classic comfort foods made healthier

November 15, 2016 by Amanda @ .running with spoons. 13 Comments

We’re not going to talk about the fact that I still don’t have an oven.

The one that was supposed to come last week? Oh, it came… but in the wrong size. I know! Totally not my fault, but it’s all the same because I still have to wait another who-knows-how-long for the next one. Le sigh.

But I’m keeping my positive pants on and doing the only reasonable thing one can do in this kind of situation – drowning my sorrows in comfort food. And by that I mean scouring the internet for deliciously healthy comfort food recipes, a lot of which I can’t actually make thanks to aforementioned oven situation.

But you can make them! And you totally should because the swoon-age is real with this bunch. It’s all your favourite classics like mac & cheese, burgers, brownies, shepherd’s pie, chowder, biscuits, chili, and chocolate chip cookies, only made healthier to ensure maximum enjoyment for both the body and soul.

So enjoy a few for me, alright? K thx bai 🙃

Looking at food pictures would be torture for me if I didn’t have an oven! Hope it all gets worked out soon! And these all look delicious. My favorite comfort food is probably anything with pasta and lots of cheese.

And now I’m definitely hungry even though I just ate two banana muffins. I want all the lunch and dinner submissions, especially that mac & cheese….swoon worthy, or should I say Spoon worthy. Ba-dum-bum-ching.

Um, Drooling over all of these. And I was literally nodding at them all being “COMFY” foods. YES!

:'( Having oven issues would be sad, but you could still make the soups and the smoothies? I wish I lived nearby so I could make you some goodies!

Im so sorry to hear that you are still having oven issues! That is super frustrating. Hopefully it gets resolved soon! Until then though, this list? AMAZING. I seriously want all of the soups on the list – they look so amazing!

Mmmmm . . . I did the black bean skillet from Ambitious Kitchen & it was yum despite the lack of enchilada sauce! That cauliflower chowder looks good too. I’ve yet to make soup this fall.

Love this roundup! As much as I love meat I’m dying right now over that quinoa burger. I think we need to combine our roundups and have a picnic 🙂
