In a perfect world, all of my kitchen endeavours would go according to plan. I’d be hit with a brilliant recipe idea, execute it seamlessly, and maybe even have someone clean up the mess I [inevitably] make in the process.

This is not a perfect world.

This is a world where I burn a batch of muffins because I think I’m too cool for school to need a timer… promising myself that I’ll remember that I’m baking, which works for approximately 5 minutes before I get side tracked by something else and completely forget about what’s in the oven. Oops.

This is a world where I attempt to whip up a second batch of aforementioned muffins, only to realize that I used up the last of my muffin liners on the batch I just burned and I can’t run out to buy more because the dough can’t be left to sit out that long. Oops. 

Consequently, this is a world where I end up with a loaf of bread instead of a batch of muffins…

A loaf that I meant to divide into 12 hearty slices, but somehow only ended up with 11…

Admit it — you just counted them πŸ˜‰ And no, I didn’t eat one — I ate two.

But in my defense, photographing food is tiring (read: tempting) work, and it was just the butts — no one cares about those. Do they? I don’t know. What I do know is that despite all the SNAFUs I ran into while whipping up this batch of muffins loaf of bread, the end result came out better than I could have imagined.

I tell ya — Greek yogurt can do no wrong; and if you’ve never tried baking with it, you need to change that stat…

Picture this. You sink your teeth into a thick slice of subtly sweet bread with a slightly chewy exterior that gives way to a soft and fluffy interior. You immediately detect a tantalizing blend of warming spices, accented by a subtle hint of apple. The flavours mix, complimenting each other perfectly, and result in a comforting loaf of amazingness that calls to you [again, and again, and again].

This bread is almost impossible to resist, but with ingredients like Greek yogurt, apples, and coconut oil, you’re more than fine with enjoying more than one slice… preferably warmed up with a slice of butter.

Ingredients

Scale
  • 1 3/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 Tbsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 apple, peeled and grated

Instructions

  1. Preheat your oven to 350ΒΊF and lightly grease a 9 x 5 bread pan.
  2. In a large bowl, combine flour, baking soda, baking powder, spices, and salt. Stir until well combined and set aside.
  3. In a separate bowl, whisk the eggs until slightly frothy. Add applesauce, brown sugar, Greek yogurt, coconut oil, and vanilla extract. Stir until well combined.
  4. Gradually add dry ingredients to the wet ingredients and stir until just combined. Do not overmix. Batter will be thick and lumpy – this is fine. Gently fold in grated apple.
  5. Pour batter into prepared loaf pan and bake for 50-55 minutes, or until top is set and a toothpick inserted into the centre comes out clean.
  6. Remove from oven and allow bread to cool in the pan for 20 minutes before removing and setting on a wire rack to cool completely.
  • Prep Time: 10 mins
  • Cook Time: 50 mins

    I discovered Greek yogurt baking because of your site. This is the second recipe I tried and this is another winner! I am celiac and substituting gluten free flour with all-purpose works pretty well with your recipes. Thanks!

    Delicious and so easy. I didn’t have coconut oil, so I went out on a limb and used almond butter instead. Worked just fine : ) I’ll definitely bake this bread again (next time with the coconut oil and maybe add some nuts). Thanks.

    Tried making this last week (used EVOO because I didn’t have coconut oil) and only used 1/4c of sugar.
    Bread turned out REALLY well!
    Wondering if this would work with whole wheat flour?

    Well, jeepers, because even though it’s supposed to be crazy humid (90% humidity) and hot (90 degrees) tomorrow, I’m kicking up the oven and heading to the store to buy applesauce. And if my family complains, well then i’ll use the red hen principle, eat it all by myself and blame you for their sorrow. Just kidding, i’m not that mean. Maybe. Just maybe.

    I love using apple sauce and greek yoghurt in baking as it always makes the baked product so moist! This bread is an instant winner in my books, I am definitely saving the recipe. Thanks for sharing it.

    After seeing this on Monday I caved and bought some pumpkin bread yesterday. I know, I know it’s kinda early for pumpkin season but this spiced applesauce bread just had me feeling like it’s fall. I love using greek yogurt in both savory and sweet dishes–especially in cakes, breads and muffins!

    I really have to stop reading your food descriptions at bed time – because I’m too sleepy to bake this (and lack Greek Yogurt, apples, etc. πŸ˜‰ ) but I’m seriously craving this bread now πŸ™‚

    My obsession with apples and spices recently is OFF THE CHARTS! This bread recipe could not be coming at a better time. And in your former life did you write sexual novels about food? Or can you now in this life? #50shadesofspoons

    I don’t know why I totally thought of you (actually lies because you post the most tantalizing pictures of oats topped with applesauce and almond butter all the time) BUT I’ve gone through like 4 MASSIVE jars of Grandma Hoerner’s chunky applesauce. They have seriously the coolest flavors: cinnamon french toast, chai, caramel, cherry vanilla like it’s ridiculous. Randomly found it at TJ Maxx one day (and then ordered a million online oops) BUT you should seriously look it up πŸ™‚ In case it’s one of those days where it’s too strenuous to go the homemade route πŸ˜‰

    Don’t you hate when recipes don’t work. I literally made 15 batches of protein bars in 3 days to get them perfect.
    My garbage can should probably go workout now since it has ALL the protein to kick the gyms butt.
    Anyway. I love this bread.. I want this bread. I’m pinning this bread!

    Ooh yum! This looks perfect for fall. I’ve baked various muffin and quick bread recipes with Greek yogurt before – they always turn out great!

    In a perfect world, I would sleep in pas 6 am when I literally have nothing to do that day and no reason to be up that early. πŸ˜›

    I pretty much almost always bake with greek yogurt, unless I’m doing a lactose free recipe. I also love using cottage cheese in recipes.
