Guess who’s back?! 😀 Actually, I’ve been back since Sunday evening, but it always takes me a day or two to get back into the swing of things after travelling, hence the very-much-appreciated blog break yesterday.

Blend was pretty darn amazing. I need a little more time to process the whole experience before I try to write a recap, so I thought I’d distract you with a tasty snack recipe in the meantime.

I know I just posted a Rice Krispie recipe not too long ago, but I’m going through a bit of a phase right now and you’re going to have to see me through it. Actually, this’ll probably be the last one you see for a while — I exhausted my current supply and I’m not letting myself buy any more for a little while. Variety is the spice of life, right? Right.

Actually, I’m kind of surprised that I didn’t come back with a few boxes of cereal in my suitcase after hitting up the Whole Foods in Park City this weekend, but I held back because I was a little worried that I’d run out of space. Good thing, too — the swag at Blend was insane and I ended up having to leave a good chunk of it behind anyway. But more on that in the recap. For now, back to those stuffed dates…

Dates have got to be one of my favourite foods. Not only are they delicious [and nutritious], but they’re also incredibly versatile. Dip em, blend em, stuff em, puree em — they’re good for whatever you need, especially if you need a healthy way to satisfy a sweet tooth.

And if you’re a texture freak like I am, then this snack is the epitome of perfection. It’s creamy; it’s crispy; it’s chewy; it’s gooey… and that’s saying nothing about the sweet, nutty, chocolatey goodness that hits your tastebuds with every bite…

Ermagherd. 

I know stuffed dates aren’t exactly anything new, but I’m pretty sure I’ve never come across Rise Krispie stuffed dates before. I’m also pretty sure that there are people out there who’ve never bothered stuffing a date before… because I was one of those people prior to making this recipe. I never saw the point in taking those extra steps, so I’d just dip my dates in almond butter or eat them alongside a few squares of dark chocolate. But holy cow does the stuffing make a difference. Texture and taste perfection. But don’t take my word for it — give it a try!

Rice Krispie Stuffed Dates

Ingredients

Scale
  • 12 Medjool dates
  • 2 Tbsp. of your favourite nut/seed butter
  • 1/3 cup crispy rice cereal
  • 2 Tbsp. chocolate chips/chunks

Instructions

  1. Remove pits from dates by using a paring knife to slice them across the top lengthwise and gently spreading the upper half apart until you can pry out the pit with your fingers. Set aside.
  2. In a small bowl, combine the nut butter and cereal, mixing until well combined. If you’re having trouble getting the nut butter to spread, warm it up in the microwave for 20 seconds until it begins to melt.
  3. Stuff each date cavity with approximately 1 heaping teaspoon of the crispy rice mixture, making sure to pack it in tightly. Set the finished dates on a cookie sheet lined with parchment paper.
  4. Place chocolate in a microwave-safe bowl and nuke on high in 20 second intervals until chocolate is fully melted, making sure to stir between each interval to prevent the burning.
  5. Using a spoon, drizzle melted chocolate over the stuffed dates. Place them in the fridge for approximately 15 minutes until the chocolate has set.
  • Prep Time: 30 mins

    I’ve never had a stuffed date but these look incredible! I can imagine the textures and the flavors are awesome together.

    I can’t wait to read all about Blend! I want to see the swag too.

    Ohmygoose, so creatively genius! I can totally conjure up the perfect blend of flavour and texture these nifty little treats possess by that description..YUM! The only stuffed date I’ve had was with an almond nut and covered in sesame seeds; good, but dull compare to this twist.
    Aahhh I can’t wait for the Blend recap to get under way..as long as you don’t leave anything out, it’ll be perfect 😉 .

    Not only am I one of those people who have never bothered stuffing a date, I am one of those people who have never even EATEN a date. But now that I am finally home (!!!) I’ll have lots of free time on my hands! I’m glad that you had fun at Blend! Can’t wait to hear about it!

    These sound fantastic! I never ate a date in my life until January this year when my Mon brought some home from the market. Now I’m obsessed with them. What brand of krispie cereal do you recommend? I must admit I felt overwhelmed by Blend. It was great meeting you!

      You too, girl! I’m sorry we didn’t get a chance to talk a bit more, but there were so many girls to meet that it was seriously hard to talk to anymore for more than 5 minutes at a time unless you were rooming/sleeping with them 😆

      And for the rice krispies, I use either One Degree or regular Rice Krispies.

    These are definitely the cutest use of dates I’ve come across yet! Love dates stuffed with any kind of nut butter, but even on their own they are delish…definitely Nature’s fudge :-)!

    Do you deliver? I’ll take them all – better by the dozen?! Caramely dates, creamy almond butter, crispy rice – if these are even just half as awesome as I imagine them you’ve got yourself a surefire winner there.
    Regarding Blend I want to hear it ALL – the good and the bad [if there actually was any of that just so those of us missing out can feel a little better – kidding 😉 .

    I would love this! I love dates, but really prefer crunchy things, so this fits the bill. I use dates to make bars. They are so good. Almond flour with dates, coconut, chia seeds and walnuts:-)

    I don’t think I’ve had stuffed dates before. I’ve seen them around but now that I think about it, I don’t know that I’ve had them. These look perfect and I have a huge jar of dates on hand so I’m gonna give ’em a go this eve.

    Can you believe it…I’ve never had a date before! If they taste anything like prunes I will be a happy girl. I am a prune fanatic. Odd, I know.

    I realllly need to try the whole stuffed dates thing. They always sound fantastic. Do you buy dates where the other dried fruit is in the grocery store?? I’d be all about stuffing them with loads of nut butter!

      I actually find them in the regular produce section. They’re kind of off to the side and come in these smallish boxes with a red label.

    So I told you this already when you told me about this over the weekend, but you are just brilliant. I have a giant container of dates in my cupboard but I don’t actually eat them all that much (ya, I don’t get it either) so basically, I just need to run out and buy rice krispies.

    P.S. can we just fast forward to the next time that we get to see each other? Because that would be awesome…

    These look insane – I want some right now! I LOVE dates – I have them pretty much every day in some way – in a smoothie, on a salad or stuffed with coconut butter. The other day I stuffed one with some coconut oil and a few cashews – it was a taste sensation in my mouth, I hear you on the different textures in one mouthful. I must try these. I hope you had a fab time at Blend – can’t wait to read about it all 🙂

    OMG STAAAAPP! This is so similar to the snack I’ve been obsessing over!!! The rice cake with almong butter and cinnamon AND DATES! Seriously, I have gone through an entire tub of Costco dates in less than a week. Had to go buy more yesterday. What a great bite sized snack!!

    What an awesome idea! I absolutely love dates and I typically stuff them with peanut butter, but I’m really loving the addition of the rice krispies. They’ll add that perfect little crunch! And then of course, a drizzle of chocolate is never a bad thing!

    I cannot wait to see a full recap of Blend! So many amazing women were there, I’m jealous I didn’t get a chance to attend. But ummm yes I’ll be there next year! Maybe tickets to CO will be cheaper than UT?! I hope so haha.

    I’m obsessed with dates, went through a mild rehab from not eating them like every day a few months ago lol. But I might be jumping back on the train. These would be perfect for a girls night cause they’re so tiny and would probably taste good with wine. haha

    I LOVE bacon wrapped dates! This tapas restaurant (cafe ba ba reeba) gas them and the are amazing! The sweet and savory mix is indescribable. I don’t eat a lot of meat so I just savor one (ok two) each time someone in my dining party orders them!
    I’d love to know which of your blogger friends you got to connect with at blend! Hope you had a blast!
