Today was a rainy day…

… the I’ve-already-lost-track-of-how-many-days-it’s-been rainy day in a row.

When I was little, a rainy day meant a day spent inside driving my mom crazy playing with coloring books, puzzles, and Legos. God I really miss Legos… These days, I’m still known for whipping out the Crayolas when the mood strikes, but my rainy days have shifted away from playful and moved towards productive. I clean. I cook. I bake. I clean some more. And I’ve gotta say that after a week and a half of miserable weather, my house has never been cleaner, nor smelled better… especially after this morning…

I woke up on this murky Monday with an inexplicable craving for some freshly baked goodies. Well, okay, that’s not entirely true – I woke up with the usual craving for hot coffee and oats…

… which I promise are buried under that hot mess of almond butter and pudding…

Once that was taken care of, and my belly and caffeine addiction were fully satisfied, I was free to address the all important question – what do I feel like baking today? Well that was an easy one. Cookies. Warm and chewy oatmeal raisin cookies sounded perfect. Then again, so did spiced coconut muffins…

Cookies always hit the spot, though…

But so do muffins…

Err… damn.

Half an hour and several coin tosses later, and I was no closer to an answer than when I started. Indecisive much? Yes… err no. Wait, maybe? I’ll get back to you on that one…

In any case, because I couldn’t decide between the two, I did what any reasonable person would do and decided to go with both. Problem solved. But because I didn’t wanna clean up twice the mess, I did what any lazy person would do and decided to combine two recipes that only existed in my head into one recipe that might have been better off only existing in my head… I decided to make muffies.

Cookies + Muffins = Muffies

Could it be done? Only time would tell…

Dun, dun, dun.

Alright, alright. I’ll cut the drama and just tell you… Yes it can be done, yes it is delicious, and yes I’ve already eaten three. Oh wait; that last one was supposed to be kept a secret. Damn.

The recipe, however, was meant to be shared. Enjoy!

. caramel coconut raisin muffies .

Ingredients (makes 10 muffies)

  • ¾ + 2 Tbsp. spelt flour
  • ½ cup quick oats
  • ¼ cup unrefined sugar
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ cup raisins
  • 2 Tbsp. shredded coconut
  • 1 pot (½ cup) caramel pudding (I use Belsoy) – (inspiration from Emma!)
  • ¼ cup vanilla almond milk
  • 1 Tbsp. melted coconut oil
  • 1 tsp. vanilla extract

Instructions

1. Preheat your oven to 350ºF, and line a cookie sheet with parchment paper.

2. In a large bowl, combine all the dry ingredients. Mix well until fully combined and set aside.

3. In a separate bowl, combine pudding, milk, and vanilla. Melt the coconut oil in a microwave or toaster oven and an oven safe dish. Add the melted oil to the pudding mixture and stir until fully incorporated.

4. Add the wet ingredients to the dry ingredients, and stir gently. Do not overmix.

5. Spoon dough onto the cookie sheet as you would if you were making cookies. Use a heaping tablespoon of dough for each muffie, and flatten slightly.

6. Bake for 12 minutes. Remove from oven and transfer to a wire rack to cool.

I’m not usually one to toot my own horn, but these. were. dee. vine. Shaped like cookies with the spongier consistency of a muffin top – it was the best of both worlds. And the perfect blend of flavors to boot.

What toys did you play with as a child? I was never one to play with dolls – actually, I don’t think I’ve ever even owned a Barbie… Some of my favorite toys were puzzles, board games, teddies, Lego, Hot Wheels, Play-doh, Playmobil, My Littelest Petshop, My Little Pony… Ahh, good times…

    Cookies or muffins? That’s waaaay too hard for me. I love them both so much. It’s like picking a favorite child. Those are my two fav desserts, so I guess it just depends on what type (ie: choc chip? blueberry? soft and gooey?)

    Unless we’re talking about really amazing, fresh-out-of-the-oven cookies.

    And my favorite toys were Legos, my Gameboy, and N64! I was obsessed with Pokemon, the Legend of Zelda (Ocarina of Time), and Super Mario 64. And Mario Kart. And Super Smash Bros. I can still kick anyone’s butt at SSB, as long as I play Kirby 🙂 Nerd alert!!

      !! To this day, Ocarina of Time is one of my favorite games. I still keep my N64 hooked up just so I can play it once in a while 😀

    It’s been so rainy here too and it put me in a baking mood as well. The muffies look awesome! I prefer muffins.. especially pumpkin ones!

    My favorite toys were Polly Pockets, Popples, and my creepy crawler maker. Haha!

I’ll get back to you on that one…” <- Omg, that is totally me! You should see me when I'm shopping! I usually give up and buy both…well, unless it's a really expensive item…then I usually tend to go with the more expensive one. Why? Why do I do that? Haha

    LOVE these! I thought from the very beginning that they looked just like little muffin tops! And with the aforementioned indecisiveness, I'm sure you can imagine how much this recipe will improve my quality of life…er, decision making! 😉

    I just got caught up on your last 5 posts (ugh, bad bloggy friend…BAD!) Girl, you almost had me to tears with your story on your recovery. I've never been diagnosed with an ED, but I can relate to a LOT of what you said and why you'd NEVER want to go back to that life! Love you!

    Definitely cookies. As much as I love muffins, I just can’t resist a crunchy cookie. If it is filled with nuts, it will be the perfect ten. Mmm…

    And I am on the same boat as you regarding the rain. Almost literally, I’m not a rainy season girl but the rain doesn’t really care whether I like it or not. It’s been raining almost everyday for weeks and sometimes it doesn’t stop at all for days in a row. I wish I could just stay at home and play with whatever I have on hand or clean my room a million times but unfortunately I have to swallow my pride, dress like an idiot and go to the university. At least it’s warm here but drowning in my own sweat under the raincoat isn’t my idea of a good start of the day. So let’s hope the rain ends soon for both of us.

    *dies* These. look. amazing. I’m sooo going to have to make these. I’m lovin’ my caramel pudding again thanks to you!! I tried to make muffins with them yesterday but you can’t really taste the caramel in them, think I need to add more next time..
    You know how much I love my sweet baked stuff 🙂 I’d probably say that maybe muffins steal my heart a little more than cookies but it’s so so close. They are both the love of my life. Apart from Puffins..
    Ahh I SO miss being a kid and playing with silly little toys that could keep you amused for hours! Life was so simple…I had one Barbie but I preferred Polly Pocket, Lego, Hot Wheels, Play-Doh and OOHH MY TAMOGOTCHI <3 Oh they were exciting times..

    YUM! these look delicious. I am in love
    I love raisins they’re like my go to food when I’m hungry.. well raisins and peanuts. I could eat them mindlessly for hours and hours.
    I’m always indecisive about cookies and muffins. I usually prefer to make muffins because I believe they’re less temperamental than cookies.

      Raisins aren’t safe around me! I’m always dipping my hand into the tub randomly throughout the day, then I wonder where they all went 😉

    Hi Amanda, just discovered your blog, loving it! Those muffies sound perfect! I love both muffins and cookies, I guess it depends what mood I’m in but muffins usually win out, especially crumbled on top of hot oats or with yoghurt and fruit compote, so good!

    Ohmygosh those look AMAZING!!! I am a cookie AND a muffin girl, and that mix of flavors is the best EVER!! o have been baking like craaaazy with all the rain we have, and there are so many baked goods in my cupboards now! Maybe some muffies will have to join them 😉

    Yu-hum! These looks amazing Amanda!! So thick! And Emmas idea off putting pudding in pancakes is a great idea. I have a feeling it makes everything so moist. MmM! 🙂
    I had a huge imagination when I was youger, and could play with anything. I loved Legos and played with my brothers all the time. I also played with Barbie, dolls, my teddy bears and Pokemon, haha.

    Nice recipe! I love kitchen experiments on rainy days, and we have had a lot of these lately!
    I like muffins, but I think I am more of a cookies girl, especially oatmeal cookies and gingenrbread cookies!
    As a child I loved crayons, coloring books, puzzles and my teddy bear:)

    Oh my lord. this looks awesome.
    If I didn’t have so many chocolate that needs to be eaten, I would make myself this. Oh well, bookmarking and waiting for the moment 🙂
    As a little girl, I prefered to play with guns :)) I pretended I was a cop or something like that. And with legos with my sister, she’s an architect so she couldn’t stay away from constructing homes, even when she was just a kid 🙂

    How can you ask such a question?! I guess it depends on my mood. Right now a muffin sounds better, but that could change by tomorrow. Also, muffies is the cutest baked good name ever. But it ties with brookies. I loved Duplos, Polly Pocket and I had wayyyy too many Barbies.

    muffies sound super good! I played with the most random stuff when I was little, like flowers and jars and leaves – goodness I was odd. I also loved playing dress up more then playing with toys, but I did enjoy legos, building blocks, hot wheels, and pogo sticks along with “skip its” were my absolute favorites…. oh too be young again 🙂 ohh and I can’t forget old school game boys and tamagotchis, ob.sessed.

      Lol I still remember the original Game Boy… the one with the greenish/gray screen that you couldn’t play in the dark because you wouldn’t be able to see 😆 And Tamagotchis were amazing!

    What an awesome recipe! I’m surprised at the amount of people that are productive on rainy days! Personally, I just sit around doing nothing or go to the shops with my Dad. Then again, I’ve never been one to clean 😛

    It used to be muffins but now it’s cookies. Real cookies. Made with butter and chocolate chips. YUM!

    As a kid I used to always play on my playstation or with barbies. Or I would play board games or I’d make a tent with my brothers. What used to really bug my Dad was when my brothers and I were so bored that we’d play ball games inside. He especially hated when we played “war”. I think you can guess why 😉

    holy crap these look yummy. i wanna find some caramel soy pudding!!!!

    i like DENSE baked goods, so a really dense chewy cookie is amazing, either carrot oatmeal or double chocolate fudge =)

    Wow these look amazing, your muffies look like the perfect blend between fluffy and chewy. It’s really weird, but I don’t have any recollection of playing with toys when I was a kid. I’m remember riding bikes, and playing school with my younger sister but that’s pretty much it 🙂

    Oh my goodness so Barbies? Wow I had so many!!! You’re lucky just to have rain at all – I live in Austin, Texas and we’re in such a bad drought that fireworks are banned even on july 4th!!! It hasn’t been a “rainy day” for at least nine months.

    Im a muffin gal…but lately I’ve been doing the cookie thang. OMYGOSH i forgot about my LEGOS ( LOVE) and ahem I was a Barbie gurl myself haha, all girls in my family besides my dad 🙂 PS: (I eat my oats in ramikins too!)

    Dude that looks freaking delicious, thanks for sharing! 😛
    Toy horses, legos, and stuffed animals always covered my floors. I used to cut all of my stuffed animals hair thinking it would grow back like a real animal…sadly many of them have blotchy bald spots and bandaids covering their fur now haha 😉
    I’ll try to send some sunshine your way, we have WAY too much, it’s been 100*F everyday for the past week!

    Girl, toot your horn all you want because these muffies look SOO good!!
    I like almost all kinds of cookies and muffins. It depends on my mood…but today I think I’d love to have a muffie. One (or two) please! 🙂

    My brother and I used to play with Lego’s and hot wheels all the time! We even had a lego vacuum that we’d push and roll on that carpet that picked up all our lego pieces.

    Hopefully it stops raining soon! 🙂

    YUUUUUUUMMMMMMM!!! These remind me of the muffin tops I make 🙂 I seriously adore cookies, but there is just something special about a muffin you know? It just warms my soul. I guess its my form of major comfort food. Sometimes all I want is a huge muffin, and I don’t care if its loaded with sugar and whatnot. Sometimes just a big muffin is all it takes to make my day 🙂

    You my dear, are a genius with this recipe 🙂
    Although I haven’t had a legit muffin or cookie in years (sad, but true), I used to be more of a cookie gal, so I assume I still am! Only one way to know this though, taste them! Anything with PB works for me
    I played with Barbies like no ones business when I was younger. But I also enjoyed Legos, video games, playing outside, My Little Pony FO SHO, American Girl Dolls… yay for childhood 😀
