This dark chocolate raspberry breakfast bake is literally what dreams are made of! Sweetly tart raspberries pair perfectly with rich dark chocolate in a vegan and gluten-free breakfast that’s sure to keep you satisfied all morning!

So I’m ridiculously excited to be sharing today’s recipe with you guys. Ri.dic.u.lous.ly.

Why? Three reasons.

Reason #1 – because it involves chocolate. No explanation necessary.

Reason #2 – because it involves chocolate for breakfast. Again, no explanation necessary.

Reason #3 – because it features a combo that I’m currently in love lust with…

Delicious Dark Chocolate and Raspberries

Dark chocolate and raspberries. Hello, lover.

So I’ve recently taken a liking to raspberries, which is a little strange for me seeing as they’ve always been one of those berries that I never really cared much about. Didn’t love ’em, didn’t hate ’em. They were just kind of there.

Blueberries? Love. By the pound.

Strawberries? A small step down from blue, but also delicious… both in whole berry form and the red/pink version of any fruity candy I ever ate (side note: is there anyone out there who actually likes the yellow ones?!?!)

But raspberries, blackberries, boysenberries, lingonberries, loganberries, cranberries, elderberries, and goji berries? More or less an afterthought and not something that I ever sought out in whole, candy, or jam form.

So why the change of heart? Well, this…

I can’t even handle it.

Coming up with recipes for the book really took me out of my comfort zone and forced me to experiment with flavours that I don’t normally play around with. Dark chocolate raspberry was one of them, and it was basically love at first sight bite.

I mean… the sweetly tart taste of raspberries combined with the rich and earthy taste of dark chocolate?!?

Dreamy. A little bit more of a mature flavour combination, maybe, but so.freaking.GOOD if you like the deep and slightly bitter taste of dark chocolate. And if you don’t? Just replace the dark chocolate chunks with semisweet chocolate chips and you’re good to go!

You can also play around with how long you keep this in the oven depending on what kind of texture you want. A shorter bake time = a more ooey, gooey, and fudgy texture, while a longer bake time = more cakey and baked oatmeal-y. No matter which way you play it, it’ll be delicious. Promise.

Ingredients

Scale
  • 1/3 cup (30 g) rolled oats
  • 2 Tbsp (15 g) flour of choice*
  • 2 Tbsp (10 g) unsweetened cocoa powder
  • ¼ tsp baking powder
  • pinch of salt
  • 2 Tbsp (30 ml) unsweetened almond milk
  • 2 Tbsp (30 ml) unsweetened applesauce**
  • 1 Tbsp (15 ml) maple syrup
  • 1 tsp vanilla flavour
  • 1/4 cup (35 g) raspberries, fresh or frozen
  • 1/2 Tbsp (7 g) dark chocolate, coarsely chopped***

Instructions

  1. Preheat your oven to 350°F (176°C), and lightly coat an individual sized ramekin or oven-safe bowl with cooking spray or oil.
  2. In a medium-sized mixing bowl, whisk together the oats, flour, cocoa powder, baking powder, and salt. Add the almond milk, applesauce, maple syrup, and vanilla, and mix until well combined. Fold in the raspberries and dark chocolate chunks, reserving a few to sprinkle on the top.
  3. Transfer the batter to your greased ramekin and top it with the remaining chocolate chunks . Bake for 20-25 minutes, depending on desired consistency.
  4. Remove your bake from oven and allow to cool for about 5 minutes before adding any additional toppings and digging in!

Notes

* I’ve tested these breakfast bakes with a variety of different flours including: all-purpose, whole wheat, rice, gluten-free all-purpose, oat, and almond, and each one works just fine so choose your flour according to your dietary needs. ** If you don’t have applesauce, just up the almond milk to 1/4 cup. *** If you’re not a fan of the bitter taste of dark chocolate, use semisweet chocolate chips instead.

    Totally digging this combo lately- Well, cottage cheese, dark cocoa, and raspberries mixed through- There’s something about the tartness.

    I kind of am over gummy candy right now…my friend is obsessed and brought like, 5 packs for the car trip(s)

    Haha, Amanda, I love how you provide for half-bakers out there who like things warm and partially baked. #TeamOoeyGooey I read this yesterday and *knew* I HAD to have it that. day. The breakfast bakes are some of my favorite recipes of yours, and your brownie batter is my favorite breakfast bake, so combine that with the fact that raspberries are one of my favorite chocolate flavor pairings, this seemed made just for me. It made a perfect little yummy, warm, gooey after-dinner treat last night, enjoyed curled up on the couch watching a good movie with my sibs. So fudgy and delicious…you nailed it again, Amanda!! 😍

    Chocolate and raspberries is one of my favorite combos, too! Once I made homemade chocolate pudding with raspberries when I was visiting my folks, and my mom raved about it all evening–and then all the next evening!

    I love berries and have been clinging on to them as much as we can now we are coming out of season – strawberries and rasps are still around, just, but blueberries are a goner 🙁 Trying to pick a favourite would be so hard but I think a big juicy in season blackberry is simply divine!
    As for sweets, I always pick the green ones, in fact you could ditch all the others, I would be happy with all green!

    I’d say raspberries if they are perfectly ripe. Then the bloobs because they just go perfectly into everything (and hide spinach/greens really well in smoothies). I like strawberries too but find the not ripe enough ones easily disguised. It’s harder for me to find the perfect strawberry.
    My favorite starburst was purple. It was plum flavored and I thought that was AMAZING!

      !! I don’t know that I’ve ever tried the purple ones. I never got into the fancy Starburst, though. I only really ate the regular pack that had red, pink, orange, and yellow.

    I love ALL berries, and all berries with chocolate. This looks positively dreamy.

    And (#TweetYourUnpopularOpinion) I love the yellows and the greens in fruity candy – always have! It took me a while to come around to the pinks and reds, though I like them now. That said, 95% of the time, I’d still choose chocolate over fruity candy.

      I could do orange and green, but yellow was definitely pushing it for me. That being said, I managed to come around to black jelly beans, so anything is possible!

    Yum!!! I’ve always loved this combo! I have a question, though, I didn’t see the raspberries in the recipe, is there a specific amount, or did you just wing it? Also, do you think frozen raspberries would work?

    Don’t disown me, but I would put raspberries first, then strawberries, and blueberries last. I’m not big on blueberries.

    I like the yellows! They are usually one of my favorite when it comes to fruity candy. I used to HATE the strawberry ones, but recently I tried the strawberry gummy bears, and kind of liked it. I know I would still hate the starbursts, though, and I’m pretty sure with most other kinds as well. They taste like cough syrup to me. 😕

      Hate you?! NEVER. We’d made perfect friends because whenever we had candy, you could take all the yellow ones and I’d take all the pink ones 🙂 And I goofed up and forgot to put raspberries in the ingredients list, but it’s 1/4 cup and frozen would be fine!

    I actually hate raspberries and I never by them. I even avoid bags of mixed frozen berries because eww. Raspberries.
    BUT I adoreeee raspberry in chocolate cake so I’m positive I’m gonna love this.

      😆 I’m not big on them in frozen mixes either, ESPECIALLY because if you try to toss them in a smoothie, all you feel are the little seeds.

    Haha – yup, chocolate for breakfast is never, ever a bad idea! I mean – starting your day with chocolate – why that simply guarantees that that’s gonna be a great day no matter what happens – and throwing fruit into the mix (in 2 forms -applesauce + raspberries) just evens the balance! Glad you jumped on the raspberry+chocolate bandwagon – they are a winning combo indeed. Have you ever stuffed a raspgerry with a chocolate chip and then frozen it and eaten it? A trick I learned from another blogger and it. is. SO. GOOD.
    As for which is my fav I’d have to say 1- Raspberries, 2- blueberries, and 3- strawberries … and while I adore chocolate, I’ve never been a fan of Skittles/Starburst/gummies/jellies weird I know!

      Chocolate stuffed frozen raspberries?!?!? Heck no I’ve never tried it, but I’m definitely giving it a shot! And it’s perfect because raspberries tend to go bad so much faster than other berries, so freezing them would be a lifesaver 😀

    Why on earth am I not eating more breakfast bakes?! Actually its probably cause Im all about overnight oats right now, but dangggg this looks amazing!! Im in love with the cherry/chocolate combo right now. Give it to meeeeee. Seriously eating it in every and all ways non-stop!

    Mmmm berrries & dark chocolate are so underrated- love that this a single serving recipe too! Quick question- what’s the raspberry quantity? Think you forgot to list it :)! Our berry preference is spot on the same: blueberries followed by strawberries and then raspberries. I seem to be most indifferent to blackberries ha!!!

    I use Greek yogurt instead of applesauce. I vote for blueberries as my favorite but I printed this to try tomorrow. How many raspberries did you use?

    i always go for the red candy and red crayons if it’s primary colors that I am choosing from 🙂 my berry order is probably blueberries, strawberries and then raspberries but sometimes I am strawberries before blueberries.

    Dark chocolate and raspberries are amazing together! I love them too, but I think I end up not buying them much because they seem to go bad quicker than most other berries. I’d have to go with strawberries and blueberries as my favorites. This looks amazing!

    Do I have to choose? I just made blueberry pancakes yesterday so that’s my number one for today! I love raspberry season though and I wish I could get them fresh year round. And for candy always the pink won for me. I’m just mad the pink/red starburst bag wasn’t around when I was a kid 🙂

    Want, need, must have. I think chocolate and raspberries was my first chocolate combination love. Remember the Godiva bars that would be at the checkout at Barnes and Noble? I blame/thank them 😀
