Actually, I’d be super grateful if you could take them all off my hands. Yup, all. Not because I don’t like them (they’re really good!), but because I’m kind of up to my eyeballs in muffins at the moment. I’ll reveal the “why?” soon, but until then, let’s just say I feel like the gang from Seinfeld in “The Muffin Tops” episode.

Remember that one? Where Elaine’s former boss starts up a muffin business that only sells muffin tops and they can’t figure out how to get rid of all the stumps? Yep. That’s currently me. Only my muffins come with the tops still attached, which I guess makes them slightly more pawnable …

Either way, I loved that show; and I wish we could chat about it some more, but muffins are what’s on the agenda today.

Recipe posts are funny things. On the one hand, I feel like I should talk about the details of the actual recipe since I figure people probably want to know a little bit about what they’re making, but on the other hand, I want to talk about pretty much everything but the actual recipe.

I’d rather talk about how much I loved watching Seinfeld in the 90’s than tell you how soft and flavourful these muffins are; and I’d prefer it if we could chat about how Tom’s Restaurant is on my list of places to visit when I go to NYC instead of how these muffins are butter/oil-free and naturally sweetened.

In all seriousness, though, recipe posts are a tough ball to juggle (at least for me) because while I know that tossing those keywords in there is important for SEO and what not, that doesn’t change the fact that it makes me feel like a late night infomercial. And not the kind that you watch with loving disdain.

I think the best piece of blog writing advice I ever came across was to write as if you were chatting to a good friend. Would I talk about the texture and ingredients of a blueberry muffin? Maybe in passing, but mostly we’d just talk about life and whatever was going on at that time.

So I might try doing more of that going forward. What’s say we just sit down and shoot the sh*t… with a plate of blueberry oat Greek yogurt muffins that have the delicious taste of blueberries and vanilla in every bite ?

Blueberry Oat Greek Yogurt Muffins

Ingredients

  • 1 cup (120 g) all-purpose flour*
  • 1 cup (80 g) old fashioned rolled oats
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1 cup (225 g) plain Greek yogurt
  • 1/4 cup (80 g) honey
  • 2 Tbsp (24 g) coconut palm sugar
  • 1/4 cup (60 ml) unsweetened almond milk
  • 2 tsp vanilla extract
  • 1 cup (140 g) blueberries, frozen or fresh


Instructions

  1. Preheat your oven to 350F (176C) and prepare a muffin pan by spraying the cavities with cooking spray or greasing them with oil. Set aside.
  2. In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a separate bowl, lightly beat the egg just to break it up. Whisk in the yogurt, honey, sugar, almond milk, and vanilla, mixing until well combined.
  4. Add the wet ingredients to the dry ingredients, mixing gently until just combined. Toss the blueberries in 1 Tbsp (7.5 g) of flour to prevent them from bleeding or sinking to the bottom of the muffins, and fold them into the batter.
  5. Divide the batter evenly among the 12 muffin cups, filling almost to the top. Add a sprinkle of coconut sugar, if desired.
  6. Bake for 20-22 minutes, or until the tops of the muffins are firm to the touch and toothpick inserted into the centre comes out clean. Allow the muffins to cool in the pan for ~5 minutes before transferring them to a wire rack to cool completely. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.

Notes

* You can also use a mix of plain and whole wheat OR sub with oat flour, but the texture will be slightly more dense and moist.

    I want to bake these muffins today. I want to substitute the all-purpose flour for GF flour. Do you think the muffins will be dense texture? This is my first time baking with GF flour.

      Sorry Mo, but it’s so hard to tell because it really depends on what kind of mix your GF flour is made up of 😕 And if your mix doesn’t have any xanthan gum, you might want to add a 3/4 tsp. of that to help the texture.

    I’ve honestly never watched Seinfeld before! If we’re talking about 90s shows, Friends was always my favourite. I still love just turning on random episodes whenever I’m just hanging out at home.

      Confession: I was actually never that big on Friends. I’d watch it occasionally if I came across it, but it was never something I tuned into regularly. I know. I wonder if I’d like it more if I started watching it again now…

    I’ve always liked Sienfeld when I watched it but was never a hardcore fan. I think I jut love 90s sitcoms. Everybody Loves Raymond, Home Improvement, Friends. They’re all perfect. My favorite fruit to put in muffins is actually lemon. I love lemon poppyseed muffins especially if they have a glaze on them.
    These look great Amanda! I would rather shoot the sh*t and eat muffins rather than watch the muffins and talk about them (my belly doesn’t like that)

      Thanks for your input, Rachael! Coconut Palm Sugar is made from the sap of coconut palm flowers instead of sugar cane, and it has a slightly lower value on the glycemic index. It’s also got a slightly richer flavour than regular sugar does.

        Is it the same as coconut sugar? And how do you sub the flour for coconut flour? I tried, but failed. These look yummy, but want to stay away from regular flour and use the coconut flour instead.

Definietly going to have to rework these with some gluten-free flour because wowza. I actually havent made muffins since going gluten-free…..definietly need to amend that!

      I just realized that I don’t have the address of your new place! Gonna have to change that for all future gift/card giving purposes 😛 And I’m pretty sure you could swap the AP for some GF AP flour with no problem. I have some on hand and was going to use it, but I like to add a bit of xanthan gum to GF baking and I didn’t have any on hand 😕

    Seriously – these look amazing! I could easily replace that AP flour with some GF AP flour and they’d be a hit at my house!

    I like that you don’t just talk about the recipe in your recipe posts! I tend to skip those ones from bloggers and only look if I am actually making the recipe…so I like when they are more of a normal post with a recipe included 🙂 These look delicious. Blueberry muffins hold a special place in my heart since I was a little kiddo.

    I grew up watching Friends and Seinfeld reruns and LOVE them both. Seinfeld references are a very common occurrence in my family! These muffins look amazingly fluffy (love the Despicable Me reference ?) and texture-packed. I enjoy pretty much any fruit in muffins, but I especially like berries because they “explode” when you bite into them and that’s kind of awesome.

        My husband is a diabetic can I substitute “SUGAR FREE” Honey without changing the taste or outcome of these delicious looking muffins?

      I just made these muffins and they are tasty but not quite sweet enough. I think a little more honey would help but the moisture and texture are great❣

        I made these and messed up a little bit (pregnancy brain!) and forgot the vanilla.. I also did not have unsweetened almond milk so I used sweetened almond milk and forgot the added sugar… and subbed maple syrup for honey.
        These are hands down the best breakfast muffins I have ever made! So light, fluffy, and bursting with fresh fruit flavour! Love them so much.

      I added 1/4 cup molasses; 1/2 cup wheat germ, additonal egg, 1/2 cup chopped walm nuts to beef up the protein and iron.
