You’re gonna have to forgive me.

I tried really, really hard not to start talking about Christmas before American Thanksgiving happened, but I don’t think I can make it.

I was doing ok when the snow fell and the Christmas music started playing, and even managed to keep my enthusiasm on the down low while I decorated my place and started putting my Christmas shoeboxes together, buuuuuut then my parents decided to put up all their decorations while I was visiting them this past weekend, and that was basically the straw that broke the camel’s back – I’m in full-on Christmas mode over here.

That being said, I’m not really going to chat your ear(s) off about Christmas [just yet], other than to say that I probably won’t be sharing any Thanksgiving/pumpkin/fall themed recipes this week.

But I do have chocolate…

… which, if you ask me, never goes out of style.

And you know what’s even better than chocolate? Chocolate that’s been dipped in even more chocolate…

These no bake brownie batter truffles are based off my no bake brownie bites, only I tweaked the original recipe a bit by reducing the sweetener and adding more chocolate instead.

The result is a batch of healthy chocolate truffles that have a super soft and fudgy centre (kind of like those two-bite soft baked brownies) surrounded by a slightly crisp chocolate shell. They’re gluten-free, grain-free, vegan, and pack a nice little protein punch thanks to the addition of protein powder.

You only need 7 simple ingredients to make them, plus either a food processor or a spoon and a decently strong arm 😉 And I guess either a microwave and stove to melt chocolate with… because after they’re all mixed up and rolled into balls, they have a quick little romp in some molten cocoa-ness (I used 70% dark), followed by a brief stint in the fridge to harden up.

And voila! Some healthy truffles to satisfy those chocolate cravings.

Ingredients

Scale
  • 1/4 cup (28 g) coconut flour
  • 1/4 cup (20 g) unsweetened cocoa powder
  • 1/2 cup (40 g) chocolate protein powder*
  • 3 Tbsp (60 g) brown rice syrup**
  • 3 Tbsp (48 g) nut or seed butter
  • 6 Tbsp (90 ml) non-dairy milk
  • 1/3 cup (60 g) chocolate of choice, for melting

Instructions

  1. Add all the ingredients to the bowl of a food processor or blender and process on high until they have fully combined to form a dough. Depending on the ingredients you used, you may need to add a splash of extra milk or a small sprinkle of coconut flour to get the right consistency. The mixture should stick together easily when pressed without being overly sticky.
  2. Using a heaping tablespoon, roll the dough between your hands to form individual balls. Set them aside on a large plate lined with parchment paper, and repeat with the remaining dough.
  3. To prepare the chocolate coating, melt the chocolate in the microwave or over a double broiler, stirring periodically to ensure no clumps remain. Using a toothpick, dip each ball into the melted chocolate, gently tapping the side of the bowl to remove any excess. Place back onto the parchment-lined baking sheet and repeat until all truffles have been coated. Sprinkle with toppings, if desired.
  4. Refrigerate for ~15 minutes, or until the chocolate has set. Store the truffles in an airtight container in the fridge for up to 2 weeks.

Notes

* I used a brown rice protein to make these vegan, but feel free to use whichever protein is your favourite. Just note that different types of powders absorb liquid differently, so you might have to adjust how much milk you add depending on which kind you use. ** You can also use honey if not strictly vegan.

      You could try oat flour, Molly. But you might have to adjust the liquid. I can’t say exactly how much, but just add it slowly until it sticks together without being too sticky.

    I kind of wish our Thanksgiving was the same as yours so that we had more time to enjoy the Christmas season. I mean, what’s the point of spending all of the time decorating if you can only look at it for 3 weeks?!

    I’m happy to indulge in your Christmasy recipes, especially these gorgeous truffles. I’m a sucker for anything chocolate and the fact that they’re made with good stuff makes me want them even more. Also, I’m obsessed with the snowy feel of these photos. So pretty!

    GIRL, these would definitely have me feeling jolly! I’ve been getting in the Christmas cheer earlier than usual this year, too. I’m guessing it’s because, since my parents moved to Colorado this summer and I haven’t seen them since my California college semester began August 28, I’m associating Christmas with homecoming 🙂 And you’re right – chocolate is delicious any time of the season!

    I usually hold off until after Thanksgiving to put up Christmas stuff. I’ve pushed it well into December before, but I think I just might get all the stuff out this weekend. Considering I decorated my office this morning with Christmas stuff, I figure that means I’m ready!

    I think truffles may be my love language (or maybe it’s just chocolate and truffles are a good vehicle for chocolate.) either way, these look amaze.

    These look perfect! Chocolate is definitely good any time of the year.

    Since only a few international students actually stay at my school over winter break, we start decorating our rooms/apartments practically right after Halloween so we get a change to celebrate before we leave. 😉 My family usually decorates either right after Thanksgiving or when I come home for winter break in mid-December. I’m hoping this year we do it this weekend, though! I’m ready for Christmas.

    Lol. My family usually decorates for Christmas around the 20th of December. Although I’ll probably put my miniature tree when I get back to my apartment after Thanksgiving.
    No judgment though. I can empathize that it would be tempting, especially without that extra holiday in between.

    ohh these look delicious! I haven’t seen Christmas decorations popping up just yet around here except for the holiday stuff in the stores but I know it is coming! I love to drive around to look at lights even though I am jewish. it’s so much fun to see!

      I do that too! People don’t get too crazy with the decorations around where I live, but they do around my parents’ so I always take a little drive when I visit.

    Oh all bets are off here too. I’ve decorated and Christmas music has been playing. I’ll blame the snow we had over the weekend. I forgot how much I love truffles. They are so easy to make. These look amazing!
