. healthy breakfasts guaranteed to get you out of bed .

August 25, 2015 by Amanda @ .running with spoons. 60 Comments

It’s breakfast birthday week here on Spoons!

And yes… I really did type out breakfast just there. Because it’s totally normal to have breakfast on the brain at 2:19 in the afternoon, right? Right. I’m thinking oatmeal for dinner tonight. Or pancakes. Ooooo definitely pancakes. With maple syrup, nut butter, and berries. Swooooooon. But I digress.

It’s no secret that I’m a [huge] fan of breakfast, going as far as to eat it all day on a regular basis. It’s the reason I get out of bed in the morning, and I have a feeling that this [big] handful of recipes I’m about to share with you will have you jumping out of bed with the sunrise too.

And because it’s birthday week here on Spoons and this little blog of mine is turning 3 in a few short days, I hope you don’t mind if I partake in a little horn-tootage and focus on blog recipes alone for this roundup. I usually try to focus on recipes from other bloggers’, but this breakfast one is all.Spoons.

So without further ado… no wait! A few things about these recipes before we go on… They’re sweet, they’re healthy, they’re mostly gluten-free and/or vegan, and there are a lot of oats, bananas, and nut butters involved. Actually, I think every.single.one is made with oats. Huh. Oh, and they’re all reader favourites. Hope you enjoy!

Not a morning person? Not a problem! These healthy breakfasts are guaranteed to get you out of bed! || runningwithspoons.com #breakfast #healthy #glutenfree

. – . – . – .

Banana Oat Baked French Toast – {vegan, gluten-free}

A hybrid between baked oats and French toast, this single serve breakfast is vegan, refined sugar free, easily made gluten-free, and packed with fiber and plant-based protein. Soft, doughy, fluffy, hearty, and oh.so.GOOD.

Banana Oat Baked French Toast

. – . – . – .

Chunky Monkey Greek Yogurt Pancakes – {gluten-free, high protein}

Light, fluffy, and loaded with bananas, chocolate, and nuts! These single-serve oatmeal pancakes are made in the blender and boast a whopping 20g of protein [with no protein powder]. Top them with chocolate chips and a banana nut sauce that’s just to.die.for.

Chunky Monkey Greek Yogurt Pancakes

. – . – . – .

Chocolate Overnight Oatmeal Smoothie – {vegan, gluten-free, refined sugar-free}

Yes you CAN have chocolate for breakfast! This recipes takes the satiety factor of overnight oats and turns it into a thick and creamy smoothie that’ll make you feel like you’re drinking a cup of melted chocolate ice cream. And the best part is that it’s 100% healthy!

Chocolate Overnight Oatmeal Smoothie

. – . – . – .

Strawberry Banana Oat Bars – {vegan, gluten-free, refined sugar free}

A soft and chewy banana oat base made without any flour or oil, topped with a homemade chia seed jam that’s free of refined sugars. Perfect for those days where you need something you can grab and go.

Strawberry Banana Oat Bars

. – . – . – .

Blueberry Muffin Breakfast Bake – {vegan, gluten-free, refined sugar free}

Try this and tell me that the texture and taste doesn’t remind you of a blueberry muffin — I dare you! This breakfast bake uses oats and flour to make a light and doughy “bowl of muffin.” Replace the berries with your favourite fruit and top it with nut butter for a real treat.

Blueberry Muffin Breakfast Bake

. – . – . – .

Flourless Banana Bread Muffins – {gluten-free, oil-free, refined sugar free}

Soft, tender, and loaded with banana flavour, these healthy muffins are made with wholesome ingredients like oats, bananas, nut butter and eggs. And the best part is that you can whip them up in your blender in under 5 minutes and keep them on hand for those busy mornings.

Flourless Banana Bread Muffins

. – . – . – .

Salted Caramel Cookie Dough Smoothie – {vegan, gluten-free, refined sugar free}

It may sound indulgent, but this smoothie is actually made with a naturally sweetened date base that’s perfect for the banana haters out there. It’s cool, creamy, and ridiculously comforting.

Salted Caramel Cookie Dough Smoothie

. – . – . – .

Banana Oat Greek Yogurt Pancakes – {gluten-free, high protein}

Another single-serving pancake recipe that gives you 6 big pancakes with under 300 calories and 20g of protein. Ridiculously easy to make, you can whip them up in the blender and enjoy a fuss-free batter that yields a perfect stack every time.

Banana Oat Greek Yogurt Pancakes

. – . – . – .

Soft and Chewy Protein Granola Bars – {gluten-free, vegan, refined sugar free}

Quite possibly my favourite recipe here on Spoons — I almost always have a batch of these on hand and eat them as a snack regularly. They’re perfectly soft and chewy with just the right amount of sweetness, and if you’re not a fan of using protein powders, you can just replace it with more oats.

Soft and Chewy Protein Granola Bars

. – . – . – .

Flourless Morning Glory Muffins – {gluten-free, oil-free, refined sugar free}

Carrots, apples, raisins, and nuts steal the show in these soft and tender gluten-free muffins! Made without flour, oil, or refined sugar, you can whip them up in the blender in under 5 minutes.

Flourless Morning Glory Muffins

 . – . – . – .

Oatmeal Cookie Dough Breakfast Bake – {vegan, gluten-free}

Because who doesn’t want a cookie the size of their face for breakfast?! This soft and doughy oatmeal bake is made with wholesome ingredients that you can feel good about starting your day with. Replace the chocolate chips with dried fruit or nuts for an even bigger nutritional boost.

Oatmeal Cookie Dough Breakfast Bake

. – . – . – .

Apple Oat Greek Yogurt Pancakes – {gluten-free, high protein}

A variation of my banana oat pancakes with applesauce to appease the banana haters. Super quick and easy to make, and loaded with 20g of protein. Take a few extra minutes to make the apple topping — it’s to.die.for.

Apple Oat Greek Yogurt Pancakes

 . – . – . – .

Oatmeal Cookie Dough Smoothie – {gluten-free, vegan, refined sugar free}

If you’ve never tried adding oats to your smoothies, you need to get on that STAT because it will change.your.LIFE. Not only do the oats add a subtle sweetness, but they thicken it up and give it a doughiness that’ll make you feel like you’re drinking an oatmeal cookie.

Oatmeal Cookie Dough Smoothie

. – . – . – .

Banana Oat Greek Yogurt Muffins – {gluten-free, flourless, oil-free}

Quickly approaching a million pins, this is hands down the most popular recipe on Spoons. Light, fluffy, and made without flour, oil, or butter, these muffins are definitely a great gran and go breakfast option.

    So glad I had eaten before I read this otherwise I would be hungry!
    Breakfast today was eggs and kale drizzled with tahini – yummy! But I think if I was having breakfast for dinner it would have to be pancakes! Funny that I pick savoury first thing but then sweet in the evening!
    Definitely going to check a few of these out! 🙂

    Now you gave me an idea: birthday week happening twice a year for us bloggers?! Not a bad inspiration at all 😉 …
    Oats in every of these creations are obviously a sign they’re all winners – especially those breakfast bakes. If I had breakfast for dinner?? I DO almost every night and it’s my [not-so-]legendary cocoa banana oat bran with white almond butter. Actually, it’s dinner time soon :).

    So many great ideas! I’m glad you asked what people had for brek fast today because I had the Banana Bread Mug Cake from this website. I have it at least once a week. And if I was having breakfast for dinner (wish I could get away with that), I’d go for a big bowl of oatmeal with almond butter, cinnamon and raisins. I just bought some almond butter today. Keep going to the cupboard with a spoon :/

      I’ve been gravitating towards simpler combinations lately as well. Like with oats? Instead of going with ALL the toppings, just a simple combo of almond butter and brown sugar has been enough.
