February 15, 2016 by Amanda @ .running with spoons. 80 Comments

You’ve never had oatmeal like this before! This thick and creamy strawberry shortcake overnight oatmeal smoothie combines that stick-to-your-ribs feeling of a bowl of oats with the silky smooth texture of a smoothie. Vegan, gluten-free, and packed with plant-based protein and fiber, it makes a perfect healthy and easy breakfast or snack!

Who’s ready for another smoothie recipe?!?!

I know I’m not the only one. Please tell me I’m not the only one. I mean… I know it’s still technically the middle of winter and all, but there’s no way I can go 6 months (yes, our winters here can get that long) without regularly enjoying the creamy, dreamy deliciousness that is a smoothie. Besides, we’ve had an oddly mild winter this year, so I haven’t really had to resort to hanging out by the fireplace after I get my fix… which is basically daily.

It’s funny. I used to shy away from smoothies and insist that I wasn’t big on drinking my calories, but I have a feeling that was mostly because I was making my smoothies all wrong.

What’s the right way to make a smoothie, you ask? Like this…

Thick, creamy, filling, and comforting. Yes, even cold smoothies can be comforting when they’re made with the right ingredients; and by that I mean when they’re made with oats. I started adding oats to my smoothies a few years ago and I’ve never looked back. Not only do they make the smoothie so much thicker and creamier, but they add this subtle doughiness that really makes you feel like you’re drinking something more substantial. Almost like a milkshake… except without all the refined sugar and saturated fat.

That’s the other thing! Smoothies are such a great way to satisfy the sweet tooth in a healthier way. That’s not to say that you can’t have your cake and eat it too (hashtag balance), but it’s always nice to have those healthier options on hand when you need a bit of a reset… especially when those healthier options look as decadent as this strawberry shortcake overnight oatmeal smoothie…

… but are actually made with healthy ingredients like this…

Strawberry Smoothie Ingredients

Do you love it or do you love it?!?

I seriously love it. And I also love that I was able to partner up with Silk to bring you this deliciousness, because — hello — there’s basically a carton of Silk’s unsweetened vanilla almond milk hanging out in my fridge at.all.times, and that’s been my go-to for years when it comes to the liquid I use for my smoothies.

Why? Because you get all the creaminess without any of the added sugar! Which is awesome because who needs added sugar when you’ve got nature’s candy (read: fruit) to play with? Not this girl. The natural sugars are more than enough, and they make this thick and creamy strawberry shortcake overnight oatmeal smoothie all sorts of irresistible…

Ingredients

Scale
  • 3/4 cup (180 ml) Silk unsweetened vanilla almond milk
  • 1/3 cup (30 g) rolled oats**
  • 1/2 Tbsp (8g) natural almond butter***
  • 1/2 – 1 Tbsp maple syrup, depending how sweet you like it****
  • 1/2 tsp vanilla extract
  • pinch of salt (optional but highly recommended)
  • 1 cup (140 g) frozen strawberries

Instructions

  1. The night before, add all the ingredients except for the strawberries to the bowl of your blender and give them a stir to ensure that everything is well combined. Cover and place in the fridge for at least 3 hours, preferably overnight.
  2. The next morning, remove your blender bowl from the fridge and add the frozen strawberries. Blend on high until a smooth and creamy consistency is reached, adding more milk if the smoothie is too thick. Transfer to a bowl or glass, add desired toppings, and enjoy!

Notes

* Cook time refers to chilling time. ** Be sure to use certified gluten-free oats if you need this to be gluten-free. You can also reduce the oats to 1/4 cup and add a scoop of your favourite vanilla protein powder. *** I like to use almond butter because it has a sweet and mild taste. Feel free to use your favourite nut/seed butter, but the flavour might shine through a little. **** You could also sub this out for 1/2 a ripe banana to make a strawberry banana smoothie.

Hi Amanda, have you tried popped amaranth before? It’s an amazing substitute for oatmeal. Amaranth has 3.6x the amount calcium, double the iron, and 1.7x more magensium. Not to speak that popped amaranth is gluten-free and a compelte protein 🙂 Check it out: http://www.5-am.co/oatmeal-breakfast-vs-popped-amaranth

Well, it’s clear to me now that I NEED to try putting oats in my smoothies! We regularly make green smoothies for “desserts” at our house but I’ve never tried putting oats in them. I’ve heard of doing it before but honestly I’ve never been convinced of it until now 🙂 These look SO freaking fantastic!

Oh stunning. And the strawberries just remind me of summer. (Which I wish it was).

An amazing recipe Amanda, and no you’re not the only one still having smoothies made with strawberries throughout winter. Got to keep eating lots of bright fruits, like strawberries, to keep away the cold and the dark nights too eh? 🙂

This recipe came at the perfect time especially since strawberries are in season right now here in Mumbai- super juicy and sweet! I go through phases with smoothies and haven’t been feeling them lately. Although this post makes me want to go dust off my blender NOW!

Oats in smoothies are life-changing for sure! I don’t drink a ton of smoothies (don’t really know why, they just don’t really seem my thing…), but I still remember the first time my sister gave me a sip of your black forest smoothie, and it was definitely one of those mind=blown moments! My eyes pretty much rolled back in my head and I was like, “what is in that?? It’s like, doughy!!” <- huge compliment coming from me because I love all things raw, doughy, batter-y, etc. 😍

I'm usually a chocolate-person-all-the-way, but this tempts even me. I've already marked it to try. As for other desserts-turned-into-smoothies, I have a weakness for anything chocolate, caramel or with pretzels (might be weird in a smoothie??). All three and you have the keys to my heart. 😉
