There are certain events that change how the course of your life plays out from that moment on. Buying your first car; moving out on your own; having a baby; dipping pretzels in almond butter…

Okay, so that last one isn’t quite on the same level as the other 3, but it sure is good. And when you throw in some chocolate? It gets even better…

Let’s rewind a bit and look at how this amazingness found its way into my life. So I was out of bananas… and when I say I was out of bananas, I mean I woke up yesterday morning without a single one in my fruit bowl.

This is not okay. I had every intention of ninjaing one from my parents when I was over there on Sunday night (to at least get me through Monday morning), but I ended up forgetting and leaving the poor thing lying on the kitchen counter. I know… I’m disappointed in me too. But I digress.

Monday morning, no bananas. No bananas, no smoothie. No smoothie, no good. Solution? Hit up the grocery store as soon as it opens at 7 AM. The only downside? Getting hit with -25ºC (-13ºF) weather as soon as I walked out the door. For bananas, though? Worth it. But I digress… again.

So I picked up my bananas and continued to do a little browsing since I’m incapable of walking out of a store with only one item. I stuck to the natural food aisle since I was kind of in a hurry to get home, and that’s where I saw that Barney Butter on sale… and right next to it, pretzels. I hadn’t had pretzels in a while and they sounded really good, so I picked up a bag and made my way home.

Fast forward to my kitchen. I was standing around waiting for my bananas to freeze — because everyone knows you can only make a smoothie with frozen bananas — when I got hit with the munchies. The bag of pretzels I bought was ever so conveniently sitting on my counter, so I decided to grab a handful to hold me over until my bananas were ready. And because the jar of almond butter was sitting right next to it… well… can you blame me?

So now you’re asking yourself what all this has to do with truffles… I was planning on making a more traditional truffles recipe for Davida’s Great Valentine’s Day Bake-Off, but everything changed with that first almond butter pretzel bite… and that’s how these almond butter and pretzel truffles were born…

They’re sweet and salty; they’re crunchy and smooth… they’re also covered in chocolate and sprinkles. Basically, they’re perfection in bite-sized form. They also make a great Valentine’s Day gift — either for yourself or that special someone. Hope you enjoy!

Almond Butter and Pretzel Truffles

Yields: 12 truffles
Ingredients
  • 1 cup pretzels, crushed (measure after crushing)*
  • ½ cup creamy almond butter (or peanut butter)
  • 2 Tbsp. honey
  • ⅓ cup chocolate chips
  • sprinkles (optional)
Instructions
  1. Line a baking sheet with parchment paper and set aside.
  2. Crush pretzels by pulsing them in a food processor or placing them in a resealable plastic bag and using a rolling pin to crush them into very small bits. Some bigger pieces are okay.
  3. Empty the crushed pretzels into a medium mixing bowl. Add almond butter and honey, mixing until fully combined. Place mixture into freezer for ~15 minutes to allow it to firm up.
  4. Using a tablespoon, shape the dough into 1-inch balls and place onto parchment lined baking sheet. Place back into freezer for another 15 minutes.
  5. Melt chocolate chips in a microwave-safe bowl in 30 second intervals, stirring periodically to ensure no clumps remain.
  6. Using a toothpick, dip each truffle into melted chocolate, gently tapping side of bowl to remove any excess. Place back onto parchment-lined baking sheet and immediately top with sprinkles, if desired. Repeat until all truffles have been coated.
  7. Refrigerate for ~15 minutes, or until the chocolate coating has set.
Notes
* use a gluten-free brand such as Glutino if needed.

-25?!? NO..just no! I get jittery just considering such a height, I mean low(?) of frostiness. And I thought I was suffering last winter with -1.
I’m out of bananas too :(..but at least Mum’s picking up some in time for snackage tonight :D.

Can you believe that I can’t eat any frozen food? I don’t know what it is, but it makes me shudder like the way when you scratch the fork on a plate – know what I mean? So I actually eat all my desserts half melted :-)
These look soooo cute!! I love the heart sprinkles!!
My favorite sweet and salty combo definitely is AB with honey or medjool dates filled with a salted roasted almond. SO good.

Almond butter or P/B and chocolate are my all time fav sweet and salty combo – even though AB and PB are not that salty!
These 5 (technically 4 ) ingredient truffles look wonderful – Amanda your photos are looking GREAT!

Hmm ….on my way home last night with dreary weather forcasted on the horizon (rain, sleet, snow, ice and temps no where as cold as yours) I got a call from my daughter to not forget to go to the store to stock up on Moose Tracks frozen yogurt! Clearly I have taught her well ;)

A banana shortage is a serious problem that totally justifies emergency grocery stores runs. Yes, been there, done that. And got the “huh, so that’s all you’ll have for dinner?” on a Saturday night by the one cashier I really don’t like. If looks could kill, er, hurt .. Sorry I’m not sorry but don’t talk to me like that when I’m in banana need.
About those truffles … You and Lindsay are getting me really curious about the whole pretzel truffle/ball idea. Also, your pictures are just perfect. Could there ever be too many heart-shaped sprinkles? Or sprinkles in general?!

I am having a flashback to about 12 years ago when I would sit at my desk with my jar of peanut butter and a bag of pretzels – it was a great work day snack. I totally hit the grocery store regardless of time or weather condition if I need my necessities – gum, apples, berries (when in season) and lately, PB2. I never run out of regular peanut butter (how could I when I have a reserve case on hand at all times?)

Interestingly enough, I’m usually not a sweet & salty fan unless it involves pretzels! I love pretzels dipped into things (especially my beloved chocolate) because I love the crunch. This recipe you came up with is genius! I don’t think it would ever occur to me to just crush something in order to incorporate it into a recipe, but I’m learning from you :D I think I need to start an Amanda cookbook, since I make almost all your recipes…

These look AH-mazing! I love little truffles. I got some red velvet ones a few years ago, and I can’t tell you how delicious they were! You are so on your game for the bake-off! I better get on mine! A nasty ice storm is threatening to mess that up and not get me back home tomorrow, so hopefully that doesn’t happen!

I am not kidding you- I am making these to bribe my new co-workers. Next week when I get my own (miniature kitchen)- I’m thinking this is moving to #3 or even #2. Geeze, spoons, stop it. STAHHHP it.

Sweet and salty- just add sea salt to anything sweet. Last night I had kabocha with garlic salt.

I love simple recipes like this that don’t include any crazy ingredients. They’re cheap and usually easy and just plain tasty. I might eat an entire batch of these while crying over my lack of V-day plans. Yep, that sounds like a fabulous non-plan plan.

Mmm sweet and salty things are my absolute favorite! These look adorable and delicious. I think salted nuts and dried fruit OR fruit and cheese are my favorite combos.
Bananas are so worth an emergency trip! As is Greek yogurt and nut/seed butter. But we never run out of nut/seed butter :)

My favorite sweet and salty combo is pretzels with peanut butter, so you’re pretttttty much just teasing me at this point! I cannot tell you how many times I made an emergency grocery run for bananas, oatmeal, and peanut butter. Three necessities!

And I always love when meals/snacks/etc. come together when you’re just staring at various items in a grocery store… Except when your bill comes out to be about 100$.

Literally dying…

Pretzels and almond butter and chocolate may possibly be my 3 favorite foods in the universe. Like, if I run out of them, a grocery store trip happens immediately…that’s how obsessed I am.
