Deep Dish Oatmeal Raisin Breakfast Cookies

  • Author: Amanda @ Running with Spoons

  • Total Time: 30 mins
  • Yield: 1 serving 1x

  • 1/4 cup (20 g) quick oats
  • 2 Tbsp (14 g) oat bran*
  • 2 Tbsp (14 g) coconut flour**
  • 1/4 tsp ground cinnamon
  • 1/4 tsp baking powder
  • 1/2 cup (120 ml) unsweetened vanilla almond milk
  • 1 Tbsp (15 ml) maple syrup
  • 1/4 tsp vanilla extract
  • 2 Tbsp (20 g) raisins

  1. Preheat your oven to 375°F (190°C).
  2. In an individual sized (~16oz.) ramekin or oven-safe dish, combine the oats, oat bran, coconut flour, cinnamon, and baking powder. Add the almond milk, maple syrup, and vanilla, mixing until well combined. Finally, stir in the raisins.
  3. Bake for 20-25 minutes, until centre has set and desired consistency is reached. Top with any additional toppings and enjoy warm.

* If you don’t have any oat bran on hand, just use an additional 2 Tbsp (10 g) of oats. ** You can sub this for any flour you have on hand, but the coconut flour really helps give this bake a doughier texture. If you do switch out, you’ll need to reduce the almond milk to about 1/3 cup (80 ml)
