Happy Valentine’s Day! And if not… Happy Eat-ALL-The-Chocolate Day! And if not that either, well then… TGIF! That’s something we can all agree on, right? 😀

To be honest, I’ve never really understood why some people hate on Valentine’s so much. I mean, yes it’s become too commercialized; yes love should be celebrated every day; and yes it’s not necessarily the most pleasant reminder for those of us who have to spend it alone (the joys of being in a long distance military relationship #exceptnotreally), but any day that lets me get a little more excited about things is a good day in my books. And yes… I do get excited about all of the hearts, the pink, the love songs, and the chocolate… ohhhhhh the chocolate… wait, what?! 😯 Sorry, I was having a moment. Moving on.

You guys know how much I’ve been loving on chocolate lately, which is why the fact that I’m not posting a chocolate recipe on a day that’s basically all about chocolate (read: love) makes absolutely no sense at all. But I have my reasons, which I’m sure you’ll be able to appreciate if you find yourself flying solo tonight too (have I mentioned the joys of an LDR?). Or if you’re just a fan of good food in general…

If you’ve been reading Spoons for a while, then the above picture probably looks pretty familiar to you. If not, then I hope it entices you 😉 This recipe has been around for almost as long as I’ve been blogging, but as with my oatmeal cookie dough smoothie, it’s never gotten its own post and today seemed like a good day to give it one. Why? Because it’s the perfect meal no matter what your status — individually sized for one, but quick and easy enough to double if you’re cooking for two. It also happens to be pretty darn delicious…

Pumpkin Hummus Tortilla Pizza -- A non-traditional pizza that replaces tomato sauce with pumpkin hummus and trades in pizza dough for a simple tortilla that gets crispy on the edges and remains soft and gooey towards the centre.

The secret? Nixing the tomato sauce and replacing it with a combination of pumpkin puree and hummus, which may sound odd at first blush, but trust me when I say it’s out.of.this.world amazing. As is using a tortilla in place of pizza dough. I’m all for big fluffy crusts, but a) I’m still too intimidated by yeast to try making my own, and b) I haven’t come across a store-bought version that I like, so… a tortilla it is! This may seem like a cop out, but I’m a huge fan because it gets wonderfully crispy around the edges while remaining gooey near the centre, and it really lets you taste all the toppings — which you can customize to your heart’s content!

So even if you don’t have anyone to celebrate this Valentine’s with, treat yourself to a delicious dinner, a glass of wine, and some chocolate for dessert… and enjoy the fact that you can have an entire pizza to yourself without having to share with anyone else 😉

Pumpkin Hummus Tortilla Pizza

Ingredients

Scale
  • 1 tortilla/wrap of your choice (I use a Food For Life brown rice tortilla)
  • 2 Tbsp. canned pumpkin puree
  • 2 Tbsp. hummus
  • spices of your choice (thyme, basil, oregano, rosemary, etc)
  • small handful of baby spinach leaves
  • your choice of chopped veggies (mushrooms, bell peppers, broccoli, etc)
  • your choice of extra toppings (tofu, meat, cheese, avocado, apples, figs, etc)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Place the tortilla on the baking sheet, spreading it evenly with pumpkin first, then hummus, until the entire surface is covered.
  3. Sprinkle on the spices, then create a thin layer of baby spinach leaves, discarding any stems.
  4. Spread the veggies over the spinach, as well as any extra toppings that you choose.
  5. Bake for 20 minutes and allow to cool slightly before enjoying.

  • Cook Time: 20

    As a tomato sauce loving thick crust pizza girl….I have to say that this looks awesome! I never would have thought to use hummus instead of tomato sauce, but I bet it’s delicious 🙂 have to test it out on the next pizza night! We aren’t doing crazy tonight…making Irish nachos for dinner and curling up with the Olympics on the couch…my fav 🙂 Have a good weekend love!

    No plans for me this Valentine’s Day either, but I agree with you as far as the hype is concerned… I just like Valentine’s Day either way. It’s just a nice day to celebrate love all around, ya know?!
    I am a HUGE fan of thin crusts with a TON of toppings. I think when you have a thick crust, it takes away from everything else. Give me the flava’!

    Do you think it would be too much to ask for the Blend Retreat to be my Valentine’s Day present? LOL

    I don’t hate V-Day either! I hate when people hate it actually, they are just being dramatic.
    But girl, this is my favorite way to make pizza! I always use a Food For Life Brown Rice Tortilla! so Yummy! And Pumpkin and hummus? Perfection 🙂

    Well aren’t you adorable! Haha I have never thought about hummus instead of sauce, that is genius! I love making pizzas on tortillas. It excites me because I can eat the whole thing with no regrets 😉 lol Valentine’s day is low key for me.. dinner and dessert at home! I’m a-ok with it!

    Too sweet of you to take care of us loners & long-distancees ;)! Any ideas how to produce a decent wrap pizza without an oven though? Do you think it is possible to make it in a pan? I bought a huge glass of chickpeas the other day and was planning to turn them into hummus, since we know that e-v-e-r-y-t-h-i-n-g tastes better with lots of hummus! (and wine, and chocolate… but these are entire topics for themselves)

      I actually have no idea if it would work in a pan or not… You could probably get the cheese to melt, but I’m not sure it would crisp up or roast the veggies in the same way 😕

    This pizza looks delicious! I’m a huge pizza fan anyway, but I love this twist on it. My mom makes tortilla pizzas all the time and highly recommends them, so I’ve been meaning to try it that way. My favorite pizza lately is spinach and ricotta- it’s amazing.

    Mmmm this looks delicious! And I just happened to go to my fav health store and bought three cans of pumpkin yesterday, perfect timing! You have no idea how hard it is to find canned pumpkin in Scotland, apparently its not a thing here or anywhere in the UK for that matter.

    Tortilla pizzas are the bomb.com. Seriously one of my FAVORITE ways to get in some veggies, not to mention to eat some cheeeeese! 🙂 I am a bit of a bread whore though, so thick crust IS my favorite, but nothing beats a nice homemade tortilla pizza when the craving hits!

    This pizza sounds so good! My favorite pizza is from mellow mushroom and doesn’t have tomato sauce . I love pumpkin so in sure this is a good and much healthier alternatice

    We are so on the same wave length – I have had in the back of my mind this week that I should buy those exact tortillas and make pizza with it- something I never do because if I make pizza, it’s with pizza dough. I am now for sure going to buy the tortillas today….I will be your valentine, so long as you don’t try to eat my chocolate.

    And now I’m slightly depressed that I don’t have any canned pumpkin around, because this could definitely be my lunch today. But I can probably still make it work pumpkin-less….
    Eric and I are having dinner with his family tonight – so not exactly romantic love, but love none the less 😉 and I get to see the SIL’s pregnant belly for the first time!!

    I am so with you on wondering WHHHYYY people get so bent out of shape over Valentines Day..I LOVE IT SO MUCH!! HAHA I am a holiday lover all the way. I have a red heart bow in my hair today and I am embracing LOVING my friends, family, and most of all myself!! AH I am in an exceptionally good mood…must be the gorgeous shots of pizza.     Where do you find brown rice tortillas?? It’s so hard to find non-wheat or corn tortillas anywhere!!

      I find them in the frozen food section of most grocery stores around here! Sometimes they’re in a special section dedicated to healthy/gluten-free foods, and sometimes they take a little more searching to find.

    I remember this pizza making frequent appearances in the early days of Spoons. I recall thinking that anyone who liked pumpkin and hummus as much as me would probably be worth continuing to follow. Hummus is surprisingly versatile and pairs well in seemingly odd combinations.
    My father is from New York so I was raised strictly thin crust. Sorry Chicago! I adore most veggies on pizza and mushrooms are necessity. California Pizza Kitchen serves a vegetarian pizza that is very good so long as they forgo the corn. Corn? What the heck is that doing on a pizza? No, no, no! So wrong!
    Tonight I am working at the Playhouse. Although I have no valentine I certainly do not begrudge those who do. Hooray for love! Yesterday I met up with a friend I had not seen in nearly five years. The relationship is totally platonic (he’s married) but we are great friends. It was so wonderful to see him. He is truly a blessing in my life. On the way home I drove past Disneyland. I could see the Matterhorn from the freeway. Despite my advanced age (I like prunes and go to bed early) I got a little excited just seeing the signs for Disney. I wonder how many couples spend Valentine’s Day making out on It’s a Small World? (Do they still have that ride? I know it’s kind of hokey but I’d be sad to hear it has been taken down.)
    Anyway, have a terrific weekend and enjoy your pizza and chocolate.

      😯 Corn on pizza does sound a little wrong… although I’m willing to try almost anything once. And yes! Small World is still up and running. The song is a little maddening since it gets stuck in your head for the remainder of rhe day, but it’s still such a sweet ride 🙂

    Love it! I’ve tried this tortilla pizza several times before and it’s out of this world amazing! The hummus and pumpkin combination is unexpected, but super tasty! It’s definitely a favorite of mine!

    Thin crust pizza for me and as for toppings, I like cheese, onions and green peppers. Oh and your pics of this are amazing!

    Amanda – I LOVE – L.O.V.E. this pizza – since you posted it awhile back it has been a staple at our home on nights when things are hectic and I am out of leftovers! This pizza so deserves its own post!
    I love beans and broccoli on mine – and my daughter and I started using naan as the base, topped with pumpkin/hummus -ooh talk about love!

    And I must confess – I am one of them non-v-day advocates – though I must admit the best part about vday is the day after when ALL that chocolate is half off! Oh yeah!

    J and I are staying in and celebrating after the girls go to bed! He is making his amazing Chicken Fettuccine Alfredo! We are both excited about that. 🙂

    A couple of years ago I wouldn’t have said this because I wouldn’t go near mushrooms but I absolutely love them now and they are one of my favorite pizza toppings.
