These delicious little Apple and Gouda Mini Frittatas (aka: egg muffins) make a perfect grab-and-go breakfast or a fun brunch! Simply make them ahead and pop them in the microwave when you’re ready to eat.

Could it be? Another savoury recipe on Spoons?!?

Your eyes do not deceive you, my friends, and believe me when I say that I’m probably more shocked than anyone. Considering I can’t even remember the last time I posted anything even close to a savoury recipe on the old bloody blog before last week, the fact that I have another one for you today is kind of a big deal.

But I can’t help it! I mean, obviously I eat more than just sweets, but I don’t usually find those foods as interesting or share worthy (sorry!)… which is probably why even today’s RARE savoury recipe has a little bit of sweetness tossed in.

Please tell me that you’ve tried the combination of apples and cheese. And please promise me that you’ll stop what you’re doing (as soon as you finish this post) and try it straightaway if you never have.

Creamy, salty cheese; a crisp, sweet apple… The two elements come together perfectly in a harmonious combination that’s an absolute delight for the senses. I’ve only ever had it in sandwich form prior to this, but I wanted to try something a little different this time around, so I grabbed some eggs and whipped up a batch of mini frittatas…

Besides the fact that they’re a great source of protein, vitamins, and minerals, eggs are awesome in their versatility. Not only can they be used in breakfast, lunch, dinner, and dessert recipes, but they have no problem playing either the sweet or savoury card, which makes them a perfect addition to the already phenomenal apple and cheese combo.

The result is a [mostly] savoury breakfast that has tantalizing hints of sweetness in each bite; and the fact that these frittatas are made in a muffin pan makes them a great grab-and-go breakfast or snack option for those days where time is scarce and sustenance is needed.

So do yourself a favour and give the egg, apple, and cheese combo a go –  I promise you won’t be disappointed!

Ingredients

Scale
  • 2 cups baby spinach
  • 1 tsp. coconut oil
  • 1 medium onion, diced
  • 1 medium apple, diced
  • 6 large eggs
  • 1/3 cup 2% milk
  • 1/2 cup Gouda cheese, shredded
  • 1/2 tsp. salt
  • 1/4 tsp. ground pepper

Instructions

  1. Preheat oven to 350F and spray a muffin pan with nonstick spray. Set aside.
  2. Place spinach in a steamer set over boiling water, cover, and steam until just wilted, about 1 minute. Remove and pat dry with a paper towel to remove some of the excess moisture.
  3. Melt coconut oil in a small saucepan set over medium heat. When pan and oil are hot, add the diced onion and cook until soft and translucent, about 5 minutes. Transfer to a separate bowl and add the wilted spinach and diced apple. Stir well and set aside.
  4. In a medium-sized mixing bowl, whisk together eggs, milk, Gouda, salt, and pepper. Divide the spinach, onion, and apple mixture evenly among the muffin tins, and use a ladle to spoon the egg mixture over top, filling about 3/4 of the way full.
  5. Bake for 15-20 minutes until eggs have set and edges begin to turn golden brown. Remove from oven and allow to cool for 5 minutes before removing from tins and serving.
  • Prep Time: 15 mins
  • Cook Time: 20 mins

    These are cute little things…somehow I thought I would taste the apple more though. I wouldn’t want to risk adding more in case they wouldn’t stick together…maybe I will have bigger chunks next time.

    I LOVE the idea of adding apple! I’ve never thought to include apple with eggs, but I can totally see it with the cheese. Yum!

    Once surgically removed from the tin they served up pretty nicely. After reading the comments I decided to grease with coconut oil. I did so generously but they still stuck. I might try parchment liners next time or a silicon cupcake mold. The flavor was nice with the apple, which made it more appealing to one picky three year-old. I added more cheese and a sprinkling of sea salt on top.

    You had me at gouda!! This sounds amazing! I had brussels, apples and egg together today, now I wish I had some gouda cheese to add in. I’m so going to make this as an easy on the go snack for the week!

    Hello, well I just happened to find this unusual recipe quite by accident, I was actually after a simple but tasty treat for a boxing day brekki, I have a good one which is also very tasty (Mini Philly Frittatas) and I think this one will be just as popular with my girls.     Apple and cheese is amazing! it’s quite a common thing in the UK actually – for once the country knows a good flavour combo! I also love pear and blue cheese – add pecans to the mix and you have a salad of champions!
    Right now I am addicted to grilled eggplant and tahini – I could eat it every day!

    Fruit combined with eggs?? Now why didn’t I think of that! Love the sweet & savory combo, especially apples & cheese so this looks perfect! Another combo that I’ve been loving lately is raw oats & Greek yogurt–> all over that doughy flavour!

      I have -SO- much love for raw oats! The doughiness is definitely a part of it, and I’d go as far as to say that they make things almost creamy 😀

    YES…I love apples and gouda together and putting them in a little mini frittata is pretty much the best idea ever. And it’s nice that they sneak a little green in too. They look delicious!

    More savory goodness? WHO ARE YOU??! Just kidding…these look super tasty! Ive actually never done the apple,cheese,egg thing – so this sounds super interesting to me! I dont mix sweet and savory often which is probably why this combo would have NEVER occured to me. I kind of stick myself in a hole and don’t peek out of it much 😉

    We do Frittata Fridays in my house so I’ll definitely be putting this on this week’s menu! I love apple and gouda on sandwiches, but I am very curious to try the combo in eggs. I’m loving pine nuts and parsley right now

    I do adore apples and cheese – but, I’ve never had the 2 in a frittata with spinach! These mini frittatas solve one of my main big frittata dilemmas – when you slice into a big one, I always wish I had more “crust” – but with these mini ones there’s a “crust” ALL around!
    This time of year is the only time when buttercup squash are available at my local grocery store so I have been enjoying slices of it baked with nutbutter and melty chocolate 🙂
