of my cupboards seeing as I use it for everything from smoothies, to muffins, to pancakes.

Yup. Pancakes. Chocolate Chip Gingerbread Greek Yogurt Pancakes, in this case.

I die.

They’re light. They’re fluffy. They’re sweet. They’re spicy. They’re basically everything I look for in pancakes. They’re also incredibly healthy, with a good dose of protein from the Greek yogurt and egg whites, fibre from the oats, and chocolate for the antioxidants πŸ˜‰

And if that wasn’t enough, they’re crazy easy to whip up. No messy bowls and no hand mixing… just a few seconds in the blender to make the batter, and then straight onto the skillet. Foolproof and delicious — what more could you ask for during the craziness of the holidays?

Ingredients

Scale
  • ΒΌ cup plain Greek yogurt
  • Β½ cup rolled oats
  • Β½ tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 ripe banana
  • 2–3 tsp. molasses
  • 2 egg whites

Instructions

  1. Preheat a skillet over medium heat and coat it with cooking spray or oil. You want to make sure that it’s very hot before you start cooking your pancakes.
  2. Add ingredients to a blender in the order listed and blend until oats are broken down and batter is smooth. Allow batter to sit for a few minutes so that it thickens up.
  3. Pour batter straight from blender onto skillet until desired size of pancakes is reached. Sprinkle a few chocolate chips on top and cook until the edges have set and bubbles begin to form on the tops of the pancakes, about 3 minutes. Using a spatula, flip and cook for another 2 minutes. Repeat until all the batter is gone, making sure to coat your skillet again with oil between each batch.
  4. Remove from heat and serve with your favourite toppings.

Notes

* Recipe makes 1 serving of 6 palm-sized pancakes. You can easily double of triple it to make more.

    I still remember the day I finally bit the bullet and gave the blender a permanent place on the counters. It was a big deal, and it only happened because the Hubby nagged me about it for months and months. I finally agreed to “try it” for a week to see if I liked it. It’s never gone back in the cabinet. Who says people can’t change. πŸ˜‰

    You know I’m right there with you on the gingerbread obsession!

    We never do pancakes or waffles on Christmas morning because they’re too labour intensive – instead we do a strata or overnight French toast that we can make the night before and just pop in the oven in the morning. But I’m definitely pinning these to make soon!

    My family has a huge brunch on Christmas day so it’s a mix of breakfast and lunch stuff. No pancakes thought, which I think I’m going to have to change this year, because these look ah-ma-zing. Definitely gonna try to figure out a dairy-free version of these ASAP πŸ˜€

    Trust you to make me want something which I otherwise would not pick for myself! I’m not too big on the gingerbread flavour overall yet I have just bookmarked this recipe to try out within the next few days…these look SO good! My only complaint is that you didn’t post this recipe last month- my sister was in town and given her love for gingerbread lattes, I know she would have been all over this. Sending her this recipe nonetheless :)!

    I tend to like almost anything that comes out of my mom’s kitchen but particularly her cakes- between her carrot, apple cinnamon & banana cake I just can’t choose a favourite!!

    These look delicious! I’m not head over heels for gingerbread, but I’m going to have to consider it for these. Also, I’m getting a Ninja for Christmas! I mean I might be. Have to wait on Santa. Pretty exciting that it might be able to whip up some pancakes along with all my smoothies.

    Aaaare you serious with this combo? Literally all of my favorite things rolled into one. And yes, we have yummy breakfast Christmas traditions in our house! My mom’s famous scrambled eggs, English muffins and chicken apple sausage. I will be participating this year for the first time in many… sounds a bit more appetizing than last year’s coconut yogurt and berries. πŸ˜‰ xox merry almost christmas!!

    I don’t think we ever had a specific Christmas morning tradition! My mom and my brother aren’t a fan of pancakes (I know, I don’t get it either) so we usually had some varation of eggs and bacon. A few years we did Eggs Benedict, which I think was always my favourite.

    As for favourite foods my mom makes – beef stroganoff, pepper steak…pretty much anything hearty and comforting. now I’m really excited for April when I get to eat my mom’s cooking again…

    We actually don’t have a breakfast tradition for Christmas but after seeing these, I’m ready for it to be pancakes!! I’ve actually never tried the gingerbread and chocolate combo but it sounds amazing.

    I’ve never thought to mix pancakes in a blender. Do you know if it affects their texture at all? These ones look incredible. I love gingerbread erraythang, and that syrup drizzle shot? Perf!

    Totally not sick of gingerbread yet! I think it might be because I finally decided to go buy molasses and ground ginger to make some homemade gingerbread goods this year, so now I’m too excited to make alllll the gingerbread!
    I never had a traditional Christmas breakfast, but pancakes sound like a good tradition to start πŸ˜‰

    to be honest, I don’t think we even have a Christmas breakfast tradition. Just a long, cozy breakfast /brunch together, but not a specific dish that we eat every year. Not sure what this year will be like. I’m not planning on making breakfast because I’m already in charge of dinner on Christmas Eve and 25th. So I’m booked out πŸ˜‰ my father sometimes makes nice breakfasts with nice cheese and meat platters, buns, boiled eggs etc.

    YUMMM!! Not sick of gingerbread at all, its amazing. I love pancakes like this. I can’t even eat regular pancakes anymore because they just taste like flour and nothing else. I like hearty protein filled pancakes. Great recipe.

    My family doesn’t really have an x-mss morning breakfast tradition. We usually party pretty hard on christmas eve, so most of us are just trying to find the closest headache medicine and strong coffee.
    My mom makes the BEST sweet potato casserole! It slow cooks all day and has pineapple and coconut in it!

    Nope – am not tired of gingerbread because I haven’t started my consumption of it yet! Crazy right?! I think you should send me some of these beauts for me to start! πŸ˜‰
    Christmas morning I am usually cooking for our big lunch and my daughter and any family I might have staying with me are always trying to sneak eats before they are ready: “the end of that yule log looks weird, let me chop it off for you” – then “the yule log isn’t even – let me take the other side off for you” and on it goes…. we usually have something light for breakfast – but am thinking I need to rethink that strategy that way they will leave my yule log alone!!! πŸ™‚
    My mom makes the best “cutlets” ever – they are a fried potato and chicken/fish/beef ball with spices.

    I absolutely LOVE greek yogurt (or for me quark) in pancakes. It definitely is the fluffy secret!!
    Since we don’t celebrate christmas morning, thesre is no real tradition here, but usually when we meet at Mum’s for any breakfast, she bakes a ginormous loaf of sweet butter bread.

    I did not grow up with a traditional Christmas breakfast. I know a lot of people have favorites but we really never had the same thing. As I got older, we would enjoy coffee and then we weuld have a frittata or pancakes.
