No-Bake Holiday Cookie Energy Bites

Ingredients

  • 1 1/2 cups rolled oats, ground into a flour
  • 1/4 cup almond butter (or other nut butter)
  • 5 Tbsp. honey
  • 1 tsp. orange zest
  • 1/2 tsp. almond extract
  • 1/4 cup dried cranberries
  • 23 Tbsp. white chocolate chips/chunks

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. To make oat flour, place rolled oats into a blender or food process and process until they turn into a very fine powder. Set aside.
  3. In a small pan over medium heat, add almond butter and honey, stirring until the almond butter is melted and fully combined with the honey. Add the orange zest and almond extract.
  4. Remove from heat and add the oat flour. Mixuntil well combined. Add dried cranberries.
  5. Using a tablespoon, scoop out dough and use your hands to roll it into a ball. Place it on the baking sheet and repeat until all the dough has been used.
  6. Optional: place chocolate into a microwave safe bowl and nuke on high in 30 second intervals, mixing between each. When chocolate is fully melted, drizzle over the top of the bites using a spoon.
  7. Place baking pan into fridge and allow to cool for ~20 minutes until bites have set.
