“These muffins are dangerous.” <– Mum’s words, not mine; although I can definitely back her up on that claim. These muffins are dangerous. They strike like ninjas and before you know what hit ya… they’ve vanished.

Seriously. I could’ve sworn I made an entire batch just yesterday, and now it’s nowhere to be found. Poof. Gone. But before you start calling me a glutton and nailing me with your accusatory glances, I’ll have you know that I wasn’t working alone. No ma’am (or sir). The entire Spoons family was in on it. I brought the whole batch (minus one muffin which obviously needed to be taste tested first) with me for dinner on Sunday, and it pains me to say that not a single muffin survived the night. Not even one measly crumb.

I should probably take that as a compliment — it just means they were freaking amazing. And I know this because I was obsessively gauging reactions.

I like to think that I’ve gotten a little more subtle and sneaky over the years, but I’m one of those people that will watch you take your first bite like.a.hawk just so I can capture the exact moment when your brain registers what you think of my baked treats… especially because some people just don’t say anything.

Men, I’ve found, are particularly bad for that.

“So… how did you like it?”

“What? Oh. It was great! Like always.” *grabs another and walks away*

Pft. Like always. Like I’m just supposed to assume it was great. Actually, I usually do. I’ve been at this long enough to have built up a pretty decent amount of confidence when it comes to my baking, but I still like the extra reinforcement! Especially when I’m trying to make things healthier without seeming like they’re healthier — ya know? Take these muffins, for example…

There’s no flour, no oil, and no refined sugar, but you’d never guess it since they’re just as moist, just as sweet sweet, and just as doughy as traditional muffins. That being said, they’re not exactly like traditional muffins. The texture is slightly denser, which is why I called them pumpkin pie muffins — they fall somewhere in between. Still doughy, but a melt-in-your-mouth kind of doughy. And have I mentioned that you can whip them up in your blender in under 5 minutes flat? And that they make your house smell amazing? And that the combination of chocolate and pumpkin is to.die.for? You need to make these yesterday. I did, and they didn’t even last 24 hours…

Flourless Pumpkin Pie Muffins

Ingredients

Scale
  • 1/4 cup (64 g) almond butter*
  • 3/4 cup (180 g) canned pumpkin
  • 1 large egg
  • 6 Tbsp (120 g) honey
  • 1/2 cup (40 g) rolled oats (GF, if needed)
  • 2 Tbsp (14g) ground flaxseed
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup mini chocolate chips, plus more for sprinkling

Instructions

  1. Preheat your oven to 375F (190C) and prepare a muffin pan by spraying 9 cavities with cooking spray or lining them with parchment liners. Set aside.
  2. Add all the ingredients except for the chocolate chips to a high-powered blender** and blend on high until the oats have broken down and the batter is smooth and creamy. Stir in the chocolate chips by hand.
  3. Distribute the batter evenly among the muffin pan cavities, filling each on until it is about 3/4 full.
  4. Bake for 18-20 minutes, until the tops of your muffins are set and a toothpick inserted into the centre comes out clean. Allow the muffins to cool in the pan for ~10 minutes before removing. Store them in an air-tight container for up to 5 days, or freeze them for up to 3 months.

Notes

* Feel free to sub in with another nut butter if you prefer. Or use a soy nut butter to make these nut-free. ** If you don’t have access to a high-powered blender, you can simply grind the oats into a flour and mix everything together by hand.

    This looks amazing! Love the choc chips especially! Wondering if one could replace the oats with cocunut flour and add extra eggs for extra moisture it would need then? If so could I replace with the same amount of flour and how many eggs? Can’t wait to try!

      Hi Hester! If you were going to replace the oats with coconut flour, you would probably need something like 3 or 4 eggs, and you might even need to add some milk since coconut flour is super absorbent. This is just a guess, though, since i Haven’t tried it myself and can’t vouch for the results!

    I am a pumpkin fan! It’s the best thing about fall aside from pretty scarves and boots haha.
    I haven’t done any fall baking just yet but, I have enjoyed a few slices (really just 2 slices) of pumpkin bread a few weeks ago–I saw them at a local coffee shop/bakery and I just couldn’t resist. But as much as I enjoy pumpkin bread (or pumpkin anything really), I just can’t bring myself to buying a pumpkin spice latte right now. I’m in GA–it’s still hot! Don’t know how other people down here bring themselves to drinking them just yet. I’ll wait until end of September/ beginning of October to enjoy those 🙂

    I’m a HUGE fan of pumpkin! It’s what I love about the Fall.
    These recipes look AMAZING! Can’t wait to try the pumpkin pie muffins and the Pumpkin Pie Chocolate Oatmeal bars–yum! But will have to wait 3 more days til my Hunger Challenge for Hunger Action Month is over. Won’t fit into my food $ budget…sigh.

    Don’t ya just love dude feedback? It’s so hard for me to tell if Dave likes the food, is tolerating the food, or just doesn’t want to hurt my feelings. It also doesn’t help that the only thing he requests is plain chocolate chip cookies..where’s the creativity in that?? 😉

    As soon as I saw this recipe I knew I had to ACTUALLY make them instead of bookmarking it for a later date. I whipped these up this morning in no time flat, but for some reason the baking time had to be almost tripled! I think it was closing in on about 30 mins before I was able to actually take them out of the oven without the toothpick coming out with lots of batter on it. Anyways, once they were done and cooled off, these were actually delicious! All I need right now is a warm glass of apple cider or perhaps a guilt-ridden pumpkin spice latte from Starbucks 😉 Thanks for the autumn inspiration!

    I found this batter really thick. It totally clogged my Vitamix. Results were good but I would add 1/4 tsp of cloves instead of a half. I’ll probably change the order in which I add the ingredients next time!

    mm looks good. I like more dense moist muffins so these are up my alley! Could you sub baked sweet potatoes instead of pumpkin? I’m more of a sweet potato or butternut squash person.

      Of course! These would be amazing with sweet potato as well. You could probably even cut down on the honey by a tablespoon or two since SP is a bit sweeter than pumpkin.

    Yayy!! Just looking at this pumpkin deliciousness makes me happy! I love that these are flourless. Confession- I just had a piece of straight up gluten-full pumpkin bread, and i enjoyed every bite. (sorry primal diet, today you lose 🙂 )

    It doesn’t feel like pumpkin season down in Texas yet. I really, really wish it did. The weather was fabulous and felt like fall back in Wisconsin this past weekend…I’m going to pretend it feels like fall anyway and whip out some pumpkin in the kitchen!

I got back to making my nut butter yesterday. Decided to add agave this time, but I think maple is winning for almond butter so far.
