Happy Valentine’s Day! And if not… Happy Eat-ALL-The-Chocolate Day! And if not that either, well then… TGIF! That’s something we can all agree on, right? :D

To be honest, I’ve never really understood why some people hate on Valentine’s so much. I mean, yes it’s become too commercialized; yes love should be celebrated every day; and yes it’s not necessarily the most pleasant reminder for those of us who have to spend it alone (the joys of being in a long distance military relationship #exceptnotreally), but any day that lets me get a little more excited about things is a good day in my books. And yes… I do get excited about all of the hearts, the pink, the love songs, and the chocolate… ohhhhhh the chocolate wait, what?! :shock: Sorry, I was having a moment. Moving on.

You guys know how much I’ve been loving on chocolate lately, which is why the fact that I’m not posting a chocolate recipe on a day that’s basically all about chocolate (read: love) makes absolutely no sense at all. But I have my reasons, which I’m sure you’ll be able to appreciate if you find yourself flying solo tonight too (have I mentioned the joys of an LDR?). Or if you’re just a fan of good food in general…

If you’ve been reading Spoons for a while, then the above picture probably looks pretty familiar to you. If not, then I hope it entices you ;) This recipe has been around for almost as long as I’ve been blogging, but as with my oatmeal cookie dough smoothie, it’s never gotten its own post and today seemed like a good day to give it one. Why? Because it’s the perfect meal no matter what your status — individually sized for one, but quick and easy enough to double if you’re cooking for two. It also happens to be pretty darn delicious…

The secret? Nixing the tomato sauce and replacing it with a combination of pumpkin puree and hummus, which may sound odd at first blush, but trust me when I say it’s out.of.this.world amazing. As is using a tortilla in place of pizza dough. I’m all for big fluffy crusts, but a) I’m still too intimidated by yeast to try making my own, and b) I haven’t come across a store-bought version that I like, so… a tortilla it is! This may seem like a cop out, but I’m a huge fan because it gets wonderfully crispy around the edges while remaining gooey near the centre, and it really lets you taste all the toppings — which you can customize to your heart’s content!

So even if you don’t have anyone to celebrate this Valentine’s with, treat yourself to a delicious dinner, a glass of wine, and some chocolate for dessert… and enjoy the fact that you can have an entire pizza to yourself without having to share with anyone else ;)

A non-traditional pizza that replaces tomato sauce with pumpkin hummus and trades in pizza dough for a simple tortilla that gets crispy on the edges and remains soft and gooey towards the centre.

  1. 1 tortilla/wrap of your choice (I use a Food For Life brown rice tortilla)
  2. 2 Tbsp. canned pumpkin puree
  3. 2 Tbsp. hummus
  4. spices of your choice (thyme, basil, oregano, rosemary, etc)
  5. small handful of baby spinach leaves
  6. your choice of chopped veggies (mushrooms, bell peppers, broccoli, etc)
  7. your choice of extra toppings (tofu, meat, cheese, avocado, apples, figs, etc)
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Place the tortilla on the baking sheet, spreading it evenly with pumpkin first, then hummus, until the entire surface is covered.
  3. Sprinkle on the spices, then create a thin layer of baby spinach leaves, discarding any stems.
  4. Spread the veggies over the spinach, as well as any extra toppings that you choose.
  5. Bake for 20 minutes and allow to cool slightly before enjoying.

J and I are staying in and celebrating after the girls go to bed! He is making his amazing Chicken Fettuccine Alfredo! We are both excited about that. :)

A couple of years ago I wouldn’t have said this because I wouldn’t go near mushrooms but I absolutely love them now and they are one of my favorite pizza toppings.

Amanda – I LOVE – L.O.V.E. this pizza – since you posted it awhile back it has been a staple at our home on nights when things are hectic and I am out of leftovers! This pizza so deserves its own post!
I love beans and broccoli on mine – and my daughter and I started using naan as the base, topped with pumpkin/hummus -ooh talk about love!

And I must confess – I am one of them non-v-day advocates – though I must admit the best part about vday is the day after when ALL that chocolate is half off! Oh yeah!

Love it! I’ve tried this tortilla pizza several times before and it’s out of this world amazing! The hummus and pumpkin combination is unexpected, but super tasty! It’s definitely a favorite of mine!

Thin crust pizza for me and as for toppings, I like cheese, onions and green peppers. Oh and your pics of this are amazing!

I remember this pizza making frequent appearances in the early days of Spoons. I recall thinking that anyone who liked pumpkin and hummus as much as me would probably be worth continuing to follow. Hummus is surprisingly versatile and pairs well in seemingly odd combinations.
My father is from New York so I was raised strictly thin crust. Sorry Chicago! I adore most veggies on pizza and mushrooms are necessity. California Pizza Kitchen serves a vegetarian pizza that is very good so long as they forgo the corn. Corn? What the heck is that doing on a pizza? No, no, no! So wrong!
Tonight I am working at the Playhouse. Although I have no valentine I certainly do not begrudge those who do. Hooray for love! Yesterday I met up with a friend I had not seen in nearly five years. The relationship is totally platonic (he’s married) but we are great friends. It was so wonderful to see him. He is truly a blessing in my life. On the way home I drove past Disneyland. I could see the Matterhorn from the freeway. Despite my advanced age (I like prunes and go to bed early) I got a little excited just seeing the signs for Disney. I wonder how many couples spend Valentine’s Day making out on It’s a Small World? (Do they still have that ride? I know it’s kind of hokey but I’d be sad to hear it has been taken down.)

:shock: Corn on pizza does sound a little wrong… although I’m willing to try almost anything once. And yes! Small World is still up and running. The song is a little maddening since it gets stuck in your head for the remainder of rhe day, but it’s still such a sweet ride :)

I find them in the frozen food section of most grocery stores around here! Sometimes they’re in a special section dedicated to healthy/gluten-free foods, and sometimes they take a little more searching to find.

We are so on the same wave length – I have had in the back of my mind this week that I should buy those exact tortillas and make pizza with it- something I never do because if I make pizza, it’s with pizza dough. Tortilla pizzas are the bomb.com. Seriously one of my FAVORITE ways to get in some veggies, not to mention to eat some cheeeeese! :) I am a bit of a bread whore though, so thick crust IS my favorite, but nothing beats a nice homemade tortilla pizza when the craving hits!

Mmmm this looks delicious! And I just happened to go to my fav health store and bought three cans of pumpkin yesterday, perfect timing! You have no idea how hard it is to find canned pumpkin in Scotland, apparently its not a thing here or anywhere in the UK for that matter.

I actually have no idea if it would work in a pan or not… You could probably get the cheese to melt, but I’m not sure it would crisp up or roast the veggies in the same way :?

No plans for me this Valentine’s Day either, but I agree with you as far as the hype is concerned… I just like Valentine’s Day either way. It’s just a nice day to celebrate love all around, ya know?!
I am a HUGE fan of thin crusts with a TON of toppings. I think when you have a thick crust, it takes away from everything else. Give me the flava’!

Do you think it would be too much to ask for the Blend Retreat to be my Valentine’s Day present? LOL

As a tomato sauce loving thick crust pizza girl….I have to say that this looks awesome! I never would have thought to use hummus instead of tomato sauce, but I bet it’s delicious :) have to test it out on the next pizza night! I am THRILLED to add this recipe to my list of go tos! Using a tortilla is GENIUS. I’m also terrified of yeast, so this solves all my pizza dilemmas. I will be flying solo tonight. Ooo oo! Pick me as your Valentine! :) I am SO digging the idea of a personal tortilla pizza with pumpkin hummus. This looks so delicious!
And I think you’re right— Valentine’s day can be looked down upon, but I think it’s a wonderful day to do something extra special whether that means going on a date or making cinnamon rolls for the family (hey, that’s what I did!). My plans involve babysitting tonight because the little guy’s parents will be going on a date. I am more than happy to snuggle with an adorable baby though!
Toppings: cheese (duh), mushrooms, roasted red peppers, grilled chicken
Usually thin crust, unless I’m craving carbs— then it’s thick crust.

I can attest that this pizza is so good- Even though to make it took some time because my sister ninja’d the hummus the first time. Ironically, this was the only way to eat hummus/legumes without feeling stomach pain! Thin crust > thick crust.

I think we’ve settled our V day situation ;)

Throwback spoons :lol: I remember the old days were this little guy popped up quite frequently.

V-Day plans include movies and chocolate & I wouldn’t have it any other way! Favourite pizza topping is pineapple and green peppers. And cheese of course. I am with you on the big fluffy crust Its one of the best parts and I always thought people were crazy for not eating them.

WHY have you waited so long to post this recipe?! It looks SO yummy! I love using tortillas as crust! I haven’t been reading Spoons long enough to have seen this before but I’m happy I finally saw it! I made a nice dinner tonight with pasta, white sauce, and mushrooms… I’ll be waiting for you :)

I actually don’t really like cheese on my pizza. I only like sauce and mushrooms… and THICK crust all the way!

This looks absolutely delicious! I wish they sold pumpkin purée here, I know I shouldn’t be lazy and just make it ;)

I think I prefer a thin base but I don’t mind a thick base every so often. I love mushrooms and pineapple on my pizza and nutritional yeast sauce, so good!

I am such a fan of tortilla pizzas, especially when hummus replaces sauce, I need to bring these back in my life! I’ve made pumpkin hummus but have only used regular hummus on pizza before, so I will obviously have to give this a try.

oooohh Amanda, that looks delightful!!!! I actually do a similar thing with my pizzas, I use butternut squash puree though instead of pumpkin! It is delicious with goats cheese! I am not sure if you remembered it on my blog a few months ago :)

I totally agree about valentines day. I am in a distance relationship too, and it can be tough (especially when his package was delayed due to the storm and I never got all my chocolate :( ), but it does not HAVE to be about being a couple, it can be spread the love around you day :)

I want that pizza NOW, yes at 7:34am :)

I remember eons ago when you first posted this, but I’m so glad you reposted it because it reminded me that I totally need to make it!

My favourite pizza toppings are brie, prosciutto, and caramelized onions. Perhaps not on this pizza though… I think some Greek flavours would be good on this one!

I like pizza on whatever crust I get. It’s one of my favorites and your pumpkin hummus sauce is certainly note worthy. When I make my own pizza (with my wonderful and local store bought crust; it comes in pizza dough balls), I rarely ever use tomato sauce. I’ve used olive oil and garlic, pesto, caramelized onions or even a bed of sautéed veggies to be my sauce. Either way, it’s always a winner.

Your pizza pictures are fabulous. This little guy definitely deserved a post of his own.

I just started eating brown rice tortillas… why are they so delicious? I am such a red-sauce traditionalist it’s hard for me to branch out. I’m also a traditionalist when it comes to pizza – less is more. I love a good veggie pizza but if it’s not veggie, pepperoni/salami/proscuttio, cheese & sauce only, please!

You know, I used to think I was ALL about the thin crust, but a couple of weeks ago when I went out with friends and had some pan style crust and then last night when the hospital had some drug reps bring in FREE pizza that was like THISTHICK (I’m thinking about two inches here! 8O ), I’ve totally changed my mind! Maybe its because the sauce has more to sink into, maybe it’s a because I find it to be a bit more filling, or maybe it’s just my bread addiction coming out, but I’m owning it! All that being said, I’m also a big lover of FAST food and I’m quite fond of tortilla pizzas in a pinch…and I LOVE that I tried your pumpkin + hummus combo way back when because it is definitely a good one! And now…now I want some pizza! :D

Yes ma’am! I’ll vary up the toppings, but cheese is pretty much a given. I also use bell peppers, mushrooms, broccoli, and sometimes cooked chicken if I need a bit more staying power.
