Say hello to the recipe that brought a microwave back into my life (read: home).

Remember how I mentioned that mine just went ahead and died about a month ago? I didn’t really notice its absence until the other day when I found myself craving a mug cake and had no way to go about making one. I mean, I guess I could have whipped up a batch of muffins or something, but who’s got the time to dirty up multiple bowls and wait 20 agonizing minutes for muffins to bake when you can whip up a nice doughy mug cake in about 3?

Not even a question, really.

The only problem was the whole lack of a working microwave thing, so I did what any reasonable human being would do and went out to buy a new one. Nevermind that going the muffin route would have been so much quicker and easier – I wanted my mug cake. And something that could heat up my bean bag bear when it got super cold out. But I digress.

Mug cakes. They’re magical things. If you’ve never had one before, you definitely need to change that, and might I suggest starting with this s’mores mug cake? Not only is it quick, easy, and campfire-free, but it’s also a great way to enjoy the delicious flavours of s’mores in a soft and doughy muffin-like form that’s gluten-free and single-serve, so you don’t have to worry about having leftovers lying around or eating the entire pan in two sittings.

Aside from the whole graham cracker, chocolate, and marshmallow combo, the main players in this guy are a few spoonfuls of coconut flour and an egg, which combine to form a wonderfully fluffy dough that you don’t need an oven to achieve.

I’ve tried making mug cakes without eggs before, and while they turn out okay flavour-wise, the texture definitely isn’t as fluffy or as soft. Besides, tossing an egg in adds a nice little boost of protein (6g!!) in addition to important vitamins and minerals like iron, folate, and vitamins A, D, and E. Not too shabby, eh?!?

So while I know s’mores will never exactly be healthy healthy, there are definitely ways to enjoy that delicious flavour combo as part of a healthier snack that just so happens to come with a nice little boost of protein, fibre, and nutrients… i.e. this soft and fluffy s’mores mug cake…

S’mores Mug Cake

Ingredients

Scale
  • 2 Tbsp. coconut flour
  • 2 Tbsp. graham cracker crumbs*
  • 1 tsp. coconut palm sugar**
  • ¼ tsp. baking powder
  • ¼ cup unsweetened vanilla almond milk***
  • 1 large egg
  • 1 Tbsp. chocolate chips or chunks
  • 1 large marshmallow, sliced in half lengthwise

Instructions

  1. Add coconut flour, graham cracker crumbs, sugar, and baking powder to a microwave-safe mug or bowl. Mix until well combined.
  2. Add milk, stirring until no clumps remain before adding in your egg. Use a fork or whisk to gently beat the egg into the batter, making sure that it is fully incorporated. Sprinkle with chocolate chips before topping with marshmallow and additional graham cracker crumbs.
  3. Microwave on high for 2½ to 3 minutes, depending on microwave strength and depth of mug.
  4. Remove from microwave, grab a spoon, and enjoy!

Notes

* use gluten-free graham crackers to make this gluten-free. ** you can sub this with brown sugar or any sugar you have on hand. *** sub with rice, soy, or dairy milk to make this nut-free.

    Isolating in place this mug cake was perfect, even though i had to substitute graham crackers with ground up blueberry Special K cereal, walnut milk for almond and brown sugar. Perfect fit: comfort food and no left overs.

    Just ran across this recipe and had to try it. Had all ingredients on hand but used mini marshmallows in place of a regular size one. This will definitely be one of my go to mug cakes
