Happy [What I Ate] Wednesday, friends! šŸ˜€

Confession: today’s WIAW almost didn’t happen… I woke up yesterday morning thinking it was Monday (thank you, long weekend!), and since I only really take pictures of my eats on Tuesdays, I wasn’t going to bother busting out the camera and breakfast almost passed by undocumented. The horror. Thankfully I read Becky’s Treat Yourself Tuesday post before digging in and WIAW was saved šŸ˜‰

So all that breakfast talk from yesterday left me craving my favourite meal of the day like a crazy person, which would explain why I ended up eating breakfast-type meals all day — one is never enough…

Breakfast for breakfast…

Honey Almond Butter Oats

Eggy bananafied oats layered with plain Greek yogurt and topped with homemade applesauce, honey, cinnamon, and almond butter.

Another WIAW, another bowl of honey almond butter oats. Like I said yesterday… it’s a combo I’ve been crushing on for a long, long time now and it doesn’t really look like it’s going away anytime soon. It’s basically the reason I get out of bed in the morning, and… yeah… that’s really all there is to say about that.

Breakfast for a morning snack…

Creamy Chocolate Smoothie

My thick & creamy chocolate smoothie.

My smoothie addiction is still going strong, and as much as I’ve wanted to try to experiment with new combos, I just can’t seem to break away from my beloved chocolate and almond butter one… hence the recycled picture — it always looks the same, except maybe not as pretty because I don’t usually bother to dress it up.

Breakfast for lunch… 

Breakfast Snack Plate

A lot of people mentioned eggs as their favourite breakfast in the comments on yesterday’s post, which left me with a huge craving for the little nutritious powerhouses… especially when Alexis reminded me how much I adore the combination of eggs, avocado, and toast. I’m honestly not really sure what my body thinks of eggs since I randomly start breaking out if I eat too many of them, but sometimes I just can’t say no. Had to toss some ketchup in there because eggs need ketchup, and some dried pears because Amanda needs sweetness.

Breakfast for an afternoon snack… 

Chocolate Toaster Pastry

Did you ever go through a Poptarts phase? A stretch of a few months where you’d eat nothing but a Poptart for breakfast? No? Just me? Well alrighty then. It’s been a good long while since I’ve busted these out first thing in the morning (I was the epitome of health in my late teens šŸ˜‰ ), but I still enjoy them as a snack every now and again. I just wish we could get the slightly healthier versions up here in Canada!

Pancake Waffles

My banana oat Greek yogurt pancakes in waffle form topped with Justin’s almond butter alongside some maple syrup and plain Greek yogurt for dipping.

So I was really craving some pancakes, but if you know me then you know I’m not the biggest fan of the pancake-making process — I find the flipping/waiting game to be a little stressful and a test of patience that I don’t necessarily have when it comes to food. I mean, you’re looking at a girl who probably eats 3/4 of her meal before it manages to hit a plate, so having to wait for pancakes to reach the appropriate flippability level is just torture. Thank goodness for no-fuss waffle makers! I wasn’t sure if it would work, but they actually came out really well. Light, fluffy, and slightly crisp on the outside. Winning.

Breakfast for an evening snack… 

Chewy Granola Bars

One of my soft & chewy protein granola bars with a cup of warm vanilla almond milk.

You guys… I did it again… I whipped up yet another batch of granola bars. This is, without a doubt, my favourite recipe that I’ve ever posted on Spoons, and also the one I make the most often. Not only are these bars super quick and easy to throw together, but they taste pretty darn fabulous… not that I’m bragging or anything šŸ˜‰ And I toss the warmed milk in there because… what’s more comforting than a cup of warm milk before bed? Lullaby.

 And that’s that — a day entirely made up breakfasty eats, whiiiiich is probably my favourite kind of day. And speaking of favourite days, I’ll see you guys tomorrow for Thinking Out Loud! šŸ˜€

    Hahaha I love that you had breakfast all day. I feel like I could totally do this too. Breakfast foods are seriously the best.

    Your favourite smoothie combo is my favourite too! But I sometimes also do banana, strawberries, vanilla yogurt, and milk, which is also an awesome combo.

    My parents never bought us Pop Tarts when I was a kid… it wasn’t until I was older that I tried them for the first time. My friends and I would pig out on them at sleepovers. šŸ˜€

    I guess I’m not the only one who loves eggs seeing as all the comments you got made you crave them. I like the dried pears: I’ve never seen these before. I’m going to need to hunt these out.

    I also need a waffle maker with so many great bloggers taunting me with waffles. It’s like a waffle making madness has hit the blogging world; every which way I turn I see waffles. Pretty soon, somebody is going to get real crafty and top their waffle with yolk porn. Then all bets will be off.

      I found those pears in Homesense, which is our Canadian version of your TJ Maxx. And just think… you could make savoury waffles with shredded cheese *taunt taunt* šŸ˜€

    I enjoy having breakfast for lunch! I haven’t had waffles in a long time but I would prefer them over pancakes. And YAY to eggs on ketchup!

    Oh I completely agree with this. I’m pretty sure 80% of my daily eats contain Breakfast foods. I just can’t help it because they are so darn delicious…anytime any day!

    I think you just put me into a delicious carb coma from reading your breakfast post. I swear, no one makes breakfast look as delicious & comforting as you do. Your pics always have me drooling.

    Pancakes always used to be my go-to… for some reason waffles seem less filling & dense? I’m a volume/density girl here. MORE food!! gimme more, more, more! haha

    I love pancakes! Especially banana pancakes!!
    I’m pretty basic when it comes to smoothies–frozen berries, banana, and plain Greek yogurt.
    I’ve never tried ketchup on eggs but I’m big on salsa and hot sauce! I eat that a few times a week for dinner.
    My pop tart phase was in high school and I was all about the strawberry!!

    I love the idea of eating breakfast all day long. It’s definitely my favorite meal of the day too! As far as smoothie flavors go, lately I’ve been loving coconut milk with vanilla protein powder, banana, and other fruit.

    We both know I love breakfast just as much as you.. especially the oatmeal! There are so many different breakfast foods that you can have it for any meal. I wouldn’t mind having breakfast all day. šŸ˜€

    Can’t say I’ve tried eggs with ketchup, but it just does not sound appealing. GIRL. Your waffle looks so perfectly crispy. I just made belgian waffles and mine was wayy too soft. And I’m with ya on poptart phases. While I don’t enjoy them for breakfast anymore, I love having one as a night snack! brown sugar cinnamon always šŸ™‚ <3

    Okay, so I’m pretty sure that all four years of high school were my ā€œPopTart Phaseā€. No joke. I ate those things daily…sometimes twice a day. Combine that with the mac & cheese I usually made for dinner and the fast food I had for lunch and you’ve got a taste of the seriously nutritious diet that I followed…haha.

    I definitely can’t do that anymore (not all the time anyways), but I still love a good Nature’s Path pop tart! The maple-brown sugar ones are my favorite.

    PS: Thank you for always sharing the most beautiful food photos. Since mine are horrible, I live vicariously through yours…

    Breakfast all day is like a dream come true. Those Nature’s Path pop tarts are definitely mentally noted – I haven’t had pop tarts in forever but now it’s all I can think about haha. Another thing I need to try is this whole egg-oat combo…I love eggs, I love oats, I’m not sure why I haven’t tried this yet but it seems odd!

      They’re pretty darn good if you need a fix but don’t want all the HFCS and what have you that regular Poptarts roll with. And a tad more convenient than trying to make your own šŸ˜‰

    Seeing your picture of Poptarts made me excited! Now I’m kind of embarrassed to admit, but throughout my junior high and high school time I would have the Chocolate Fudge Poptarts for breakfast. I would fix a big glass of chocolate milk and dip them in there just like you would an oreo! Sooo good. And now I’m going to be hit with a poptart craving haha I’ll have to look into Nature Path poptarts. Also, your waffles look delicious! I’m more of a pancake girl, but who am I kidding I love waffles too.

      No shame! Poptarts used to be my breakfast of choice as well. I even remember packing a few boxes in my suitcase when I was going to visit my family in Poland one summer, and warming them up over a gas stove because there was no toaster šŸ˜†

    Breakfast all day long sounds ah-mazing! I could eat eggs at every meal, especially with sriracha (no ketchup for me), and I’d love to find a healthier alternative to brown sugar cinnamon pop-tarts. I loved those as a kid and have craved it a time or two while being pregnant. I keep telling myself I’m going to make some but that hasn’t happened yet. I’ll have to look into Nature’s Path to see if they have something similar.

    You’re so right that one breakfast is never enough! I find that most days I end up eating breakfast throughout the day like its my job… I just can’t help it. It’s so yummy. Your dinner looks SO good… and same with those granola bars. I 100% need to get on that granola bar recipe of yours. And I laughed about the ā€œAmanda needs sweetnessā€ part, hehe… I am totally the same way! A little bit of dessert with breakfast, lunch and dinner never hurt anyone! Xo

    I hate ketchup and mayo too yuck! I toss sriracha or salsa on my eggs. I love anything spicy. I haven’t had waffles since I was a kid. I don’t eat pancakes often but I like making an oatmeal version of them. Then I always realize I should just have had my oatmeal. I can eat breakfast anytime though. Kale smoothie is what I’d love to see from you. I had an amazing one at an organic market this week. It was amazing!

      I’m not sure if I’d ever be able to get myself to make another kale smoothie… I tried one once waaaaay back in the day, and let’s just say that the thought still makes me cringe — it was like drinking chunky swamp water. Granted I had a really bad blender and no idea what I was doing, so that probably made it a lot worse than it should have been, but I think I scarred myself for life šŸ˜†

    Thank goodness I’m not the only one obsessed with breakfast:) My sweet tooth will always prevail, no matter what:) Something about breakfast anytime of the day just makes you feel so cozy:) Plus, I TOTALLY look forward to jumping out of bed to a nice breakfast too:) Thanks for such yummy eats!     Breakfast for every meal? Seems like a perfect day to me!
    In high school I only used to eat poptarts for lunch…healthy I know, but in all honesty I probably haven’t had one since :(. 9 times out of 10 I am a pancake girl, but ever since I got my waffle maker for Christmas its been about 50/50.

It’s like my body knows it craves crunchy colorful goodness by the time lunch rolls around. And your lunchplate looks so yummy!     YAY…I love that you made eggs for lunch! AND, that is a scrambled egg combo that I make fairly often! Also, I LOVE that you put ketchup on your eggs!!! Justin always thinks it’s gross and weird when I do that, but I think ketchup on eggs is such a tasty combo! I’ll be happy to report to him that I’m not the only one who does it! šŸ˜‰

    We like to make breakfast for dinner occasionally because it’s quick, easy and cheap. Ha we always have things on hand for that. Anyways that waffle looks really crispy and good. What has been your favorite waffle flavor?

      I’ve mostly been eating banana or cinnamon flavoured waffles, so I can’t really say what my favourite is… but I remember some of the awesome ones you posted, so I might have to go back and try some of those out.

    Can you believe I never had a Pop Tart in my life??
    Pancakes. But only cause I don’t have a waffle iron – maybe I would love waffles more? Well, I never had a waffle in my life. Seriously, who am I.
    BUT I am with you on the smoothie wagon!! I actually love to add avocado to my smoothies – sounds strange, but makes them so creamy, just as with AB. I also put a lot of cinnamon and ground vanilla in them, oats or coconut flour. Hmmmm.
