In a perfect world, all of my kitchen endeavours would go according to plan. I’d be hit with a brilliant recipe idea, execute it seamlessly, and maybe even have someone clean up the mess I [inevitably] make in the process.

This is not a perfect world.

This is a world where I burn a batch of muffins because I think I’m too cool for school to need a timer… promising myself that I’ll remember that I’m baking, which works for approximately 5 minutes before I get side tracked by something else and completely forget about what’s in the oven. Oops.

This is a world where I attempt to whip up a second batch of aforementioned muffins, only to realize that I used up the last of my muffin liners on the batch I just burned and I can’t run out to buy more because the dough can’t be left to sit out that long. Oops. 

Consequently, this is a world where I end up with a loaf of bread instead of a batch of muffins…

A loaf that I meant to divide into 12 hearty slices, but somehow only ended up with 11…

Admit it — you just counted them πŸ˜‰ And no, I didn’t eat one — I ate two.

But in my defense, photographing food is tiring (read: tempting) work, and it was just the butts — no one cares about those. Do they? I don’t know. What I do know is that despite all the SNAFUs I ran into while whipping up this batch of muffins loaf of bread, the end result came out better than I could have imagined.

I tell ya — Greek yogurt can do no wrong; and if you’ve never tried baking with it, you need to change that stat…

Picture this. You sink your teeth into a thick slice of subtly sweet bread with a slightly chewy exterior that gives way to a soft and fluffy interior. You immediately detect a tantalizing blend of warming spices, accented by a subtle hint of apple. The flavours mix, complimenting each other perfectly, and result in a comforting loaf of amazingness that calls to you [again, and again, and again].

This bread is almost impossible to resist, but with ingredients like Greek yogurt, apples, and coconut oil, you’re more than fine with enjoying more than one slice… preferably warmed up with a slice of butter.

Ingredients

Scale
  • 1 3/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 Tbsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 apple, peeled and grated

Instructions

  1. Preheat your oven to 350ΒΊF and lightly grease a 9 x 5 bread pan.
  2. In a large bowl, combine flour, baking soda, baking powder, spices, and salt. Stir until well combined and set aside.
  3. In a separate bowl, whisk the eggs until slightly frothy. Add applesauce, brown sugar, Greek yogurt, coconut oil, and vanilla extract. Stir until well combined.
  4. Gradually add dry ingredients to the wet ingredients and stir until just combined. Do not overmix. Batter will be thick and lumpy – this is fine. Gently fold in grated apple.
  5. Pour batter into prepared loaf pan and bake for 50-55 minutes, or until top is set and a toothpick inserted into the centre comes out clean.
  6. Remove from oven and allow bread to cool in the pan for 20 minutes before removing and setting on a wire rack to cool completely.
  • Prep Time: 10 mins
  • Cook Time: 50 mins

    Oh man, I could have gone this for lunch today.

    Confession- post 3 oreos, I had a vanilla milkshake and an apple. Strangest lunch to date. I love using greek yogurt in baking, it really adds an amazing texture. And the cake/bread butts- I love it. I like big butts and I cannot lie.

    Great recipe! And a good use for our bumper crop of apples this year (apple sauce is the perfect way to salvage the good parts of wormy apples). With apple sauce AND Greek yogurt this has got to be deliciously moist. Can’t wait to fill the house with fall baking smells πŸ™‚

    YUM! I love apple-spiced bread and it’s funny you posted this recipe as just yesterday, I was thinking I need to make a batch! I’ve baked with plain yogurt before and loved how moist my bread turned out, so I can only imagine how much better texture Greek yogurt adds! Cottage cheese is another fantastic add-in!

    I bet your house smelled amazing baking these. I too am guilty if not using a timer and burning things this weekend πŸ™ perfectly good honey roasted almonds are not tasty burnt Love that you were able to create this beautiful recipe out of your unfortunate events! Thanks for sharing

    This looks fantastic Amanda! Have you ever made it with your homemade applesauce?

    I cook with Greek yogurt on a regular basis but I don’t think I have ever baked with it. Then again, I cannot remember the last time I baked.

      I haven’t! I would have loved to, but I didn’t have a batch on hand πŸ™ I actually thought about whipping one up for the occasion, but it’s kind of not a good time since I’ll be leaving soon and just had way too many things on my head.

    I have used Greek yogurt in banana bread. I didn’t have buttermilk so I used 1 part yogurt to 2 parts milk. Worked fine. I just didn’t tell my husband since he doesn’t like “healthy stuff” in his food!

    I have a confession… I’ve still yet to bake with Greek Yogurt (I think… but I may be lying). Isn’t that insane?? I should have used some last night, I made these random banana bars (because I was too lazy to grease a muffin pan/too lazy to look for a mini loaf pan). I feel like it would have made them… fluffier? Also, love your description of these!

    Perfect for Fall coming up. I’ve made some protein bars with greek yogurt…they were more cake bars then anything else but they sure were moist! I bet like this loaf!

    I love using greek yogurt and applesauce as substitutions in bread! I made an applesauce pumpkin bread (even with homemade applesauce!) and I made skinny brownies with those substitutions too!

    I love baking with greek yogurt! I usually use it in my pancakes. Makes them soooo fluffy.
    This loaf looks so delicious – is it weird, that I get a little into christmas spirit by looking at it? Imagining that it smells from cinnamon and apple – wait. It’s August. And I love Summer.
    But yeah, I think I keep this one in mind for christmastime….. πŸ™‚

    Saw this picture this morning and drooled. I need to make this ASAP! I also need to finally buy some coconut oil I suppose, lol. I keep putting it off but for this recipe, it’s a must. These are my favorite ingredients put into one. Oh, and I counted the slices, twice. Ha!

    I love substituting greek yogurt in quick breads for half of the butter or an egg. I really love the texture it brings to the baked good! I just made Sally’s pineapple upside down cake yesterday (which has greek yogurt) and I really do think it makes the cake so much better! I would like to use the “M” word but that’s a no go!

    I’d say coming out with this loaf was a success! It sounds amazing …perfect to enjoy with a hot cup of tea and some cool fall weather! And I’m the same way about testing it out before shooting. You have the make sure it’s worth the effort!

    I’ve never baked with greek yogurt, but maybe this fall I’ll get the chance!! This bread btw, is perfect! It seems perfect for fall or pre-fall. Ahhh! I’m getting so excited to start baking pumpkin bread!!! How early is too early??

    I LOVE baking with Greek yogurt. Will have to try making a wheat-free version of this the moment apple picking season officially starts. (I think it’s next week here in New England! That means baking projects every weekend, because I always pick way too many.)

    For some reason I’ve always liked to eat my quick breads/muffins at kind of a cool room temperature, with a pot of super hot tea at my side. I think it makes them sweeter or something.

    My goodness, this recipe has me crying out for fall!! After this hot summer we’ve had, I really cant wait to be able to get into the kitchen and just bake breads to my hearts content. Plus, you cant go wrong with fall and apples!

    Delicious! I’m a big fan of sweet bread for breakfast, as a snack or even for dessert. I love toasting it and adding a smear of butter. It’s pretty amazing that way!

    And yes, I’ve recently starting baking with Greek yogurt. It makes the baked goods so moist. I just made some muffins from Fit Foodie Finds over the weekend and they turned out awesome!

    Oh man, my grandma used to make the best applesauce cake and now I’m totally craving some. I’ve made Greek yogurt pancakes before and they turned out awesome, so I’m betting they’re great in this bread too.
